Turkish Pumpkin Dessert with Tahini (Tahinli Kabak Tatlısı) Recipe
Nowadays, spring season closes to our country as slowly and step by step. However, some part of the Anatolia still get snow and the weather is cold. Last week-end, one of our very close friend visited Antalya city for her business and other one visited Adana city for her business too. Both of our friends ate pumpkin dessert in patiserrie. They said that they had these desserts in patisseries but they were served with sesame sauce. Actually, both of our close friends ate Antalya Style Pumpkin Dessert with Tahini (Sesame Sauce) in those cities. Pumpkin desserts recipes are very famous in Turkey. We and people, who live in Central Anatolia or near to Central Anatolia, generally like and prefer to eat classic pumpkin dessert. But, when you go to Mediterranean state of Anatolia's cities, such as; Antalya, Adana, Mersin cities, you can find pumpkin dessert with tahini (sesame sauce) in the restaurants, patiserries and hotels very much. As we mentioned in earlier posts; Turkey (Anatolian) has different regions and every region has their own version of the meals or sweets like changing some of the ingredients. Like Mediterranean Cuisine, our Anatolian Cuisine is really very rich and unique Cuisine. There are so many meals and sweets in the Anatolian (Turkish ) Cuisine. And, our Cuisine has really a lot of winter dishes as well as it has so many summer (vegetable base foods) dishes, summer meze dishes and desserts. One of them is pumpkin dessert. There are many varieties of pumpkin desserts recipe (Kabak Tatlısı). Forexample:
- To make the Antakya or Hatay Style pumpkin dessert (Kabak Tatlısı) where the slice of pumpkin's outside is hardened and the inside is soft and syrupy. (This style of Pumpkin Dessert -Kabak Tatlısı- is from Antakya city, Gaziantep city and Adana city. And it is called Antakya style pumpkin dessert (Kabak Tatlısı). In this post we are going to share our "Our Antalya Style Pumpkins Dessert with Tahini/Sesame Sauce (Tahinli Kabak Tatlısı)". This Pumpkin Dessert is a very easy to make popular and traditional recipe throughout the Mediterreanean state of Anatolia. It is especially very popular in Antalya, Adana, Aydin cities. "Our Antalya Style Pumpkins Dessert with Tahini/Sesame Sauce (Tahinli Kabak Tatlısı)" is made with only a few ingredients. They are: Pumpkin (or butternut squash or winter squash), sugar, water, tahini/sesame sauce and walnut (if you want, you can use grated coconut. We, generally use it). Shortly, Turkish Pumpkins Dessert with Tahini (Tahinli Kabak Tatlısı) is a dessert made from slow cooked Pumpkin slices coated in tahini and sugar syrup. Preparation and cooking process are not difficult. Bye the way; if you like this dessert more sugary, you can add extra granulated sugar. Because, when you pour tahini -sesame sauce- on dessert, it decrease abit its sugary taste. But it really match this dessert very much. Just try it. Here it is our recipe of Antalya Style Pumpkins Dessert with Tahini/Sesame Sauce (Tahinli Kabak Tatlısı);
Very good family favourite;
Serving: 4 Servings, Preparation Time: 15-20 minutes, Cooking Time: 30-35 minutes, Cuisine: Mediterranean & Anatolian Cuisines,
Ingredients:
- 359-400 gr Peeled Pumpkin cut into large cubes, (cut into thick, chunk slices),
- 2 Cups granulated sugar, (Nearly 150-200 gr),
- 1/2 Cup Tahini (sesame sauce),
- 4-5 Clove, (it is optional, but it adds extra flavour to dessert),
- 125-130 ml water, (if needed - if your pumpkins release their water or juice, you don't need to add extra water),
- 1 Cup Chopped walnuts abd a couple of pinch grated coconut, (To garnish: chopped walnuts and grated coconut),
Preparation:
First of all, put your all ingredients (pumpkin, granulated sugar, tahini / sesame sauce, clove, walnuts, grated coconut and water) on your work surface / work table. Then, peel your Pumpkin, cut it into large cubes (big chunks), and then place your large pumpkin cubes in a wide saucepan and sprinkle the sugar (or layered with the sugar). Then, if you have time, let it sit over night, (but if you don't have time; don't worry! Put your pumpkin cubes the saucepan over low heat right away, because the heat helps your pumpkin release all of its juices). It will release its water (or juice), so you don't need to add extra water when you are cooking it (but if you don't get pumpkin juice, you can use 125-130 ml water). Bye the way, The ratio of Pumpkin to sugar is 1 to 1/2. For example: in this recipe; we used 350 - 400 gr pumpkin and 150-200 gr sugar. The next day, add 4-5 cloves in to the pot and cook on medium heat until the your Pumpkin is soft. This process takes approximately 30 minutes. Let it cool in room temperature and refrigerate it for a while. Then, arrange the Pumpkin pieces on the serving dish and remaining syrup over. Then, garnish with tahini (sesame sauce), walnuts and grated coconut (sometimes, we had the tahini (sesame sauce) mixed with sugar syrup. Then poured it over dessert. Also, we toasted the walnuts and added a dollop of whipped cream on the side). Serve cold.
