         How to Make Turkish Style Sour Cherry Jam?

           In this post, we are going to share our special "Recipe of Sour Cherry Jam" to you. Sour cherry fruit (in Turkish: vişne) is very common in Turkey, especially you can find it everywhere in summer season. We know that it is not common some part of the world, such as USA, Canada etc. Further more, sour cherries aren't generally sold in stores because they don't transport well.          Cherries or Turkish cherries, regardless of the variety, are low pectin fruits. Sour Cherry Jam is very nice jam but it is abit sour. We have keen on it since we were children. They are also known as tart cherries or pie cherries in Turkey. These bright red beautiful fruit pack the most cherry flavor. Once you add a bit of sugar, you will have a perfect sour cherry jam.          Preparing a sour cherry jam is super easy and its ingredients are very simple (sour cherries, sugar, and lemon juice). We personally love old fashioned sour chery jam without added pectin (sour cherry jam no pectin). It is just how it would have been made in our moms' or grandmothers' days, with a bit of lemon (or lime) juice to add brightness to the fruit flavor, as well as extra sugar (or pectin) to help the jam gel all of its own. Actually, with a little patience, sour cherry jam without pectin will come together and its gel beautifully, and a longer cook time means more intense flavor in the finished sour cherry jam. Turkish sour cherry jam recipes are very famous. Actually, Turkish homemade jam recipes are very unique. We like our sour cherry jams nice and thick. If you are making sour cherry jam without pectin, add the granulated sugar and keep on cooking the jam for another 20 to 30 minutes until the jam reaches its gel stage.          Some of our friends ask that; "do you allow the mixture of the sour cherry jam to cool off before placing it in the jar or pour it still hot?". Here it is the our tip: put a drop of jam on a cold plate (keep it in the freezer while it is cooking), if it is not runny and stays, then it is done.          Ingredients: (in this recipe we used fresh sour cherries)

         - 500 gr Fresh sour cherry, pitted, (Normaly; 1 kg sour cherries equal to nearly 650 gr pitted sour cherries),

        - 500 gr Granulated sugar,

        - Juice of half or 1 lemon, (we often use lemon salt, because it makes jam shiny and also by the help of lemon salt, you can save your sour cherry jam for a long time in your pantry. But in this recipe, we used only lemon juice. Don't worry, because you can get same result both with lemon salt or lemon juice), 

        - 1/2 or 1 Teaspoon butter, (for decreasing foam, when jam boiling),

        Preparation: 

  1. First of all, put your all ingredients on the work surface. Secondly, wash your sour cherries and remove their seeds. Then, layer pitted sour cherries and sugar in a saucepan overnight (your sour cherries release their juice until morning, if not, add water when cooking). 
  2. The following day (morning) place the sour cherries in a medium size pot and add sugar and 1/2 or 1 teaspoon butter (it helps to decrease foam, when your jam boiling). Then, start cooking mixture of sour cherries and sugar on medium heat and stir until the sugar dissolves (melts). If it happens, remove the scum or foam from the surface. Keep cooking the jam mixture. Cook the sour cherry mixture, stirring continuously to avoid boil-overs, for about 20 minutes until the your sour cherries has completely fallen apart. 
  3. Continue cooking the jam until it reaches gel stage, this process takes nearly 25-30 more minutes. Then, add the lemon juice (if you want, you can add lemon salt) 1-2 minutes before you turn the heat off and stir.
  4. Then, Remove the sour cherry pot from the heat and cool for a few minutes, Lastly, pour your strawberry jam carefully into clean glass jars. Close the lid and let it cool. Then, store in a dark and cool place or store in the refrigerator.
  5. You can serve sour cherry jam as an ice cream topping with Turkish homemade baklava dessert.
