How to Make Stuffed Zucchini with Ground Meat Dish?
Preparation of Stuffed Zucchini with Ground Meat Dish is very easy. Not difficult. Here it is our recipe of Stuffed Zucchini with Ground Meat Dish.
- 4-5 Middle Sized Zucchini,
- 1 Normal size Tomatoes, sliced, (it is optional, in this recipe we didn't use tomatoes slices),
- 1/4 Cup Rice and cracked wheat (Bulgur), (cracked wheat -Bulgur- is optional, We often prefer rice and bulgur for stuffed vegetables),
- 2 Tablespoons Tomato Paste or pepper paste, (1Tablespoon for filling other spoon for sauce),
- Half or 1 Lemon , squeezed,
- A few leaves of dill, minced,
- A few leaves of Parsley, minced,
- 1 Tablespoon dried mint flakes, (if you want you can use a few leaves of mint as minced),
- 1 Teaspoon Red pepper flakes,
- Half or 1 Teaspoon salt for the taste,

First of all, take your all zucchinis and wash them and drain, then cut them into two. Then grab a small spoon and scoop out your zucchinis pulp. The walls of zucchinis should be stable (your zucchinis shouldn't be too thick or too thin). Then, sprinkle a pinch of salt inside each of zucchines. For the filling; mix your diced onions, rice and cracked wheat (bulgur), ground meat (beef or lamb), 1 Tablespoon tomato paste, lemon juice, minced dill and parsley and 1Teaspoon dried mint, 2 Teaspoons ground black pepper and red pepper flakes, and half or 1 teaspoon salt in a bowl. Then mix all ingredients well. Now, time is filling the zucchinis time, stuff the zucchinis with the mixture (in this process be careful, it shouldn't be too tight), you can gently press on the filling while stuffing the zucchinis. Then place your each stuffed zucchinis upright in a large pot. In the meantime, take your normal size tomatoes and slice the tomatoes and put a slice on each stuffed zucchini to cover the filling mixture. Then, diluted 1 Tablespoon tomato paste (or pepper paste) with water and pour it into the pot. Then, pour some water (water level shouldn't cover the zucchini, leave it when the water reaches the middle of zucchinis). Cover the lid on the pot, put it over the lowest heat and cook it for about 40 minutes. You can serve it with some yogurt. (You like our Homemade-yogurt-recipe)
