What about Apricot? Of course we prepared our delicious apricot jams because of we love it very much. It is realy very special among the homemade jam recipes. In fact, Apricots make the finest jam, they are sweet and very rich and they are perfect for the jam. On the other hand, we can say that Turkey is paradise of apricots. Because, apricot trees grow everywhere of the Anatolia. But, first quality apricots grow in Malatya city and they are very famous through out the Turkey and also they are delivered to many parts of the world. Also, Erzincan, Elazığ and Kayseri cities' apricots are fine too.

Last August, we prepared our apricot jams and in this post; we are going to share our homemade fresh apricot jam recipe to you. Bye the way, we call this delicious jam in Turkish: "Kayısı Reçeli". How to Make Easy Apricot Jam (Kayısı Reçeli)?
As we mentioned above of the post; we are sharing our very special jam to you. Yes, today we are giving our five stars fruit jam to you. It is homemade Apricot jam (Kayısı Reçeli). Is it hard to make jam? This jam, Homemade Apricot jam (Kayısı Reçeli), is so easy and definitely delicious. It is not a complicated recipe. After reading our this recipe, we are sure that you want to try this jam. And, we just say! You should go to greengrocer and buy one kilo or more apricots and make your own apricot jam with only three simple ingredients; apricots, lemon juice/lemon salt and sugar. On the other hand, some of neighbours and friends ask some questions about the jam to us. Here these are questions and their answers;
- what is the reason for leaving apricots and sugar mixture over night? Answer: The sugar gets its taste from the fruit (apricots) which leaves its juice so no need to add water to cook the jam.
- Should the Almonds or seeds of apricot be cooked with the apricots or sprinkle them on top when ready to eat? Answer: The Almonds or seeds of apricot should be added in at the same time with the lemon juice.
- Do we allow the apricot jam to cool off before placing it in the jar or pour it still hot?". Answer: put a drop of jam on a cold plate (keep it in the freezer while it is cooking), if it is not runny and stays, then it is done. If it is not, continue to cook a little bit more. Then, pour it into jar while it is still hot and close the lid.

Ingredients: fresh apricots, sugar and Water. |
Wash apricots well and remove their Seeds |
Layer apricots and sugar in a large Pan over night |
Place the pan over low to medium Heat to dissolve sugar |
A little butter for decreasing foam |
You can use lemon juice or lemon salt Or both of them for shiny jam |
You can add almonds or seeds of Apricots |
Lastly add lemon juice or lemon salt And almonds or seeds of apricots |
If your jam need water, add extra Glass of water |
Recipe of Easy Apricot Jam (Kayısı Reçeli)
Before the give recipe, please! Try to choose small and ripen apricots. Because, they are perfect one for the jam. Here it is our recipe of easy apricot jam (Kayısı Reçeli);
Serve: 3 - 4 Half pin jars, Preparation Time: 15-17 minutes, Cooking Time: 35-40 minutes, Cuisine: Mediterranean/Anatolian Cuisine,
Very good family favourite;
Ingredients:
- 1 kg Fresh firm and ripen apricots, try to choose small ones, wash very well and halved and remove the seeds,
- 2 Tablespoons lemon juice, or 1 teaspoon lemon salt (we often use lemon salt, because it makes your jam shiny and by the help of lemon salt, you can save your apricot jam for a long time in your pantry. But if you want, you can use lemon juice or both of them),
- 1/2 or 1 Teaspoon butter, (for decreasing foam, when your jam boiling),
- 4 Cups Granulated sugar, (nearly 800-900 gr),
- 1 Cup of water,
- 1 Handful Almonds or apricots' seeds, (soak them into the hot water, then peel),
Preparation:
- First of all layer your halved apricots and sugar in a large saucepan and leave overnight, your apricots release their juice until morning. The following day (next morning), place the saucepan over a low to medium heat, and allow the sugar to dissolve slowly. If your jam need water, add extra water in it. Then, take your woden spoon and with the wooden spoon, remove any scum that may have formed on the top of the jam pot. Cook your apricot jam until the mixture reaches jam consistency.
- If your jam doesn't reach the jam consistency, keep cooking the jam mixture. We mean that; continue cooking the jam until it reaches gel stage, this process takes nearly 25-30 more minutes.
- Then, add the lemon juice (if you want, you can add lemon salt as well) and almonds or seeds of apricots boil for about 2-3 more minutes. Then, turn the heat off and stir.
- Then, remove the saucepan from the heat and let it cool for a few seconds. Pour your hot jam carefully into the canning jars and seal. Store in a dark and cool place.
