Today, we are going to mention about the our very common and famous meat dish with you. Its name is meat balls/meat patties. In Turkey, they are called kofte, köfte (koeuf-TAY'). Meat balls (kofte, köfte) are without a doubt one of the most widespread traditional dishes in Anatolia (Turkey). Generally, they are made of minced beef (or sometimes lamb) with the addition of different spices.
But, in this post we are going to share "Easy Basic Burger Recipe" with you. Because, all our children and youth are keen on the burgers. And, our homemade beef burgers are really loved by the all children and households. Also homemade burger recipes are very popular among the our friends and neighbours.
What is Turkish Kofte?
As, we said above of the post; Köfte or meat ball is the really very famous and popular food of Turkey. According to research, there are more than 100 different köfte / meatball recipes in Anatolian (Turkish) cuisine. Turkey has 81 cities and each city has at least a couple of different Köfte/meat ball recipes. Now a days, homemade beef burgers are spreading through out the country.
Most of the Köfte / meatball variety names receive their names from the cities that they are from. For example, "Sivas Köftesi" has received its name from Sivas city and "İzmir Köfte" has received its name from İzmir city. Also "Tekirdağ Köftesi", "Inegöl Köfte", "Akçaabat Köfte", "Çine Köfte" etc. have received their names from their cities or towns. The only differences between these kofte / Meatball varieties are ingredients and their cooking style. While some varieties have bread crumbs or egg in it, some don’t. Hope, we cook most of them and share their recipes with you.
The word ‘Köfte / Kofte’ comes from the Iranian (Persian) language. Iranian people call it "Kufta". Within years, it is derived from "Kufta" word to "Kofte". In the major cities of Anatolia (Turkey), it is called "Köfte ('o' letter turns to 'ö' leter)"; however, it is called "Kofte" in the eastern regions of Anatolia (Turkey). You can find meatballs at all the meat restaurants in our country. We are sure and believe that; there is no meat restaurant exist who don’t offer köftes / meatballs on their menu.

How to Make Super Easy Basic Burger
Lately, we have received questions of "how do you make homemade beef burger?" , "how to make homemade hamburger patties?" From our friends and neighbours very much. Our children love it, adults love it and even our pets (4 legged friends cats and dogs) love it very much. Actually, we cook our traditional köfte / meatball a lot in our kitchen. But, recently we have cooked burgers very often because of our children fond of it. So, today we want to share our "Homemade Beef Burgers Recipe" with you. Its preparation is so easy and not complicated. According to us; "Homemade Beef Burgers Dish" is always better than the fast-food shops' burgers.
Bye the way, we always use beef meat when we cook homemade burgers. But if you want, you can use others. Especially, when you make Mediterranean style burgers; lamb mince (preferably from leg trimmings) replaces the beef mince, also fresh mint instead of the parsley and ground cumin are used very often.

Recipe for Super Easy Basic Beef Burger
In this recipe, we didn't use chopped parsley because of our children didn't want and enjoy it, but we generally use it for köfte / meatball mixture.
Here it is our Super Easy Basic Burgers' recipe;
Very good family favourite;
Serving: 6 Servings, Preparation Time: 45-50 minutes, Cooking Time: 18-20 minutes, Cuisine: Mediterranean & Anatolian Cuisines,

Ingredients of köfte: Ground beef, bread crumbs, Tomato sauce, vinegar, garlic and spicies |
|
Ingredients of köfte: egg, onion, dried mint and cumin Parsley (optional) |
|
Grate the garlic cloves |
|
Grate the onion |
|
Mix grated onions, garlic and spicies well |
|
Then add breadcrumbs and tomato sauce and vinegar |
|
Then add ground beef, egg and mix them with tomato sauce and vinegar |
|
Mix köfte mixture with your hands until evenly combined |
|
Then divide your köfte mixture 6 equal size and Shape your meatballs by your hands or shaper |
|
Place your köftes onto a tray with graseproof paper |
|
Then cover them with plastic wrap and place them into fridge for 30 minutes |
|
To serve: cut your tomatoes thinly slices |
|
To serve: 6 lettuce leaves and sliced cucumber pickle |
|
Ingredients of Onion salad: parsley, onion, olive oil and sumac |
|
Chop your onion and put it into salad bowl |
|
Chop your parsley and put it into salad bowl |
|
Then add olive oil and sumac and mix with your hands |
|
Then add other spicies and mix |
|
Onion salad goes well with beef burger |
|
For French frues: 3 Normal size potatoes, cut them thinly slices and wash them then dried. |
|
After drying your potatoes, fry them with vegetable oil in frying pan |
|
French fries goes well with beef burger |
|
Cook your potatoes until golden |
|
Golden colour fried potatoes makes your dish delicious |
|
Lastly pour alittle tomato sauce on topping and serve |
|
Toast your burger buns for 1 minute |
|
If you want, you can Toast your burger buns more than the one minute |
|
Heat the olive oil in non-stick frying pan |
|
Then cook your meatballs for 4-5 minutes on each side |
|
Or cook them until browned |
|
Then prepare your beef burgers |
|
Homemade basic beef burger |
- 750 - 800 gr beef mince with a little fat,
- 1 Cup breadcrumbs, (or made it from day-old bread),
- 1 large onion, grated,
- 1 Egg,
- 1 Tablespoon tomato sauce,
- 1/4 Cup chopped fresh Continental parsley, (it is optional)
- 4 Cloves garlic, grated or crushed,
- 1/2 Teaspoon Salt, ground black pepper, red pepper flakes, dried mint and cumin to taste,
- 1/2 Tablespoons Grape linegar,
- 6 Burger buns, halved, (or Turkish Bread),
- Sliced Cucumber pickle, to serve,
- 6 Lettuce leaves, to serve,
- 5-6 Medium size (about 500 gr) ripe tomatoes, sliced, to serve,
- Tomato sauce, to mixture of meatball and to serve,
For Onion Salad;
- 1 or 2 Normal size onions, thinly sliced,
- 1/4 Cup chopped fresh parsley,
- 1/2 Teaspoon salt, ground black pepper, red pepper flakes, and sumac to taste,
Preparation of Onion Salad: Our special onion salad goes well with this dish. Firstly, put your all very thinly sliced onions, extra virgin olive oil, chopped parsley, sumac, ground black pepper and red flakes pepper in a salad bowl. And, mix all of them with your hands until they are mixed well. Lastly drizzle extra virgin olive oil over the salad and serve.
For French Fries (Fried Potatoes):
- 2 or 3 Normal size potatoes, thinly sliced,
- Vegetable oil,
- Tomato sauce for topping,
Preparation of French Fries (Fried Potatoes): French fries (fried potatoes) goes well with this dish. Cut your potatoes thinly slices and heat vegetable oil in deep fryer pan to 180-190°C (375°F). Then add your potatoes and cook until golden. This process takes 5-7 minutes. Then drain on paper towels. Lastly pour alittle tomato sauce on top and serve.
Preparation of Beef Burgers :
- First of all put your all ingredients on your work-surface. It is important to use beef mince with a little fat. This will not only add flavour, it also ensure a tender burger by preventing the your köftes / meatballs from drying out during the cooking process. And, Breadcrumbs addition to this recipe helps to give the cooked koftes / patties a lighter, more tender texture. The egg acts as a binding ingredient so that the your Köftes / meatballs can be easily shaped. It also helps them hold together when cooked.
- Firstly, place your beef mince, breadcrumbs, egg, parsley (optional), onion, garlic, tomato sauce, grape linegar, in a large bowl. Season with salt, ground black pepper, red pepper flakes, dried mint and cumin. Mix with your hands until evenly combined.
- Then, divide your köfte / meatball mixture into 6 equal portions. Shape each portion with your hands into a patty (about: 10-12 cm in diameter and 1,5-2 cm thick / 4,72 inch in diameter and 0,75 inch thick)
- Then, place your köftes / patties onto a tray lined with graseproof paper. Cover with plastic wrap and place in the fridge for at least 30-35 minutes to rest. This process will help them hold together when cooked. This also allows the flavours in the köftes / meatballs to blend and develop.
- Then, heat the olive oil in a large, non-stick frying pan over medium-low heat and cook your köftes / meatballs for about 4-5 minutes on each side or until browned and cooked through. Transfer the patties to a plate, set aside and keep warm. Repeat with the remaining oil and patties.
- Meanwhile, preheat grill on high. Place your burger buns (burger breads), cut - side up, under the preheated grill and Toast for 1 minute (if you want golden buns, you should Toast them more than the 1 minute).
- To serve, spread the bottom halves of the toasted burger buns with köfte/meatball. Top with the lettuce, sliced tomato, cucumber pickle and pour alittle tomato sauce over them. Cover with the hamburger bun tops.
- Turkish Ayran Beverage (salted yogurt drink) and Turkish Pilaf (Rice dish or cracked wheat / bulgur dish) go well this dish.
