There is a misunderstanding around the world that doner is a kebab or that kebab is doner. Yes "Turkish Doner Kebab" (grilled or broiled meat on a -vertical- skewer or stick) is a very famous and unique kebab dish. But, Turkish Kebab is not a simple dish. It is the name of a food category. We have "Ali nazik kebab", "Tas kebab", "Adana kebab", "Orman Kebab / Jungle Kebab",  "Shish Kebab". We generally call most of the dishes prepared with meat kebab. Its name is "Turkish Steak Kebab with Potatoes (Çökertme Kebabı = in english: Crash Kebab or Collapse Kebab)". It originates from the Çökertme region (Çökertme Willage) of Bodrum town. It is also known that "Bodrum Kebabı". Its name pronounced "Ch'kertme kebab".

Recipe of Turkish Steak Crash Kebab (Çökertme Kebabı)

We especially prefer this dish to family dinners or friend parties dinner. It is amazing kebab dish. When you try it for friend parties dinner. Results are always perfect! 

Here it is our Turkish Steak Crash Kebab (Çökertme Kebabı) recipe;

Very good family favourite;

Serve: 4 servings, Preparation Time: 30 minutes, Cooking Time: 40 minutes, Cuisine: Mediterranean & Anatolian Cuisines,

Ingredients:
  • 600 gr of lean beef steak chopped in julien, (if you want, you can use chicken breast instead of the meat),
  • 3 Medium size potatoes, (Chop the potatoes as thin as possible),
  • 2 Tablespoons vegetable oil or olive oil, (For frying),
  • 1/2 Teaspoon Salt, thyme, red pepper flakes, ground black pepper, 

For Marinated Meat:
  • 1 or 2 Normal size onion,
  • 2 Cloves garlic,
  • 4 Tablespoons olive oil,
  • 2 Tablespoons vinegar, 
  • 1/2 or 1 Teaspoon Thyme, red pepper flakes, ground black pepper, and cumin, 

For Tomatoes sauce:
  • 3 Medium size tomatoes,
  • 1 Tablespoon tomato paste, 
  • 1 Tablespoon olive oil,
  • 1/2 Teaspoon salt,
  • 1/2 or 1 Clove grated garlic,

For the Garlic-yogurt Sauce:
  • 1 Cup of plain yogurt
  • 2 Cloves of grated garlic

Preparation:
  1. First of all, put your all ingredients on the work-table. Then, finely chopped steaks into Julienne. Put the meats into deep bowl. Now, your meats are ready to marinate. 
  2. For marinate meat: Put finely choped onion, garlic, vinegar, olive oil, red pepper flakes, ground black pepper, salt, thyme and cumin onto the meats. Then mix them. Cover the bowl, stretch it and rest for a few hours in the fridge (at least 1 hour). Then prepare your tomato sauce. 
  3. For tomato sauce: Put olive oil into a pan. Then, add tomato paste onto olive oil and cook mixture until 2-3 minutes. Then, put grated tomatoes onto mixture and cook it until 5-7 minutes. Then, add grated garlic and sprinkle salt onto tomato sauce and stir. Then remove it from heat.  
  4. Then, pour your vegetable oil into a large pan and heat the oil. Put meats into pan, cook the meats until the their water disappears.  Pour hot water if needed and cook until your meat is soft. Then, sprinkle salt and spices if needed (thyme, red pepper flakes, ground black pepper). Cook your meats 1-3 minutes. 
  5. Meanwhile, peel the potatoes and wash and drain. Then, chop your potatoes to thickness of matchstick (we mean that chop the potatoes as thin as possible. Bye the way our potatoes sticks were abit thick in this recipe). Put a small amount of vegetable oil in a large pan and heat. Then, put the potato into heated oil and cook them until golden brown on both sides. Don't forget to prepare garlic-yogurt sauce.  
  6. For garlic-yogurt sauce: Combine your plain yogurt, crushed garlic and salt in a bowl and mix them well. 
  7. For serving Çökertme Kebabı: Transfer your fried potatoes in serving plates, then pour garlic-yogurt sauce onto top, finally put tomato sauce and cooked meats onto. Serve hot.
