         Anatolian (Turkish) kitchen is mostly based on Ottoman kitchen and also continuation of Ottoman kitchen, which in turn borrowed many elements from Middleeastern kitchens, Central Asian kitchens, Greek and Balkan kitchens. Revani as called in Turkey is a delicious semolina based cake that is soaked in syrup. It is very popular, delicious, chewy and yummy dessert in Anatolian (Turkish) kitchen. Also, Revani (or Ravani cake) dessert is very popular and famous in Greek Cuisine.

         Ingredients:

         For the Revani Cake:

         - 3 Eggs, Seperated,
         - 1/2 Cup Granulated Sugar,
         - 1 Teaspoon Vanilla Extract,
         - 3/4 Cup Olive oil,
         - 1 Cup Plain Yogurt, (you may like our: homemade-yogurt-recipe )
         - 1/4 Cup Nutmeg Powder (Coconut Flakes),
         - 1/4 Cup Flour,
         - 1Cup Semoliba,
         - 2 Teaspoons Baking Powder,

         For the Syrup (Sherbet):

         - 2 Cups water,
         - 2 Cups Granulated Sugar,
         - Half or one juice of Lemon,

         For the top:

        - Nutmeg Powder (Coconut Flakes) or  Ground Pistachio or both of them,
Preparation of Revani Dessert


        Preparation:


        First of all, beat your egg yolk with sugar in bowl until it turns to pale and creamy. Then, add vanilla extract, olive oil and yogurt, and mix them well. Then, mix in the combined flour, semolina and baking powder. Preheat the your oven to 180°C (350°F, gas:4). Then, pour the your batter into the prepared dish (cake pan or baking dish) and then, bake for approximately 30 minutes or until it turns to golden brown color. Check your revani cake with a knife or toothpick to make sure the cake is done. They should come out clean. Leave the cake to sit for 5 minutes before cutting into 15 -20 squares. Meanwhile, mix sugar, water and lemon juice in a pot and bring to boil. Set aside to cool. Then, cut your revani cake into 15 - 20 squares and then pour lukewarm syrup on top of revani cake with a scope slowly, waiting the cake to soak it in. Serve nutmeg powder (coconut flakes) or ground pistachio on top. Revani is also good with vanilla ice cream on the side.
