Now, time is the quince time here. In Turkish, we call it "Ayva" (prononsiation: eye - va) You can see quince in markets, bazaars and everywhere in Turkey. The quince harvest in Turkey begins in September, and the fruit is available throughout the winter. According to experts; quinces are the very oldest fruit. Some people call quinces the "goddess of love" fruit. We think that they are wholy correct! We love to make jam from them very much. Also, we bake them and make a dessert from them. This is one of our favourite jams for breakfast. Also, Turkish people love quince jam for breakfasts very much. Many of us love this jam folded through buffalo cream, or spread on toasted, thinly sliced Turkish bread with butter. Quince jam recipes are very popular among the Turkish people. In this post, we are going to share our quince jam recipe to you. In Turkish we call it (Ayva Reçeli).  In fact, traditionally Turkish quinces are cooked with sugar and made into a dessert in Turkey we call it "ayva tatlısı" and served with that buffalo cream (in Turkish: kaymak). Also quince Jam is consumed very much by the Turkish people for breakfasts. On the other hand, Persian cuisine has a tradition of meat and quince (sour fruits) cooked together and has many recipes for meat and quince stews. How to Make Turkish Quince Jam (Ayva Reçeli)?

Turkish Quince Jam (Ayva Reçeli) is one of our favourite jams for breakfast. It is so tasty and so yummy! If you are really looking for a simple jam recipe! Look no further! Answer is "Turkish Quince Jam!" 

Recipe of Turkish Quince Jam (Ayva Reçeli) is not complicated and recipe is really so easy and ingredients are so simple. You just need quince, granulated sugar,  water and lemon juice / lemon salt. That's it! Do you want to try another homemade jam: Super-easy-homemade-peach-jam-recipe

If you have never busied with quince so far, you are in for abit of a surprise. Let us to explain it; they are so hard like a rock. When you buy quinces for homemade quince Jam,  choose quince that are firm and fragrant. And give them a week or so on the kitchen counter and they will have much more flavor for the day of the cooking jam. 

When you prepare your jam! Use a sharp knife (and be patient) to peel your quinces, core and chop quince like an apple or grate them. They are so hard that it can be tricky to get the cores out, so be careful. Bye the way, don't get rid of their seeds! Because we use them, when we cook jam. Recipe of Turkish Quince Jam

Turkish quinces are big, so that, we used 3 quinces (ayva) in this recipe. Actually 3 quinces to make 1 kg in Turkey.

Here it is very tasty and yummy breakfast's jam: Quince Jam Recipe;

Very good family favourite;

Serve: 2 or 3 Small Glass jars (Jam Jars), Preparation Time: 15-20 minutes, Cooking Time: 1 or 1,5 Hours, Cuisine: Mediterranean & Anatolian Cuisines,

Ingredients:

  • 2 Small Glass jars, (1 or 1,5 kg quinces enough to fill 5 - 6 250 ml glass jars),
  • 1 kg Quinces, (2-3 quinces), chopped into small cubes or grate them, peel and core the quinces (don't forget to save 5 - 6 quince's seeds for cooking process), 
  • 1 kg Granulated sugar,
  • 1 Lemon, juiced, or 1 Teaspoon lemon salt, (in this recipe we used both of them, especially lemon salt makes your jam shiny and long life, by the help of lemon salt, you can save your for a long time in your pantry),
  • 1/2 or 1 Teaspoon Butter, (for decreasing foam, when your cam boiling),

Preparation:

  1. First of all, put your all ingredients on the work table. Firstly, wash your quinces well. Then, peel and core the quinces (don't forget to couple of seeds set aside). Then chop them into small pieces or grate them (in this recipe, we grated them. Not blend!). 
  2. Then, place in a stainless steel saucepan with the sugar, lemon juice (or lemon salt or both) and 500 ml water, 1 teaspoon butter and mix together well. Bring to the boil,
  3. Then, reduce the heat to a simmer and cook for 45-60 minutes. Please watch out! stirring occasionally with wooden spoon to stop the jam mixture catching on the bottom of the pan. If it starts to catch, reduce the heat.
  4. Then using a woodenspoon, remove a portion of the jam mixture and pour a little onto a cold plate. Allow your jam portion to cool, then check for consistency (When you run your finger through the jam, it should leave a trail in the jam. It is done! If it doesn't, cook your jam mixture a little longer. 
  5. Now your quince jam is ready. And pour the hot jam into sterilised glass jars. Seal and store your quince jam until you are ready to eat or serve at breakfasts.
