        Do you know that anyone who doesn't like "Lentil Soup "? We are sure that you have not met that person yet. Also, we have not met that person yet too. In this post we are going to share our hearty and healty Lentil Soup, it is from central Anatolian Kitchen. Everyone who lives in Anatolian likes lentil soup very much. Everyone cooks lentil soup whenever she wants.  Because this chock full of veggies and very yummy lentil soup is desired every season; winter to spring, summer to fall.

        Ingredients:


       Serving: 6, Preparation Time: 10 minutes,  Cook Time: 45 - 50 minutes, Category: Soup, Cuisine: Mediterranean Cuisine,  

           - 1 Medium size Onion, coarsely chopped,
           - 1/4 Cup Olive oil, extra virgin olive oil,
           - 2 Carrots, peeled and coarsely chopped,
           - 2 Teaspoons Ground Cumin,
           - 2 Cloves Garlic, minced,
           - 1 Tablespoon Tomato Paste (or Pepper paste, if you want, you may use both of them, you can do half and half),
           - 2 Cups Red Dry Lentils,
           - 6 Cups water,
           - Salt to taste (1 pinch), ground pepper (1 pinch), red pepper flakes (1 pinch),
           (You may also add: 2 Stalks Celery,  chopped, 1 Teaspoon Dried Oregano, 1 Bay leaf, 1 Teaspoon Dried Basil, Spinach,  potatoes and other vegetables if desired)

            For the Sauce:

           - 2 Tablespoons Olive oil or butter,
           - 1 Tablespoon Red Pepper Flakes,

Red Lentil Soup Cook Process

           Preoaration:


          First of all, in a large and deep soup pot, heat olive oil over medium heat. Then, put everything (onion and Carrot coarsely chopped,) in pot; cook and stir until onions is tender. Then, stir in garlic and cumin; cook for 3 - 5 minutes. Then, smoothen it with a bkender. After these processes, stir in red lentils, and add 6 cups water and tomatoes paste (or pepper paste or both of them), salt and ground pepper to taste. Cook on medium heat until the red lentils are soft and mushy, for about 25 - 30 minutes, and smoothen it with blender. Then, reduce heat, and simmer for at least 1 hour. 

          Before Serving your red lentil soup; heat the oil (olive oil or butter) in a skillet and when it becomes hot add red pepper flakes. Stir for 10 - 15 seconds. Then, pour your sauce on the soup bowl, you may also squeeze a little lemon juice on top.Serve with warm cornbread or crispy bread.
