We, as Turkish people, firstly cook zucchini dish. Because, zucchini dish means that summer season is beginning and we will be having the freshest peppers, tomatoes, herbs, green beans etc. Nowadays, we live Fall season days and we are just leaving to summer season. Today, we are going to share our "Vegan Stuffed Zucchini Recipe (Kabak Dolması)". Maybe this zucchini dish is the last zucchini dish of this year. Because, we dont enjoy to cook this dish in winter days. Also, when the spring and summer days come, we love to cook  Purslane-with-rice-dish very much.

Furthermore, we can say that, stuffed zucchini with ground meat or vegan stuffed zucchini dish is in top ten list of Mediterranean Kitchen. Actually, Anatolian (Turkish) Cuisine is well known for its stuffed and wrapped vegetable meals called "Dolma" and "Sarma". Because, Stuffed vegetables, especially with rice and meat filling, are a unique of Anatolian (Turkish) Cuisine. Preparation of Stuffed Zucchini Dish

          Ingredidients:

         - 4-5 Middle Sized Zucchini,  
         - 1 Normal size tomatoes, sliced,
         - 2 Normal size onions, diced,
       - 1/4 Cup Rice and cracked wheat (bulgur), (cracked wheat -Bulgur- is optional, We often prefer rice and bulgur for stuffed vegetables),
         - 2 Tablespoons Tomato Paste or pepper paste, (1Tablespoon for filling other spoon for sauce),
           - 4-5 Tablespoons olive oil,
           - Half or 1 Lemon,  squeezed,
           - A few leaves of dill, minced,
           - A few leaves of Parsley, minced,
           - 1 Teaspoon Dried mint, (if you want  you can use a few leaves of mint as minced),
           - 1 Teaspoon Ground Black pepper,
           - 1 Teaspoon Red pepper flakes,
           - Half or 1 teaspoon salt to taste,

Preparation of Stuffed Zucchini Dish



            Preparation:


        First of all, wash the zucchini and drain, then cut them into two. Then grab a small spoon and scoop out your zucchinis pulp. The Walls of zucchinis should be balanced (your zucchinis shouldn't be too thick or too thin). Then, sprinkle a pinch of salt inside each of zucchines. For the filling; mix your diced onions, rice and cracked wheat (bulgur), 1 Tablespoon tomato paste, lemon juice, minced dill and parsley and 1Teaspoon dried mint, 2 Teaspoons ground black pepper and red pepper flakes in a bowl. Then mix all ingredients well.  Now, time is filling the zucchinis time, stuff the zucchinis with the mixture (in this process be careful, it shouldn't be too tight), you can gently press on the filling while stuffing the zucchinis. Then place your each stuffed zucchinis upright in a large pot. In the meantime, take your normal size tomatoes and slice the tomatoes and put a slice on each stuffed zucchini to cover the filling mixture. Then, diluted 1 Tablespoon tomato paste (or pepper paste) with water and pour it into the pot. Then, pour some water (water level shouldn't cover the zucchini, leave it when the water reaches the middle of zucchinis). Cover the lid on the pot, put it over the lowest heat and cook it for about 40 minutes. You can serve it with some yogurt.

  1. Zucchini receipe wow wow so tastiest feel the taste while reading ji..Adding cracked wheat bulgur with dried mint tomato or pepper paste lemon juice wow so flavoury flavourable.. Boiling in large pot placing zucchini stuff in stand position with less level water so tricky technique..placing those tomato slices and tomato or pepper paste amazing..serving with yoghurt yumm yumm yummy combination healthiest tasty one ji😍😍👌😋😋
