How to Make Apricot Marmalade! 

Our last summer holiday was really very colorful and exciting. We visited many diffetent cities through out the Anatolia (Turkey). One of them was Malatya city. Malatya is a city in Central Eastern Anatolia (Turkey). It has many popular attraction, including Museums, Historical Places (such as Armourer  Mustafa Pasha Caravanserai), natural beauties, shopping centers, bazaars etc. And, Apricot orchards are a trademark of the Malatya city in Eastern Anatolia. Also, according to many experts; Apricots from Malatya city - known as the apricot capital of the world - became the second Turkish product to get an EU designation after Aegean figs. 

Apricots are collected from about 8 million trees in Malatya city. Meeting some 80% of the world's dried apricot production alone. On average, 50 kg of fresh apricot are to per tree are to be produced. Turkey account for nearly 15 percent of the world's production of fresh ones. Most of it is produced in Malatya. Also it is produced in Kayseri, Erzincan and Elazığ cities. We mean that, Kayseri, Erzincan and Elazığ cities' apricots are unique too. Turkey's dried apricot production is between 80 and 90 percent of the world's total and they are mostly produced in Malatya city.

Everyone knows that apricot is rich in fiber and is very useful for the health of the body. It is also strengthens the body's immune system and provides body's daily energy needs. In this post, we are going to share our "Apricot Marmalade (Kayısı Marmelatı) Recipe" with you. We are sure that, when you make this golden quality food in your kitchen. You consume it alot.

We, Turks love and consume dried apricots alot. Malatya "Şire Bazaar" (Dried Apricot Bazaar) is unique with dried apricots that of the best in the world. Malatya apricots can thank their delicious taste to the fertile soil of the province, nourished from the lush Euphrates River. The apricots are sun-dried, without using sulphur in the process, and manufactured in family-run orchards still devoted to traditional methods. Furthermore, Malatya apricots are often marketed ground up into a marzipan-like paste and coated in chocolate. In order to promote the quality of apricots and to encourage local producers to meet each other and the interested buyers, the Malatya Apricot Festival has been held annually for almost 40 years now. Unfortunately, we missed the "Malatya Apricot Festival" in this year. But we visited to Malatya "Şire Bazaar" (Dried Apricot Bazaar) and bought many different healthy and delicious dried apricots. We mostly consume its compote and also consume it as a snack with our tea-breaks. Bye the way, 250 grams of dried apricots has a total of 602.5 calories.

How to Make Apricot Marmalade - Apricot Marmalade vs Jam! 

Apricot Marmalade straight from heaven. Bright, flavourful, very quick and easy apricot mamalade. With fresh taste made in heaven and it is not too sugary. And it is ready in just 30 minutes (or 45 minutes). We made this marmalade in last July. After reading our recipe, we are sure that you want to try this marmalade and you are looking forward to next summer for trying this marmalade. Its preparation process and cooking process aren't difficult. Also it has really very simple ingredients; apricots, lemon juice/lemon salt and sugar. That's it. You can also find our homemade apricot marmalade in online Turkish markets very easily.

Recipe for Apricot Marmalade (Kayısı Marmelatı)!

This wonderfully easy, tasty and healthy apricot marmalade is always better than the store bought jams/marmalades. 

Here it is our yummy homemade apricot Marmalade's recipe; 

Serve: 2 Half pint jars, Preparation Time: 10-15 minutes, Cooking Time: 30-45 minutes, Cuisine: Mediterranean/Anatolian Cuisine, 

Very good family favourite;

Ingredients: 1 kg fresh firm and ripe Apricots,

Ingredients : 2 Cups of granulated sugar - 400 gr-



Fresh apricot marmalade
Ingredients: 1/2 fresh lemon juice or
-2 tablespoons of lemon juice- 


Mediterranean diet
Ingredients : 1/4 teaspoon of lemon salt,

Firstly wash your apricots well,

Then cut them into halved by the knife
and then remove their seeds, 


Fresh apricot marmalade
Then place your apricots in a medium size pot and
then start cooking the apricots on medium heat
 until they become soften, 


Mediterranean diet
This cooking process takes nearly 10 minutes,

Then add sugar over the apricots and stir,

Cook the apricot and sugar mixture for about 30 minutes
 until the your apricots has completely fallen apart. If
mixture needs water, add 1 / 2 or a glass of water and stir,

Then take your blender and blend them until
they become puree,

Then add lemon juice and lemon salt
into the mixture and stir,

Then add vanilla and stir the mixture for a little while
( nearly 5-6 minutes ) and then turn the heat off, 


Fresh apricot marmalade
Then put your marmalade in a clean jar and
close the lid while your marmalade is warm,

Store in a dark and cool place or
store in the refrigerator,

Enjoy! Apricot Marmalade straight from heaven, 


Ingredients:
  • 1 kg fresh firm and ripe Apricots, wash and halved and remove the seeds, 
  • 2 Cups - 400 gr - Granulated sugar, (it depends on your taste, if you want, you can add sugar more than the 400 gr), 
  • 1/2 Piece of fresh squeezed lemon juice, (Nearly 2 Tablespoons of lemon juice), 
  • 1/4 Teaspoon of lemon salt, (couple of pieces of lemon salt), 
  • 1 Teaspoon of vanilla, (nearly 10 gr),
Preparation:

  1. First of all, put your all ingredients on the work surface. Secondly, wash your apricots and cut them into halved by the help of knife and then remove their seeds. Then place your apricots in a medium size pot and then start cooking the apricots on medium heat until they become soften - it takes nearly 10 minutes. (For this marmalade; no need to layer apricots and sugar in a saucepan overnight). 
  2. Then add sugar over the apricots and stir. Cook the apricot and sugar mixture for about 30 minutes until the your apricots has completely fallen apart. If mixture needs water, add 1/2 or a glass of water and stir. If marmalade mixture foams while boiling, remove it with a spoon. 
  3. Then take your blender and blend them until they become puree. Lastly, add lemon juice, lemon salt and vanilla and stir the mixture for a little while (nearly 5-6 minutes) and then turn the heat off. 
  4. Now your apricot marmalade is ready. If you do not want to consume it immediately and want to store it for the winter months, put it in a clean glass jar and close the lid while your marmalade is warm. Then close the lid and let it cool. And then, store in a dark and cool place or store in the refrigerator.

  10. We call them kajsije :) Jam is best from apricots indeed. Why are your apricots so white/greenish? Is that some special sort? I have seen greenish orchard peaches, but not apricots.

    1. Nearly same, we call them "Kayisi". These apricots (mostly greenish - yellowish) for jam/marmalade. Generally dark yellow ones for drying.
