Turkish kebabs (or kabobs) are very famous all around the world. People mostly know "Turkish Doner Kebab" (grilled or broiled meat on a -vertical- skewer or stick) is a kebab, which is not correct. There is a misunderstanding around the world that doner is a kebab or that kebab is doner. Yes "Turkish Doner Kebab" (grilled or broiled meat on a -vertical- skewer or stick) is a very famous and unique kebab dish. But, Turkish Kebab is not a simple dish. It is the name of a food category. We have "Ali nazik kebab", "Tas kebab", "Adana kebab", "Orman Kebab / Jungle Kebab", "Shish Kebab". We generally call most of the dishes prepared with meat kebab. Is kebab originally a Turkish dish? Absolutely yes! Kebab is one of the most well known dishes in Turkish Cuisine.
Today we are going to give you one of the best recipes where fried meat meets french fries. Its name is "Turkish Steak Kebab with Potatoes (Çökertme Kebabı = in english: Crash Kebab or Collapse Kebab)". It originates from the Çökertme region (Çökertme Willage) of Bodrum town. It is also known that "Bodrum Kebabı". Its name pronounced "Ch'kertme kebab".

These charming coastal regions are perfect examples of the traditional and modern life good along hand in hand in perfect harmony. They are important tourism center for the world with their natural beauties, historical places and their delicious foods. Turkish Steak Crash Kebab (Çökertme Kebabı) is one of the best recipes of the Çökertme Willage. You can find this dish in all restaurants and cafes in the Bodrum town or Çökertme Willage very easily.
How to Make Turkish Steak Crash Kebab (Çökertme Kebabı)
Firstly, we are 100 % sure that you will like this dish when you try it. It is very easy recipe and not complicated. It is basically fried tiny potatoes topped with yogurt (mostly garlic-yogurt mixture), sauteed meat and tomato sauce. Çökertme kebabı is always such a beautiful Family dinner at Sundays.
We recommend that you run to your kitchens as soon as possible to cook this beautiful Kebab, which will make your palate a taste explosion with its fried meats, potatoes, tomato paste sauce and garlic-yogurt. Just try it and we are sure that you will say "love love love!"

Ingredients: Beef steak, potatoes, onions, tomatoes, yogurt, garlic, tomato paste, vinegar, olive oil, |
|
Ingredients: Vegetable oil for frying and spices. |
|
Lean beef steak chopped in julien |
|
Then marinate your meats |
|
For marinated meat: Grate the garlic cloves. |
|
For marinated meat: finely chopped onions. |
|
For marinated meat: Mix all ingredients (meat, garlic and onion) |
|
For marinated meat: then add olive oil into mixture |
|
For marinated meat: then add vinegar into mixture |
|
For marinated meat: add spices (thyme) |
|
For marinated meat: add spices (red pepper flakes) |
|
For marinated meat: add spices (cumin) |
|
For marinated meat: add spices (salt and ground black pepper) |
|
For marinated meat: Mix all ingredients well |
|
Cover the bowl, stretch it and place mixture into Fridge for about 1 hour |
|
Peel your potatoes and chopped them as thin as possible |
|
Then wash them and drain |
|
In this recipe our chopped potatoes are abit thick. If you want you can use this size of potato |
|
Then add vegetable oil in pan and start to fry your potatoes |
|
While frying your potatoes, fry your meats in another pot. |
|
Then add vegetable in pot and start to fry your meats |
|
Then add your marinated meats into pot |
|
Fry your meats into pot |
|
If needed add hot water in it |
|
Fry your meat until its juice - water disappear |
|
For Tomatoes sauce: add olive oil, Tomato paste into pan |
|
Cook the mixture for 1-2 minutes |
|
Peel your tomatoes and chopped them finely |
|

Then add chopped tomatoes and grated garlic into pan |
|
Cook mixture 5-7 minutes |
|
Tomatoes sauce, frying potatoes and meats are ready |
|
For garlic-yogurt sauce: mix Grated garlic and plain yogurt |
|
Now our kebab's 4 layers are ready |
|
First layer: place your frying potatoes onto serving pkate |
|
Then put garlic-yogurt sauce onto potatoes |
|
Then pour tomatoes sauce onto |
|
Lastly place your meats on top and it is done |
Recipe of Turkish Steak Crash Kebab (Çökertme Kebabı)
We especially prefer this dish to family dinners or friend parties dinner. It is amazing kebab dish. When you try it for friend parties dinner. Results are always perfect!
Here it is our Turkish Steak Crash Kebab (Çökertme Kebabı) recipe;
Very good family favourite;
Serve: 4 servings, Preparation Time: 30 minutes, Cooking Time: 40 minutes, Cuisine: Mediterranean & Anatolian Cuisines,
- 600 gr of lean beef steak chopped in julien, (if you want, you can use chicken breast instead of the meat),
- 3 Medium size potatoes, (Chop the potatoes as thin as possible),
- 2 Tablespoons vegetable oil or olive oil, (For frying),
- 1/2 Teaspoon Salt, thyme, red pepper flakes, ground black pepper,
For Marinated Meat:
- 1 or 2 Normal size onion,
- 2 Cloves garlic,
- 4 Tablespoons olive oil,
- 2 Tablespoons vinegar,
- 1/2 or 1 Teaspoon Thyme, red pepper flakes, ground black pepper, and cumin,
For Tomatoes sauce:
- 3 Medium size tomatoes,
- 1 Tablespoon tomato paste,
- 1 Tablespoon olive oil,
- 1/2 Teaspoon salt,
- 1/2 or 1 Clove grated garlic,
For the Garlic-yogurt Sauce:
- 1 Cup of plain yogurt
- 2 Cloves of grated garlic
Preparation:
- First of all, put your all ingredients on the work-table. Then, finely chopped steaks into Julienne. Put the meats into deep bowl. Now, your meats are ready to marinate.
- For marinate meat: Put finely choped onion, garlic, vinegar, olive oil, red pepper flakes, ground black pepper, salt, thyme and cumin onto the meats. Then mix them. Cover the bowl, stretch it and rest for a few hours in the fridge (at least 1 hour). Then prepare your tomato sauce.
- For tomato sauce: Put olive oil into a pan. Then, add tomato paste onto olive oil and cook mixture until 2-3 minutes. Then, put grated tomatoes onto mixture and cook it until 5-7 minutes. Then, add grated garlic and sprinkle salt onto tomato sauce and stir. Then remove it from heat.
- Then, pour your vegetable oil into a large pan and heat the oil. Put meats into pan, cook the meats until the their water disappears. Pour hot water if needed and cook until your meat is soft. Then, sprinkle salt and spices if needed (thyme, red pepper flakes, ground black pepper). Cook your meats 1-3 minutes.
- Meanwhile, peel the potatoes and wash and drain. Then, chop your potatoes to thickness of matchstick (we mean that chop the potatoes as thin as possible. Bye the way our potatoes sticks were abit thick in this recipe). Put a small amount of vegetable oil in a large pan and heat. Then, put the potato into heated oil and cook them until golden brown on both sides. Don't forget to prepare garlic-yogurt sauce.
- For garlic-yogurt sauce: Combine your plain yogurt, crushed garlic and salt in a bowl and mix them well.
- For serving Çökertme Kebabı: Transfer your fried potatoes in serving plates, then pour garlic-yogurt sauce onto top, finally put tomato sauce and cooked meats onto. Serve hot.
