Sulu Köfte (Meat Ball in Sauce) Meal Recipe
Meat-balls in Sauce dish is one of our favorite dishes when we were children. It is a very prominent Anatolian Cuisine. This dish is also our moms and dads' very favorite dish too. I think love story of Meat-balls in Sauce (Sulu Köfte) dish comes from grand grand-parents to us.
What is Sulu Köfte/Meat-balls in Sauce?
Meat-balls in Sauce dish is literal translation means "Meat-balls in water or water meat-balls (Sulu Köfte)". Even preparing meat-balls process take times for the moms and dads (Yes!!! DADS!!!, in Turkey, most of dads keen on cooking meat-balls in sauce dish; especially for sundays' dinner.). This meal cooking very much.

Here it is our very yummy and very hearty meat-balls in sauce (Sulu Köfte) Dish recipe;

Ingredients:
Serve: 6 servings, Preparation Time: 35-40 minutes, Cooking Time: 25-30 minutes, Cuisine: Mediterranean & Anatolian Cuisine,
- 500 gr Ground Beef,
- 1/2 or 1 Normal size onion, chopped finely,
- 1/2 Cup or half bunch of Parsley, Chopped,
- 1/2 Cup Cracked wheat (very thin bulgur) or Rice (we Generally prefer bulgur), washed,
- 1 Egg,- 1/2 Teaspoon Red pepper flakes,
- 1/2 Teaspoon Ground Black pepper,
- 1/2 Teaspoon Ground Cumin,
- 1/2 Teaspoon Salt,
Mix all meat-balls ingredients with your hands and knead very very firmly. Then give your ground beef and other ingredients mixture to small ball shapes like gumball (or cherry size ball). Make meat-balls using your palms. This process takes time and it requires patience and experience. Dont forget to sprinkle some flour on to meat-balls. Then keep your meat-balls in refrigerator. Because, preparation of meal's sauce will start.

- 2 Tablespoons Olive oil (or vegetable oil),
- 4 Cups hot water,
- 2 or 3 Tablespoons Flour,
- 1 Normal size onion, chopped finely,
- 2 or 3 Normal size Potatoes, chopped into small cubes, (Some of our friends advice that: "before the preparation of the your potatoes, put your potatoes into a bowl with water, and lemon juice. Sothat your potatoes keep their Yellowness in meal"),
- 1/2 Cup Green Pepper, chopped,- 1 Normal size Tomatoes, chopped finely,
- 1 Tablespoon Tomato paste,
- 1 or 2 Carrots, Chopped (it is optional),
- A little salt (1pinch),
First of all, take your onion, green peppers and olive oil over a pan and sauté over medium heat. Then, add flour and keep sautéing for about couple of minutes (2-3minutes) until it changes colour. Then, add your tomato paste and stir until it dissolve. Once, the tomato paste is dissolved, add hot water and your crushed tomatoes. Bring to a boil and add your meat-balls gently in the pan with your potatoes cubes. You may add carrots too, if you like it (it is optional). Cook for a couple of minutes (2-3 minutes) and add 2 more cups of boiling water when the water level is lower. (If you want your meal's juice to be thicker which makes meal very yummy. You should add flour in Sauce of meal and coat the your meat-balls with flour in a large sheet pan). After these processes, cook for about 25 -30 minutes and serve hot.
Generally, we serve our Meat-balls in Sauce (Sulu Köfte) dish with a sesoning salad Turkish-shepherd-salad-çoban-salatası and Turkish-pickles-turşu or with a Turkish Yogurt with Cucumbers and Herbs Yoghurt-and-cucumbers-dip (Cacık) or with an ice cold glass of "Turkish Salted Yogurt Drink (Ayran) Traditional-turkish-ayran ".
