Purslane Salad with Garlicky Yogurt |
In Anatolian Cuisine, we, (Turkish People) use purslane raw in salads or cook them just like spinach very much. Purslane has a sweet and sour delicious taste. On the other hand, maybe most of Turkish people favorite green is purslane. So far, we have not heard that anyone who doesn't like purslane in Turkey. Especially, elderly people, forexample; our grand parents, our moms and fathers love it more than the spinach. According to them; purslane is one of the best greens in the world.
Actually, purslane is a leafy vegetable that most likely originated in the Mediterranean region. The entire plant of purslane, including the leaves, flowers, stems and seeds are edible and have been consumed for thousands of years in the region of the Mediterranean. It is widely used throughout the Asia, Middle East, Africa, Europa. Also, You can find purslane at Mexican or Latin American markets. it is called Verdolaga in Mexican and Latin American markets.
When we are children, teenagers and young, our moms & dads, teachers and other influential adults instruct us to eat fruit and vegetables as a way to stay healthy. In todays world, being healthy and staying healthy are very important subjects for the humanity. For instance; When you go to city center, you can see many restaurants that they are saying in their posters; "Super Foods are HERE!!!". Actually, we mostly dont believe this posters, even this mention make us sometimes mad. According to us; super food is "Purslane". Why? Because; The rich omega 3 content puts purslane at the top of the list among veggies in the leafy green category. So that, purslane really deserves a mention of: "Supper Food is Purslabe".

According to Keto Diet Program (or Ketogenic Diet, low carbonhydrates diet, low carb high fat-LCHF-); leafy green vegetables, like purslane, spinach and kale are usually considered good vegetables for the keto diet when consumed in moderation.

Here it is our "Purslane Salad with Yogurt Recipe"; this recipe is very light and refreshing during the hot summer days.
Ingredients:
Serve: 6 -8, Preparation Time: 10 - 15 minutes, Food Type: Vegetarian, Cuisine: Mediterranean Cuisine,
- 2 Bunchs of Purslane, wash very well and remove thick stalks and damaged leaves (but you may keep some thin stalks in your salad. Because, you know whole plant is very nutritious.
- 2 Garlic cloves, finely chopped,
- 250 - 300 gr Yogurt, (plain or normal yogurt: we often use normal yogurt, our homemade yogurt), you like our homemade-yogurt-recipe
- 2 Tablespoons Olive oil to garnish, - 1 Teaspoon Red Pepper Flakes to garnish,
- A little Salt (1 pinch),
Purslane Salad Preparation |
Preparation:
First of all, wash purslane very well and you should remove the thick stalks and damaged leaves (but you may keep some thin stalks in your salad. Because, you know whole plant is very nutritious). And then chop purslane coarsely.Then, in a bowl, crush the garlic with a pinch of salt until you have a thick paste. Then, add yogurt and mix yogurt, salt and garlic in a bowl very well. Lastly add your chopped purslane to mixture of yogurt, crushed garlic and salt in a bowl. Yogurt, crushed garlic and salt mixture should cover purslane leaves very well. Then, sprinkle over a little red pepper flakes and drizzled over a little olive oil. Then serve.
