Turkish Style Fried Anchovy




     How To Cook Anchovy / Hamsi Tava

     When the winter season comes, Anchovy fish (Hamsi = Pron: Hum/see) season begins in Istanbul and Black Sea regions. Then it spreads to whole Anatolia. Anchovy fish (Hamsi) is the most favorite fish of the Istanbul and Turkish Black Sea Region. It is tiny, delicious, best when frying,  also it is very smelly when fried. Anchovy can be cooked in a variety of ways. We , as Turkish People enjoy it very much. When the winter comes, we looking forward to eat "Fried Anchovy (Hamsi Tava)", "Baked Anchovy" or "Poached Anchovy". We are sure that; when you try one of them, you just say: "Mmmmm I really like it and looking forward to next time."
   
     Today, we are sharing that "Turkish Style Fried Anchovy - Hamsi Tava". Frying Anchovy is the very tasty and delicious option. Especially if you use Corn flour, its tasty increase. Also, ofcourse, you may use wheat flour, but we recommend that corn flour is better.

     Here it is our Turkish Style Fried Anchovy / Hamsi Tava Recioe: 

     I n g r e d i e n t s :


     - 1 kg Fresh Anchovy or Frozen Anchovy - cleaned (if it is frozen, defrosted it), 
     - 1/2 Cup Seasoned Corn Flour or Wheat Flour (we recommend that Seasoned Corn Flour is best for the frying Anchovy),
       - 1 Tablespoon Salt,
       - 1/2 Cup Sunflower Oil (or Canola oil or Corn oil - optional,- but not olive oil-),

       P r e p a r a t i o n :


       First of all, clean the fish; cut the heads off (it is optional; you may keep the heads on if you like, but heads absorb too much oil), then, remove the backbone of fish, if you dont like (But, if Anchovy fish is so fresh, the fish bones will not be an issue even with kids and elderly people who have chewing problem). After all these processes, gut the Anchovy and wash with cold water and drain. Put Anchovies in a large bowl and sprinkle the salt and then blend. Pour the Sunflower oil into a large frying pan (skillet) and heat it up over high-medium heat. Place the Seasoned Corn flour in a plate and dip the fish by holding from its tail. To remove the excess flour, shake the Anchovy fish off (or match up two of the opened fish filled to make one big plump fish -we use both of types-). When you are ready to start frying. Place in the hot oil. They will sizzle. Fry till Anchovies turn to a golden (a bit close to brown color) color, approximately for 4 - 5 minutes. Turn half way through. When they are done, place the fried Anchovy on a plate with kitchen paper towel to absorb the excess oil. Serve with lemon, Also seasonal salat goes well with fried Anchovy.
