Actually, all foods in "Mediterranean Diet" likely offer a perfect protection for the humanbeing. Pizza is one of the most famous İtalyan food around the world. Also it is best - known snack as well as Lahmajun/lahmacun in Turkey. We, as Turkish people like Pizza very much. According to a study; (Dr. Silvano Gallus, PhD, an Epidemiologist at the Institute di Ricerche Farmocologiche in Milan/Italy-www.webmd.com) Regular Pizza Eaters are very lucky, because pizzas are considered very protective against the C A N C E R (caner of the oesophagus, cancer of throat, cancer of colon etc). But, you cant find these healty pizzas at the "Pizza delivery". So, where is the "Healty Pizza"? Yes, correct answer is "Homemade Pizzas". A simple thin homemade pizza with olive oil, tomato sauce, mozzarella/feta cheese and vegetables (but less meat) could help protect you against cancer. Olive oil, cooking tomatoes and cheese are so important ingredients for the protection. Lets skip the pizza delivery and try to prepare a perfect pizza at home.

Homemade Pizza Recipe
According to us, great pizza must begin with a great pizza crust. Some people like thin and crispy pizza crust, while others prefer thick and soft pizza crust. Our homemade pizza recipe has all of them: it is soft, chewy, crispy and its flavor is so good.
Ingredients:
For the Pizza Dough: All pizza dough starts same basic things; flour, yeast, olive oil, salt and water. Here is the our homemade pizza crust recipe;
- 3-4 Cups Unbleached all purpose flour (Nearly 500gr)
- 1,5 Cups (350ml) lukewarm water (105-115°F/40-50°C),
- 1 Cup Yogurt and 1/2 cup lukewarm milk (Yogurt, milk and yeast help the fluffiness of the Pizza's bread),
- 1 Package of active dry yeast (1/2Tablespoon),
- 2 Teaspoons Salt, 1 Teaspoon sugar,
- 1 Tablespoon olive oil,
For the Sauce:
- 1 Cup lukewarm water,
- 2 Cloves Garlic, finely chopped,
- 2 Tablespoons olive oil,
- 400 gr Tinned Tomatoes,
- 1 or 2 Tablespoon Chili Pepper(Chili Flakes), 1 or 1/2 Tablespoon Ground Black Pepper, 1/2 Tablespoon Cumin,
- 2 Sprigs Basil,
- 2 Sprigs Oregano,
For Pizza topping:
- Tomato sauce (Smoothly)
- Olive oil,
- Feta cheese, grated/crumbled (or mozzarella cheese),
- 1 Tomatoes, sliced,
- Raw Mushrooms, very thinly sliced,
- Turkish sausage sliced (25-30 slices sausage-sujuk-sucuk/Turkish Sucuk),
- 4 or 5 Shallots, finely chopped,
- Green Peppers or Green Bell Peppers, Their seeds and stems removed and very thinly sliced,
- Tinned Sweetcorn,
- Topping of your choice (You can add whatever you want)

Preparation:
Make the Dough: Firstly, we need a large bowl. In a large mixing bowl sift flour, and pour in the active dry yeast on the one side of bowl and the salt and sugar on the other side. Then pour lukewarm water and add lukewarm milk and yogurt and stir to combine well. Mix them by using a stand mixer or by hand, knead the dough until it turns to smooth and elastic, it takes nearly for 10 minutes. Then place the dough in the mixing bowl and cover with a damp tea towel and leave for 1,5 - 2 hours at room temperature, until the dough has doubled in size. Take the dough and knead it for a while to take some of the air out. Split dough two equal pieces.
Make the sauce: Peel and finely chop the garlic, then, put all sauce ingredients: "Garlic, Olive oil, Salt, Sugar, Tinned Tometoes, Chili Pepper, Ground Black Pepper, Cumin, Basil, Oregano" into a blender. Blend the sauce until smooth.
Cook Process: Firstly, flour a work surface take a rolling pin, roll the dough until it is roughly the size of the baking tray (or pizza stone if you have one) you are using. Place the rolled out dough onto the baking tray and using your hands, work the dough until it fills the baking tray. Then brush the surface of dough with olive oil and then spread a thin layer of pizza sauce mix over the dough. Then sprinkle on the grated feta cheese and tinned sweetcorn, then in layers add Turkish sausage, tomateos, shallots, mushrooms (then -if you have- followed by your topping choice). Cook the Pizza in Preheated oven at 200°C(392°F) for 20 minutes and then serve straight out of the oven.
