         Ingredients:

         - 1/4 (500 gr) Medium size Green cabbage, shredded, 
         - 1/2 (250 gr) Small size red cabbage, shredded,
         - 2 or 3 Medium size Carrots,  grated,
         - 1 or 2 Small size onions, finely chopped, 
         - 1 Tablespoon Cide vinegar,  
         - 1 or 2 Tablespoons Lemon juice,
         - 2 Teaspoons caster sugar,
         - 2 Teaspoons Ground black pepper,
         - 2 Teaspoons Salt, 
        (It is optional: if you want you can add; 1/2 Cup whole egg mayonnaise and 1/4 Cup sour cream),

       For Sauce of Salad: 6 Tablespoons Virgin olive oil, 2 Tablespoons vinegar, 2 Table Spoons chopped dill or parsley - in this recipe, we used parsley-,

         Preparation:

        First of all, remove the tough outer leaves of the green and red cabbages. Then, cut 1/4 (500 gr) green cabbage and 1/2 (250 gr) small red cabbage into quarter and wash them under the cold water. Then, you need to a sharp knife, take one and place each quarter on its side and slice very thin slice with your sharp knife. Place your shredded cabbage and grated carrot in a large bowl and dress it with salt, ground black pepper, virgin olive oil and vinegar or lemon juice (or both) to taste (if you want, you can add mayonnaise and sour cream and combine them to cabbage mixture). Then, toss gently to combine. Serve.  

       (Note: if you want, you can keep this salad in the fridge. This salad keeps well in the fridge for up to 2 or 3 days even with the dressing. However, make sure you serve this salad at room temperature and not straight our of the fridge).
