TURKISH PIDE (Turkish Flat Bread With Ground Meat and Vegetables Filling/KIYMALI PIDE)

     When you think of delicious Mediterranean food, "Pita/pitta" (in Turkey; its name is "pide") and "Humus" are so popular throughout the Mediterranean region. Like in Mediterranean Cuisine, "Pita/pitta or Pide" is also very famous in Turkey. It is greasy, thin, crispy and yummy. There are many different pita/pitta/pide flavours with different cooking styles varying throughout the Anatolian region. It is filled with delicious things like meat, sausage and cheese. But, Turkish Flat Bread with Ground meat and vegetables filling/ Kiymali Pide is one of the most popular snack (or we can say that: most popular fast food) in Turkish Cuisine. 
     We, as Turkish people, like pide very much and we usually consume Turkish Pide at least once during the our Vacations. It is actually so good and you must try it when you visit here and we are sure that when you are a way from Turkey you will miss it very much. 
On the other hand, "Lahmacun/Lahmajun" is very famous and popular in Turkey too.
    İt might resemble to Turkish Pide very much but in fact it differ from lahmacun/lahmajun in following ways: They are both a kind of Turkish Pide or Turkish Pizza. Pide is long, thick, crispy edges and different fillings (We can say that its shape resemble to boat or submarine), while Lahmacun/Lahmajun is a round and very thin pide stuffed with Mince meat, sprinkle with lemon juice and rolled up when you eat. Also we use yeast for the Pide dough but we dont use yeast for the dough of Lahmacun/Lahmajun.

Here it is homemade Turkish Pide (Flat Bread With Ground Meat and Vegetables Filling/KIYMALI PIDE) recipe;

Ingredients:

For Dough (Flat Bread):
- 1/2 Cup Lukewarm water,
- 1/2 Cup Lukewarm milk,
- 2,5 - 3 Cups Flour (Nearly 500gr),
- 2 Tablespoon active dry Yeast,
- 1 Tablespoon Sugar, 2 Tablespoon Salt,

For Topping:
- 500 gr Ground Beef (or Ground Lamb),
- 1 Tablespoon olive oil,
- 1 Onions,  grated,
- 6 Green Peppers, Chopped,
- 2 Tomatoes, diced,
- 1/2 Tablespoon Ground Black Pepper, 1/2 Tablespoon Cumin,

Preparation:
Firstly, for preparing dough; in a large mixing bowl sift flour, active dry yeast, salt and sugar, then add the lukewarm milk and lukewarm water and stir to combine well. Now, time is to get dough of Flat Bread,  first, knead the dough until it turns to smooth and elastic, and give a ball shape. Then cover the dough ball with a clean moistened towel and put aside for about an hour until it doubles in size. For the topping; in a deep pot mix Ground Beef,  olive oil, onion, green peppers, tomatoes, ground pepper, Cumin and mix well. When the dough size doubles knead 5-7 minutes and then cut in 6-8 pieces. Give a ball shape to each dough piece by your hands. Now we need to flatten dough shape, first, flatten the balls with your hands and then roll in a oval shape with roller pin. Then spread the topping on each dough smoothly and fold the longsides toward to inside and twist the ends. So we may get our boat shape pide. Sprinkle some flour in a cooking tray and then arrange your flat breads on the tray. Bake in 190 °C (374 °F) degrees Preheat ed oven until the breads' edges golden.
