         December, January and February!!! In these winter monts, Turkish people like to consume winter preparations (such as sun dried vegetables and fruits,  marmalades, jams, sun dried yogurt with spices and vegetables soup:Tarhana, ) very much.  Traditionally, We, as Turkish people, can keep stuffing things in winter months if we dry vegetables in Summer months. So that,  winter preparations are a very important task for the Turkish people who live throughout the Anatolia region. Some of these preparations include marmalades and jams made from summer fruits, plus; "Home Made Dried Tarhana" Tarhana Soup (Dried yogurt with spices and vegetables used to make a traditional and popular soup), sun dried vegetables and pickles. Sun dried vegetables are usually made from popular summer vegetables such as bell peppers, eggplants, okra, red peppers and zucchini.

         Summer days passed very fast, we have started to days of fall season. Like many of the our neighbours and citiziens, we dried our vegetables under sun and prepared our jams and pickles. We are ready to winter. Especially, our sun dried bell peppers seems very yummy.          Ingredients:

         - 13-15 Pieces dried bell peppers shells,
         - 1/2 Cup Rice and 1/2 Cup cracked wheat-bulgur,
         - 3 Medium size onions, finely chopped,
         - 1/2 Bunch of Parsley,  finely chopped
        - 4 Tablespoons Tomato Paste, (it is optional, if you want, you can use 2 Tablespoons Tomato Paste and 2 Tablespoons Pepper paste),
         - 1/2 Cup olive oil,
         -2 Tablespoons dried mint,
         - 1 Teaspoon Ground Black pepper,
         -1 Teaspoon Red pepper flakes,
         - 2-3 cloves garlic, minced,
         - 2,5 Cups hot water,
         - 2 Tablespoons Lemon Juice,

          Preparation:


         First of all place your all sun dried bell peppers shells in a large saucepan, and simmer dried bell peppers shells in a saucepan for 15 minutes, drain. Then, add cold water, soak over night, drain, rinse and set aside. Then, Combine your rice, cracked wheat (bulgur), finely chopped onions, tomato paste, minced garlic, parsley, salt and spices. mix all stuffing ingredients very well and stuff bell peppers with this mixture. You can use your hands at this step. Fill your bell pepper shells with filling about 2/3 full. Then, place your stuffing bell peppers (dolmas) in a pot (you should arrange your dolmas in a pot side by side with open sides up) and if there is any juice left from the your filling mixture, pour it in this pot. Then, cover the pot and cook your dolma dish over high heat for about 5 minutes, then add 1/2 cup hot water and bring it to the lowest heat. Your  "Stuffed Sun Dried Bell Peppers in Olive oil Dish" will be done after about 30-40 minutes , you can understand it by checking the softness of rice and cracked wheat (bulgur). This meal can be served both warm and cold. And, especially in winter days, this meal goes well with Homemade-yoghurt .
