Turkish Beyti Kebab Recipe

Maybe, one of the very famous and mouth watering Turkish food is "Kebab". Turkish Kebabs are dishes of the plain or marinated meat either stewed or grilled. Almost every region (city) of Anatolia has its own kebab specialty. Generally, lamb, mutton and beef is the basic meats of kebabs. As you may have noticed by now, Turkey is like an endless sea of kebab recipes. Beyti kebab is one of the most popular and delicious kebab dish.

In this post, we will bring "Beyti Kebab" into your kitchen. Please, Don’t be worry or frighten and relax! Because beyti kebab is a very pratical and easy recipe. Just try it and we are sure that you will love it!

What is Beyti Kebab!

Beyti kebab is a delicious Turkish dish that is prepared with ground meat (lamb or beef), grilled on a skewer (or baked in an oven) and served wrapped in lavash bread (tortilla bread) and topped with tomato sauce and yogurt. Sometimes people serve it with boiled cracked wheat (bulgur) or steamed rice too. They might also garnish it pinch of ghee and pistachio to bring out the flavors of beyti kebab.

Beyti Kebab's Origin!

This delicious dish originally comes from the Switzerland. We were introduced this dish by the Beyti Güler. It is named after "Beyti Güler", the owner of the famous restaurant called "Beyti" in Istanbul city. He was inspired to create this dish in 1961 after witnessing the famous Swiss butcher Möller's method preparing meat when he was visiting Switzerland. His version consists out lamb fillets wrapped in stripes of cutlet fat and grilled. When the Kebab's fame spread internationally, it came to be named after him. Beyti is also very famous restaurant in istanbul, specializing an roasted meat. It was founded in 1945 in Küçükçekmece district of Istanbul and since 1983 it has been situated in Florya neighbourhood. This restaurant offers traditional Turkish cuisine and different kebabs. Of course, "Beyti Kebab" is the most popular dish among all other dishes. Also this kebab is very famous dish through out the East and southern East regions (especially in Urfa, Diyarbakır, Gaziantep and Adana cities).

How to Make Beyti Kebab!

"Beyti" is the yogurt and tomato sauce version of the kebab we all know, with a few additions and flavors. It is a unique dish with a few extra ingredients that make it a little different from the normal kebabs. Its preparation is easy and not complicated. We are sure that when you try this recipe, you will like it and you won’t find many people saying "No!" to that. With its practical preparation, fragrant scent and visual feast, it makes an excellent main course for any meal (such as special day meals, family meals, friend meeting meals etc). Although it may seem acceptable to prepare the meat inside the Beyti by grilling, the version made in the oven is often more practical.

Recipe for Beyti Kebab!

Reporting this delicious kebab is pretty straightforward and very inviting. With the ingredients listed below, you can cook beyti kebab for four people in 1 hour or 1 hour and half.

Here is an unforgettable dinner recipe for you and your guests;

 1 Egg,  1 onion and 2-3 cloves garlic,

Lavaş beyti nasıl yapılır?
Firstly prepare your meatballs mixture, put your
ground meat and breadcrumbs in a bowl,

Then blend (or grate) the onion, garlic and egg
 then add them to mixture,

and let it to rest for a while,

Then place a wax paper on your baking tray,

 thick meatballs and place them into baking tray,

Then heat your oven to 175°C (340°F) and cook
them in your oven for about 10-12 mins.

Bake your meatballs into oven then remove them
from the oven for the rolling process,

Meanwhile prepare your Caramelized Tomato Sauce,

Blend your tomatoes and garlic, then melt your butter,

Then add blended tomatoes and garlic into melted butter,

Stir tomatoes mixture and butter well,

For Homemade lavash; put flour, salt, water and
 yogurt into bowl and knead it by your hands,

Cover the dough with a towel and leave it to rest
for a while and then divide it into 2-3 balls,

Then use a rolling pin to flatten each ball up,

Roll them out into a thin disc,

Then heat up a skillet to medium high heat and place
the dough onto the dry pan and cook for 3-4 mins,

Now homemade lavashs are ready,

If you want you can use store-bought lavash (or tortilla),
lay your lavash leave on your counter,

Meanwhile melt your butter for greasing the lavash,

Cut lavash into 2 pieces from the middle and
spread melted butter on them with a brush,

Align your meatballs through the wide side of
 the lavash leave and roll the lavash firmly,

Repeat the same process for the rest of the lavashs,

Then cut your beyti kebab as 3 fingers thickness
 slantwise, align your kebabs in your tray again,

Spread the melted butter on top of kebabs with the brush,

Cook your beyti kebab until the top fries,

Then take your beyti kebab in your serving plate
 and pour tomato sauce through,

Serve Beyti kebab with yogurt and
 sprinkle the chopped parsley on tops,

Cracked wheat (bulgur) pilaf or
 rice dish - pilaf goes well with this dish,

Serving: 4 servings, Preparation Time: 30 minutes, Cooking Time: 30 minutes, Calories: 486 kcal, Cuisine: Mediterranean & Turkish Cuisines,

Ingredients: 

For the roll:
  • 2 or 3 Store-bought or homemade lavash (flat bread) leaves (or tortilla leaves),
  • 3-4 Tablespoon butter,

Ingredients for Homemade Lavash (Tortilla); (if you want, you can make your own Lavash/Tortilla),
  • 1/2 or 1 Cup all purpose flour,
  • 1 or 1/2 Teaspoon salt,
  • 1 Cup of Water,
  • 1/2 Cup of Yogurt, (optional),
For the Meatballs (Kebab):
  • 600 gr Ground meat (lamb or beef),
  • 1 Egg,
  • 2 Tablespoons breadcrumbs,
  • 1 Small Onion (grated or blended),
  • 2-3 Cloves garlic (grated or blended),
  • 1 Teaspoon Cumin, 
  • 1 Teaspoon Red pepper flakes, 
  • 1 Teaspoon Ground black pepper,
  • 1 Teaspoon salt,

For the sauce (Caramelized Tomato Sauce):
  • 4 Normal size tomatoes, (grated or blended),
  • 1 Tablespoon Tomato paste,
  • 2 or 3 Cloves garlic, (grated or blended),
  • 3 Tablespoons butter,
  • 1 Teaspoon Red pepper flakes, 
  • 1 Teaspoon salt,
  • 2 Cups hot water,
For serving:
  • Yogurt,
  • 1/4 Bunch of parsley, chopped,

Preparation:

  1. First of all, put your all ingredients on your work surface. First prepare your meatballs (kebabs); Take your ground beef, breadcrumbs, egg, onion (blended), garlic (blended), ground black pepper, red pepper flakes, cumin, salt in a container, knead about 10 minutes and let it to rest for a while (45-50 minutes). 
  2. Then heat your oven to 175 °C (347 °F), Make approximately 10-15 cm. (nearly 4-6 inches) long flat and thick meatballs (kebabs) by your hands from the meat mixture (bye the way, put water in a small bowl and keep it next to you. And dip your hands in this water frequently while shaping the meat. The water will help keep the mixture from breaking). 
  3. Then, put a wax paper on your baking tray, align your kebabs in your tray and cook them in your oven for about 10-12 minutes. While waiting for the kebabs, prepare your Caramelized Tomato Sauce. 
  4. For tomato sauce; put your butter in a saucepan and melt it. Then add blended tomatoes and garlic into melted butter and sauté for about 3-4 minutes as stirring constantly. Then add tomato paste into mixture sauté for about 1-2 more minutes and stir constantly. Lastly add your 2 cups hot water and stir your sauce until your sauce get a liquid consistency. 
  5. Then take your store bought lavash (tortilla) leaves or if you want, you can prepare your own lavash in your kitchen. For Homemade Lavash (tortilla); First of all, in a medium bowl, combine your all purpose flour, water, yogurt and salt. With a spatula or wood spoon, mix ingredients and stir until a dough forms (or Use your hands to gently form a dough, which is sticky at this point) then cover the dough with a towel (or foil), and leave to rest for 15-20 minutes. Divide the dough into 2 or 3 balls and dust each ball generously with flour. Then, use a rolling pin to flatten each ball up. Roll them out into a thin disc. Then, heat up a skillet to medium-high heat and place the rolled out your dough onto the dry pan. Cook for 3-4 minutes until brown spots form, flip, and heat for another 3-4 minutes until brown spots form. That's it. Our homemade lavashs (tortilla) are ready. 
  6. Then lay your lavash (or tortilla) leaves on your counter, cut into two pieces from the middle and spread melted butter on them with a brush. Align your kebabs through the wide side of the lavash leave and roll the lavash leave firmly. Cut your beyti kebab as three finger thicknes slantwise. Align your kebabs in your tray again and cook until the top fries. Take your beyti kebab in your serving plate and pour your tomato sauce through. 
  7. Serve Beyti Kebab with yogurt and sprinkle the chopped parsley on tops.
