    Tarhana soup is a delicious, comforting winter soup and it is one of the most popular Turkish recipes. For the most of Turkish people; "Tarhana Soup (Tarhana Çorbası)" is the number one (1) soup among the soups of Anatolian. But, when you go to restaurants in Turkey, you can't find "Tarhan Soup (Tarhana Çorbasi)" in Restaurants. Because, Tarhana Soup is a soup that made and consumed at home. It is a winter family food. Generally, mothers and grandmothers make Tarhana and send to their children who live away from the home. Today, it is possible to find tarhana in the neighbourhood groceries as well as in the supermarkets. Unfortunatelly the packaged Tarhana can hardly match Homemade ones.

    According to historians; Tarhana is maybe the first instant Soup around the world. Also, Tarhana Dough-Tarhana Soup (Tarhana Çorbasi) was invented by the Central Asian Turks many many years ago (Nearly 500 years old soup). After the inventory of Tarhana Soup, it spread to the neighbouring Balkans very fast. Nowadays, Tarhana Soup is also consumed in places such as Cyprus, Greece and the whole region of the Balkans.

    If you ask that "What is Tarhana?": Tarhana at first sight looks like bread Crumb. But it is actually, made up of vegetables such as onions, tomato, red pepper and other ingredients such as yogurt, flour and various spices. (homemade-dried-tarhana)


Here it is our Homemade Tarhana Soup (Tarhana Çorbası)'s Recipe;

(Serving: 4 Servings, Preperation Time: 2 Hours, Cook Time: 20 minutes.)

        Ingredients:

       - 4 Tablespoons Tarhana,,
       - 1 Tablespoon Butter (or olive oil),
       - 1 Tablespoon Tomato Paste (it is optional),
       - 1 Liter Water (Room temperature),
       - 1 or 1/2 Teaspoon Salt to taste,
       - 1 Teaspoon Red Hot Pepper Flakes and Dry Mint Flakes (it is optional),


        Preperation:

        Firstly, you should rehydrate your Tarhana Dough by placing it in a medium bowl and filling the bowl tepid water(150 milliliter water). Stir occasionally and leave it to rehydrate for a couple of hours. If you dont want to the texture of your soup somewhat thick, you should add more water (water should be about 250 milliliters for every tablespoon of Tarhana )Then, Melted the Butter over medium heat in a pot. Now, pour your rehydrated Tarhana and, then add Tomato paste and stir around (2 minutes) until the tomato paste has dissolved into the mixture. Then add remaining the water and continue to stir until the water comes to boil. Stirring all the time so that Tarhana doesn't settle and stick to bottom of the pot. When the water is boiling lower the heat and continue to mix another 3 minutes. Then taste and add salt to taste. Then, garnish with red hot pepper flakes and dry mint flakes. Serve warm.
