         Anatolian (Turkish) Cuisine is well known for its stuffed and wrapped vegetable meals called "Dolma" and "Sarma". Stuffed vegetables, especially with rice and meat filling, are a unique of Anatolian (Turkish) Cuisine. We have loved them since we were children. Because they are so incredibly tasty.

         In our childhood times, when the pan with glass lid was put on the kitchen table by our moms, we suddenly understood that moms cooked stuffed green bell peppers for dinner. Then, steam hissing and its smell covered every corner of the kitchen even came to other rooms. Full of stuffed green bell peppers inside the pan boiled for along time in the kitchen. That day, we were looking forward to dinner very much. Generally, moms prepared Yoghurt-and-cucumbers-dip-cacık , because stuffed green bell pepper meal went well with the cacık perfect. We really loved this dinner very much. Stuffed Bell pepper (Turkish Dolma) dish is still very popular among the Turkish people.   

         What is "Turkish Dolma" with Olive Oil (Zeytinyağlı Biber Dolması) Meal


         "Dolma" in Turkish translates to any vegatables (such as bell pepper, eggplant and zucchini etc) stuffed with rice or rice-meat and spicies mixture. As you know, olive oil meals are cooked only with olive oil. They are generally served as cold or abit warm. Turkish Dolma (Rice Stuffed Peppers with Olive Oil) dish is one of our summer meals. It is traditional and very yummy. We are sure that you like it very much, when you try it.

         How to Make Vegetarian Stuffed Green Bell Peppers (Yeşil Biber Dolması)


         In this post, we are going to share our another traditional olive oil meal recipe on the blog. It is very comfort food and it is a common dish in Turkey.  Here it is our recipe for you;

         Ingredients:


         Serve: 4-6 servings, Prepare Time: 30 minutes, Cooking Time: 1 hour 20 minutes, Dish Type: 100% Vegetarian,  Cuisine: Mediterranean/ Anatolian Cuisine,

        - 12-15 Sweet Bell Peppers (Green bell peppers are most common, but you can cook different colors peppers aswell), tops cut off,
          - 2 Cups Rice and Cracked wheat (Bulgur),
          - 1 Cup Olive oil,
          - 3 Tablespoons Tomato paste, (divided in half),
        - 1 Normal size Tomatoes (it is optional-This tomatoes is for covering the top of bell peppers after stuffing),
          - 2 Normal size onion, finely chopped,
          - 2 Tablespoons pine nut,
          - 2 Tablespoons Currents, 
          - 1 Teaspoon Ground Black pepper,
          - 1 Teaspoon Red pepper flakes,
          - 1 Teaspoon Ground Cinnamon,
          - 1 Teaspoon Dried mint flakes,
          - 1 Teaspoon Salt,

Preparing bell peppers to Dolma dish

           Preparation:


          First of all, wash and cut the tops off your peppers and remove seedpods. Then, we should prepare our filling mixture. Take all ingredients on the work table. Then puts olive oil in a pot, add your chopped onions and pine nuts. When your onions are transparent and pine nuts golden, add the tomato paste and stir gently. Then, add your rice and cracked wheat (bulgur) and all the rest of your ingredients. Stir mixture 5-7 minutes. Then, add 1 cup of hot water. Lower heat and simmer your rice - cracked wheat (bulgur) mixture for about 10 minutes. Then, remove your mixture to a bowl and let it cool. Now, time is stuffing your bell peppers. Stuff the peppers with rice - cracked wheat (bulgur) mixture with a spoon or your hands. But not packed tight. If you want, cover the top part of your peppers with tomatoes slices, cut the fourth tomatoes into six wedges and place firmly one wedge on top of each pepper. Then, Place your peppers inte pan. Then, boil the some water and make up the tomato paste (other half tomato paste) with about 300-350 ml of boiling water and a generous pinch of salt. Pour over the stuffing peppers and there should be about 2-2,5 cm of sauce on the pan. This will make the sauce of your dish. Then, cover tight and place over a low-medium heat for about an hour or an hour ten minutes. The steam will cook your meal. Serve at room tempurature or cold. Turkish Dolma goes well with cacık pertfect.
