Our very close friend's daughter started the gastronomy and culinary art school of the Kocatepe University in Afyon city at last year. Acording to her daughter; "French Sablé Cookies" or "French Butter Diamond Cookies" are the one of the first recipes she learnt and made in pastry school. How to Make Cocoa Diamond Cookies (Elmas Kurabiye)?
First of all, we can say that " Cocoa Diamond Cookies (Elmas Kurabiye)" don't contain a special ingredients, just any ingredients that are used any cookies. And, the name of the cookie is "Diamond" or in Turkish: "Elmas" because the cookie, when rolled in coarse sugar, appears to have been rolled in diamonds. Generally, it is served in the large plate and puts in the middle of the table, like valuable Jewellery. Bye the way, we can say something about the Diamond Cookies (Elmas Kurabiye). According to us; there are a few important points you should pay attention, when preparing the Diamond Cookies (Elmas Kurabiye). Firstly, your butter must be a room temperature. In this recipe, we used both; granulated sugar and caster sugar. For coating: the sugar should be powdered sugar.

Here it is our Diamond Cookies (Elmas Kurabiye) recipe;
Serving: 36 cookies, Preparation Time: 20-25 minutes, Cook Times: 10-15 minutes, Cuisine: Mediterranean & French Cuisines,
Very good family favourite;
Ingredients:
- 2 Cups all purpose flour,
- 125 or 130 gr Unsalted Butter, (Room Temperature), (it is optional; if you want, you can add 1/4 Cup Vegetable oil),
- 1 Large egg, beaten,
- 1/2 Cup caster sugar,
- A pinch of salt or 1/4 Teaspoon of salt,
- 2 Tablespoons Cocoa powder,
- 1 Teaspoon or 5 gr pure vanilla extract,
- 1 heaping Teaspoon or 10 gr baking powder,
For Coating:
- 1/2 Cup Granulated sugar, (coat the cookies with powdered sugar for a crunchy),
For the Top:
- 1/2 Teaspoon Nutella Chocolate for each cookie's top,
- 1 Cup Walnuts, roughly chopped,

Preparation:
First of all, put your all ingredients on your work surface (work table). You know this is very buttery cookie and you will see that there is a relatively high butter in cookie's dough, there is almost as much butter as flour. But, Lots of butter not only means that it is delicious and yummy, it also means the cookies will be very tender and crumbly. The Baked cookies have a perfectly Sandy, and melt in your mouth texture. Lets go on the recipe. Secondly, take a deep and large bowl and add your 125 gr butter and egg in it and mix very well. Then, add caster sugar, cocoa powder, pure vanilla extract, baking powder and mix all of them very well. Now time is flour time. Add your flour as step by step. What do we mean? Yes, we mean that; firstly add your 1/2 cup of flour then start to knead, then add the remaining flour part by part and knead until you reach a dough that doesn't stick to your hands. After these processes, make walnut sized balls dough and gently press (Try to get a cute small diamond shape or Circle shape). Then, take your granulated sugar and roll each cookie in it for the coating process. After that, , with the help of your finger, make a tiny hole on top of the each cookie. Then, place the cookies into oven tray covered with wax paper and bake in a 180°C (350°F) degrees pre-heated oven until tiny cracks appear on top (it takes nearly 10-15 minutes), then, turn off the heat and wait 5 minutes before removing the cookies from the oven. After 5-10 minutes later, fill of your cookies' holes with the Nutella Chocolate and place a piece of walnut on each of cookie's top. Then, you can serve.
