Turkish Style Boiled Beef with Bones (Haşlama Et) Dish
When we were children, any member of family felt himself/herself bad, or sick, firstly our moms cooked meat with bones broth dish or yogurt soup dish, then we went to doctor or hospital. Why? Because when they (our moms and dads) felt themselves bad or sick, their moms cooked meat with bones broth dish or yogurt soup, then they went to doctor or hospital too. Traditionally, we believe that these two dishes makes recover and strong to our organism very quick and we call these dishes as medicine. We have consumed these dishes (especially in winter times) since we were children.
In this post, we are going to share our very unique dish with you. It is "Beef with Bones Broth Recipe" (Beef broth recipe). Sometimes, we call it as medicine. We cook it in winter times very often. We hope that our children love this dish like us and our grandparents. Because, this dish and many others have been used for a very long time as traditionally in our community.

Forexample; in Turkey, The people of the Golkoy/Gölköy town in Ordu city, and in Italy, the people of Cilento and Acciardi towns and in Russia, the people of Caucasus Mountains town of southern Russia have long been famous for attaining extremely old ages (longevous life). According to data of these governments; 70 percent of all people reaching 85 to 110 years or more live in these regions. People of these regions have a slow, regular and rhythmic life style (The outdoor work and their regions provide a good deal of exercise for them). There is also continuity in diet (Mediterranean foods). They mostly consume organic Mediterranean foods. People of these regions enjoy their traditional foods and beverages and have no inclination to change it. They have eaten the same meat, vegetables, grains, fruits and seafoods from childhood to old age. And, these foods' consume times (seasons), recipes and cooking methods are always same for these people. Anthropologist feel that while exercise and traditional diet contribute to longevity, the rhythmic lifestyle is more important. Many experts, scientists and Antropologists concluded that it is not the Mediterranean diet/traditional food itself that is the secret for long life, although it does contribute. The real secret or miracle is the continuity in diet from birth to death. Thé consistent, unchanged foods (diet) and regular meals, beverages (dietary) rhythm allow the body and its digestive system to become entirely adjusted.

This recipe is really so easy and simple. Also, this dish's ingredients are really very affordable and you can make it at home in either your pressure cooker, instant pot or in a stockpot on the stove.
In this recipe, we prefered pressure cooker for cooking process. Actually, we always use pressure cooker for the boiling meat or meat with bones dish. Because, result is really perfect.
Ingredients: 4 or 5 Pieces of Beef with Bones |
Place Meat pieces in cold water for 3-4 hours and change this cold water 3-4 times |
Then place meat pieces in pot |
Then add enough water in pot that covers the meat |
You don't need alot of water. Because meat produces Its own juice |
Ingredients: you need 4-5 bay leaves |
Add couple of bay leaves in pot |
We use pressure cooker for this recipe |
If you use pressure cooker, you should cook it 45 minutes If you use stockpot, you need 60-70 minutes to cooking it |
Ingredients of sauce: apple cider vinegar is better |
Ingredients of sauce: 4-5 Cloves garlic. |
Grate your garlic or Smash them |
Mix vinegar and grated garlic in cup |
Ingredients of sauce: ground black pepper, red pepper flakes and salt |
Sauce for this dish |
After cooked dish, you should remove the bones from the meat |
Bones must be removed from the meat easily, If your dish cooked well |
Place Meat pieces and meat juice in serving plate |
Add sauce to meat dish, then sprinkle a pinch of salt, ground black pepper and red pepper flakes |
If you want, you can eat dish without sauce and spices |
A bowl of homemade yogurt goes well with this dish |
Recipe of Boiled Beef with Bones Broth Dish
Here it is our Boiled Beef with Bones Broth Dish's recipe;
Serve: 4-5 servings, Prepare Time: 10 minutes, Cooking Time: 40-45 minutes for pressure cooker - 60-70 minutes for stockpot, Cuisine: Mediterranean / Anatolian Cuisines,
Very good family favourite;
- 4 or 5 Pieces of Beef with Bones,
- 4 or 5 Bay leaves,
- A pinc of Salt,
- Water,
For Sauce:
- 1/2 Cup of Apple cider vinegar, (if you want, you can grape vinegar, but apple cider vinegar is great for this dish),
- 4-5 Cloves Garlic, grated or smashed,
- 1/2 Teaspoon of ground black pepper, red pepper flakes to sprinkle over it,
Preparation:
- First of all take all ingredients on your work-surface. Then, take a deep and large bowl and pour cold water in it. Then place your meat with bones pieces in this cold water-bowl. This process takes 3-4 hours. During the process, you should change cold water four times. At the end of the process, Wash and rinse the meat with bones pieces again under cold water, remove any visible fat (bye the way we like to leave some fat on the meat as it makes the dish flavourful). Then, add the washed meat to a clean pot (we used pressure cooker instead of the pot).
- Place the meat with bones pieces on low-medium heat, and add water to cover all meats (nearly 1/2 of pressure cooker of water or less water is enough - You do not need a lot of water for this recipe, because meat produces its own liquid, adding too much water would just water down the flavour of the overall dish) and add couple of bay leaves in it. Then, stir to combine, and cover the pressure cooker with a lid and simmer for 40-45 minutes (if you use stockpot, you should cook it 60-70 minutes).
- Meanwhile, take a cup or plastic bowl, then pour your apple cider vinegar in it and add your grated garlic. Then mix them. Your dish's sauce is ready.
- At the end of the cooking process, your meat with bones must be fully cooked. Because, you can remove bones from the meats very easily (if not, cook it for a while). Remove all the bones from the meats.
- Then, place meat pieces and its juice in serving plate, then add 2 or 3 teaspoons sauce and sprinkle a pinch of ground black pepper and red pepper flakes over it. Also a bowl of yogurt goes well with this dish.
