Because, this dessert's taste is realy very very unique and different. Maybe its taste resembles to cookie but no it is really not cookie. And, maybe its taste resembles to tart like crisp tart but unfortunatelly no, it is not a tart. Maybe you think that its taste resembles to cake but our answer is same, no, it is not a cake. Also, this dessert resembles to our special candy "Turkish Delight-Lokum" (it is very soft and unique candy, it is a family of confections based on a gel of starch and sugar) Maybe this dessert covers all of them. Or  we can say that; this dessert is realy being middle of them. We are sure that when we give its recipe, you hurry to go to kitchen and begin to make it right a way. It realy worth it.        This dessert name is "Erzincan Delight (Erzincan Lokumu)" dessert or "Erzincan Turkish Delight (Erzincan Lokumu)" dessert. It is definitely a nationwide favorite in Anatolia (Turkey). It is made for or served for so many daily activities of Turkish people, such as in the afternoon for tea parties. As we mentioned into earlier posts in this blog. Tea parties are very famous and popular among the Turkish women. In Turkey, women often join tea parties with neighbors or relatives. According to us and maybe to many of the Turkish people; "Erzincan Turkish Delight (Erzincan Lokumu)" dessert is Number 1 dessert of these parties. We cook this dessert very often.          Erzincan Turkish Delight (Erzincan Lokumu) comes from Erzincan city. Erzincan city is known all over the Anatolia with its delicious and finger licking meat dishes and desserts.          How to Make "Erzincan Turkish Delight (Erzincan Lokumu)" Dessert?


        We cook this very delicious dessert very often and very much. It is very easy dessert. Its Preparation Time is nearly 10-15 minutes or less. Its cooking time is nearly 30-35 minutes. In this recipe of dessert, butter is realy very important ingredient. We generally use butter (room temperature) for the Erzincan Turkish Delight (Erzincan Lokumu). And, we recommend that butter is better. But, ofcourse, if you want, you can use margarine. Bye the way, let us to explain one issue. If you want to consume your "Erzincan Delight" later, you can put your Erzincan Delight into a jar with a lid. Then, you will keep it up to 15-20 days in refrigerator.          Very good family favourite;

         Ingredients:

       - 250 gr Butter, (room temperature) (it is optional: if you want, you can use margarine instead of butter. But, we recommend that butter is perfect in this recipe),
        - 1 Egg,
        - 2 Tablespoons Yogurt, (Homemade yogurt is always better: Homemade-yogurt-recipe ), 
        - A glass of vegetable oil, (or canola oil),
        - A glass of granulated sugar, 
        - A package of baking powder, (Nearly 10 gr),
        - A package of vanilla extract, (Nearly 5-7 gr), 
        - 3 or 4 Cups of all purpose flour, 
        - For topping: Caster sugar,

         Preparation:

         First of all, put your all ingredients on your work surface (work table). According to us; butter is very important ingredient for this cookie (dessert). Ofcourse, if you want, you can use margarine. But, we recommend that butter, because it makes your cookies very tender and crumbly. Ok! Let's go on the recipe. Firstly, take your room temperature butter and place it in a sauce pan. And melt it under the low heat. Then, transfer it to deep and large bowl. Then, add your 1 glass of vegetable oil (or canola oil) and 1 Glass of granulated sugar. Stir these ingredients very well by your wood spoon or by mixer. After this process, add 1 egg, 2 tablespoons yogurt (we recommend that homemade yogurt, not store bought yogurt), 1 pocket of baking powder and 1 pocket of vanilla extract into butter and sugar mixture, and keep stirring, don't stop. You should mix all of them very well. Now time is flour time. Add your 3 or 4 cups of flour as step by step/little by little (in this recipe, we used 4 cups of flour). we mean that; firstly add your 1/3 or 1/2 cup of flour then start to knead, then add the remaining flour part by part and knead until you reach a very soft dough. Your dough must be harder than the dough of cake, but it must softer than the dough of the cookie. As briefly, you should knead until you reach a dough that doesn't stick to your hands. After these processes, line a baking sheet with parchment paper and brush lightly with butter or vegetable oil (or canola oil) or grease the baking tray/glass baking tray with butter (or vegetable oil, or canola oil) (23-30 or 25-35 cm baking tray). When your dough of Erzincan Delight (Erzincan Lokumu) ready. You should place your Erzincan Delight (Erzincan Lokumu) dough into the baking tray. We mean that; When you get a smooth, fluffy and cotton soft mixture (Erzincan delight dough), place your erzincan dough into the baking tray by using the spatula or by your hands. Please make sure that your mixture is spread to the oven tray evenly. Then, place to bake in preheated oven at 170°C (338°F) for 30-35 minutes (Cook until the your erzincan delight is cooked). Check with a tooth pick. When you dip it in and out of the "Erzincan Delight" and the tooth pick comes out clean; Also surface of dessert turns to pink color. It means that the dessert is cooked. Then, allow to cool in room temperature. Then, using a sharp knife, cut a criss-cross pattern into the your "Erzincan Delight" cookie/pastry. So, you have diamonds or rectangles shapes of Erzincan Delight. Then, take 3 or 4 diamonds or rectangles shapes slices and  transfer to serving plate, then sprinkle the caster sugar over it. It is done. Serve it cool (or room temperature). Our Homemade-turkish-lemonade-recipe goes well with this dessert very much.
