Turkish Semolina Cookies in Syrup


         Turkish Şekerpare Desert (Turkish Soft Cookies in Syrup)

      In this post, we are going to share our another delicious and traditional desert "Şekerpare Desert". Turkish Şekerpare or Turkish Semolina Cookies in Syrup is sweet, and soft and tender cookies are made from basickly; flour, semolina, and yogurt (you may read our homemade-yogurt-recipe-) that are baked until golden brown color and left to heavy and sticky sweet syrup (sherbet). The more syrup your semoliba cookues/sekerpare soak up, the better you get result. Semolina cookies in syrup/Şekerpare should be tender enough to cut and eat with fork.
  
        Semolina Cookies in Syrup/Şekerpare (pron:Shek-EYR par-EH) is the one of the traditional Turkish desert and very popular throughout the country. Turkish people call it şekerpare. It is sugar cookies soaked in heavy syrup and topped with almonds or pistachios or nutmeg powder. Şekerpare is commonly made at home but it can be found in every bakery or patisseries. Turkish Şekerpare Desert

     
         Ingredients:

        For dough (Cookies);

      - 250 gr Unsalted Butter, (Room temperature),
      - 2 Eggs Yolk,
      - 1/3 Cup Semolina,
      - 3 Cups Flour, sifted,
      - 1 Cup Powdered Sugar,
      - 1 Teaspoon Baking Soda, (or 1 Pocket  Baking Powder),
      - 1 Teaspoon Vanilla Extract or powder,

       For Syrup (Sherbet)

     - 3 Cups Granulated Sugar,
     - 4 Cups Water,
     - 2 Tablespoons Lemon Juice,

      For topping;

      - Ground Almond or Ground Pistachios or Nutmeg Powder, (or Pistachios or Almond for the center of the sekerpare),


Şekerpare Desert cook process

          Preparation:

          First of all, lets prepare the syrup (sherbet) of desert; boil the 3 cups of sugar with 4 cups of water until mixture turns to thickens. It takes 3-5 minutes. Then, stir in lemon juice and put aside, let it cool down. Then, mix butter, powdered sugar, egg yolks and semolina. Then, add flour slowly and knead at the same time. Then, add baking soda and vanilla. Knead your dough well. Your dough should be soft and non sticky as cookie dough. Then, cover it with plastic wrap and put aside for about 15 minutes. Then, take walnut size pieces of dough and make egg ball shape using your palms and place on a oven tray. Then. Lightly press on their tops. ( if you want - put on almond on the center of each of şekerpare - we prefer to sprinkle the nutmeg powder when it is served). Before the oven process, brush your all Şekerpares/Semolina Cookies with the rest of the eggs (Yellow part). Then,  Bake at 180°C (350°F) preheat oven until they are golden brown color, approximately 20-25 minutes. Then, with a table spoon, pour warm syrup (must not be warmer than the lukewarm) from the side of the hot (freshly) baked semolina cookies (şekerpare). Please do not pour it on top of the cookies; because, semolina cookies would get mushy. Repeat this process a few times and let them soak with the syrup for about 10 - 15 minutes. Then, with a spatula remove them from the syrup and place on a service plate.
