         How to Make Rose Shaped Baklava 


          In this post, we are going to share our "Rose Shaped Baklava Recipe" on the blo. This dessert is really for the syrup or sticky sweet (sherbet) lovers, and it is best served with Turkish Coffee or Black Coffee (Black Kahva). Yes, as we said before; if you love syrup (sherbet) pastry's (layers of phyllo dough filled with nuts pastry) then this is the dessert tray for you. Especialy, This dessert is preferred at the Christmass, Thanksgiving days, Jewish holidays, special dinner parties or Sunday Roasts. You may serve sweet, sticky square of this nuts filled pastry as delight dessert to your special parties.          Rose Baklava gets its name because once you cut and turn the layered pastry pieces onto a oven tray they resemble the Rosebud. Traditionally, Rose Baklavas, like other kinds of Baklavas; such as newspaper baklava and homemade baklava etc, are made basickly with walnut filling but if you dont want walnut filling, you can use almonds or pistachios or use a combination of walnuts, almonds and pistachios. "Rose Baklava" is also very popular in some countries of Europe; such as Greece, Bosnia and Herzegovina and in Australia. But, in Bosnia and Herzegovina and in Australia, it is called "Ruzice - Ruzice Dessert - Ruzice Baklava". Maybe, Ruzice has abit different ingredients, but its taste and flavour is same.

         Here it is our " Rose Baklava Recipe";

         Ingredients:

        Theme: Comfort-food, Serving size: 8-10 servings, Dietary: Vegetarian, Preparation time: 20-30 minutes, Cooking time: 25-30 minutes, Ready in: 45-55 minutes.

         - 4 - 6 Sheets of Phyllo pastry,
         - 80 gr Unsalted Butter, Melted but not hot,
         - 400 - 500 gr or 2 handfuls wallnut, roughly chopped (or Crushed to near paste),
         - 3 Tablespoons Golden Caster Sugar,
         - 2 Tablespoons Ground Cinnamon,

         For the Syrup (Sherbet);

        - 4 - 5 Cups Granulated Sugar,
        - 4 - 5 Cups Water,
        - Half Lemon juice,
        - 4 Tablespoons Rose-water,
Preparation of Rose Shaped Baklava


        Preparation:

        First of all, lets begin to prepare the syrup (sherbet) of dessert. Put all the ingredients for the syrup (sherbet) in a heavy-bottomed saucepan, and add 4 - 5 cups water. Then, syrup mixture (sugar, rose-water and cold water) is cooked for about 30-40 minutes. when the boiling process happened. Your shrup should not be as smooth as water and it should not be as solid as jam. It should be a sticky sweet. Then let it cool. After the this process, take a bowl and combine the walnut, cinnamon and golden caster sugar and set aside. Then, preheat the your oven to 180°C (350°F, gas 4.). Now, time is Preparation of Rose Baklavas. First, cut your phyllo sheets lengthways into pieces approximately 4 - 5 cm deep. And, while you are working on your one piece of phyllo dough, place the rest of the pieces of phyllo dough under a damp. A clean towel or table cloth to prevent your phyllo dough from dying out. Then, place one long strip of your phyllo on your work table, brush it with the melted butter and fill the upper half with some of the mixture (mixture of walnut and golden caster sugar), spreading mixture all the way across the length of the pastry. Then, fold up the bottom half and press it flat and as smooth as possible. Then, brush the top of the fold with more melted butter and roll your phyllo from left to right to form a Rosebud shape. Repeat this process to make all your rosebuds and bake for 20 minutes or until they turn to light golden colour and the pastry is baked. Remove from the oven and immediately pour half the cooled syrup (sherbet) over the hot pastry. And then, allow to cool completely (it takes nearly 30 - 40 minutes).
