            Piyaz salad is a general term for a dried Bean (white Bean or Navy bean) meal served with onion, parsley, olive oil, vinegar and some spices (such as sumac, red pepper flakes, ground black pepper etc.) in Turkey. Turkish white bean salad (Piyaz salad) is made with a few ingredients and is ready to 10 minutes or less time. Dry beans are the most important dry legumes for the Anatolian (Turkish) Cuisine. Most of people know dry beans as the "Sultans" of the Anatolian Cuisine. They are really a stable in Turkish Kitchen. We have many delicious recipes of fresh and dry beans meals. One of maybe the most common ways to eat dry beans is as a cold salad or starter. We call it "Piyaz Salad (pron: Pee + AHZ)" 

           Like other meals in Anatolian cuisine, our Piyaz dish is also changing from one region to another, such as Antalya city style Piyaz salad or Central Anatolian cities style Piyaz salad. Basic ingredients (Navy beans,  onions,  parsley, olive oil and vinegar) are never change but some spices and vegetables may change from region to region. In former posts on the blog, we said that; there were so many meals in the Anatolian (Turkish ) Cuisine that so many of them changed from one region to another. Turkey (Anatolian) has different regions and every region has their own version of the meals like changing some of the ingredients. That's Why so many meals change from one region to another.

         Anatolian Cuisine includes many mezzes and side dishes that are absolutely very yummy and very delicious. One of them is white Bean or Navy bean salad (or Piyaz salad). We love it very much. Our version of Piyaz salad way we do in our homes and most of the Turkish women do in their homes too. Also you can find restaurant quality Piyaz salad in many restaurants in Turkey. Actually, Piyaz means "onion" in Persian language. According to historians, we must have taken it during the Ottoman Empire Era. It is the common name of onion salad at home. But, we, as Turkish people, prepare it - white bean salad (fasulye Piyazı) is the one with beans, onions and parsley. Also,  You like our  Turkish-shepherd-salad

          This vibrant, healthy and yummy Turkish Navy Bean or White bean Salad (Piyaz salad) gets ready in "No Time" and it is so yummy. Actually, red onions or normal onions and tometoes work very well with the sumac, red pepper flakes, ground black pepper and this Piyaz salad is a great side dish. We traditionally enjoy this salad with "Turkish Meat Ball - Kuru Köfte" and "Turkish Thin Pizza with minced meat/ground meat topping - Lahmacun "

         Serve: 4 Servings, Preparation Time: 10 minutes , Cooking Time: NO Cooking time, Cuisine: Mediterranean & Anatolian Cuisine, Dish Type: 100% Vegan, 

         Ingredients:

        - 1 Cup dry navy beans (dry white beans),
        - 1 or 2 Eggs , (Hard boiled and cut quarter pieces),
        - 1 or 2 Normal size Tomatoes, quartered and roughly chopped,
        - 1 Normal size onion, halved and thinly sliced,  
        - Half or 1 Bunch of Flat leaf parsley, roughly chopped,
        - Juice of 1 Lemon,
        - 1 Tablespoon extra virgin olive oil, 
        - 4 Tablespoons Grape vinegar,
        - 1,5 or 2 Tablespoons ground sumac (it is optional, if you dont want, you can add another spice),
        - 1 Teaspoon Red pepper flakes,
        - 1 Teaspoon freshly ground black pepper,

        Preparation:

       First of all, the night before, put your dry Navy beans in a large bowl and cover them generously with water. Let your Navy beans soaked overnight. Next day in the morning, drain your Navy beans and put them in a pot with fresh water and let them boil softly until your Navy beans tender. Then, allow your Navy beans to cool in the water. After cooling process, drain your Navy beans well. Then, put the drained beans in a large bowl and drizzle the Grape vinegar over the top. Then, cover the bowl with lid and let it rest for about one hour. In the meantime, put the onions slices and salt (if you use sumac put it) in another bowl and rub and work sumac and the salt into the onion slices with your hands very well (this will make soften the onions and let spices to infuse in well). Then, chop the tomatoes into small cubes, chop the parsley and stir the chopped tomatoes, parsley and red peppers flakes, combine well. Then, take your Navy bean bowl and drain extra vinegar from the beans. Then, Toss the chopped vegetables and parsley in with your fingers. Whisk together the extra virgin olive oil and lemon juice and pour over the Piyaz salad. Then, put the piyaz salad on a large, flat serving plate. Garnish the top with small cubes of tomatoes and quarter pieces of hard boiling eggs (Green olive, if desired), sprinkle red peppers flakes and fresh ground black pepper. Your Turkish Navy Bean Salad (Piyaz) is ready. Serve. Piyaz salad is accompaniment of "Turkish Meat Ball - Kuru Köfte" and "Turkish Thin Pizza with minced meat/ground meat topping - Lahmacun "
