Turkish Style Orzo with Ground Beef Soup (Kıymalı Şehriye Çorbası) Recipe!
Turkish cuisine includes many different soups eaten with almost every meal. In winter, many Turks eat a breakfast of bread with hot soup. Generally Turkish people think that when they eat soup, they feel beter (their heads and stomachs getting beter). In Turkish, we call soup "çorba" its pronunciation: "Chorba". Soup or "Çorba" is an integral part of the Turkish meal plan. It is always served as a starter to most lunches and dinners – or as a light diet meal on its own – Turks have certainly mastered the art of cooking this local favorite. This is lucky for us, because, we love to both cook and eat soup "çorba".
Everyone cooks orzo soup (or orzo with ground beef soup) whenever she wants. Because this chockfull of veggies and very yummy orzo soup is desired every season; winter to summer, spring to fall. Also, lentil soup is very popular among the Turkish people too. If you are looking for an easy, comforting, weeknight recipe, orzo soup is a really good option. We mostly cook orzo with ground beef soup. Because, our household prefer it more than the other orzo soup recipes.

Our Grandma's Favourite Delicious Soup!
According to historians; a bowl of 4000 year old vermicelli (orzo) soup was found in Yellow river (Huang Ho) in China. Most historians agree that vermicelli originated from China. Also it is known as a first noodle soup or noodle dish.
When we were kids, our grandmothers cook orzo soup too often. But they weren't cooking it always in the same way. The basis was the same, but the soup could be diversified according to the ingredients at home at that moment. This is the reason we have so many orzo soup recipes.
Our orzo soup recipe is the most basic one. Chicken orzo (or vermicelli) soup and orzo soup with liver are two of our grandmother's varieties. Another is orzo soup with ground meat. Actually, we cook orzo soup or orzo soup with ground meat alot during the year.

How to Make Turkish Style Orzo with Ground Beef Soup!
In this post, we are going to share our "Orzo with Ground Beef Soup recipe" with you. This recipe is really very simple and easy. If you are looking for an easy, comforting, weeknight recipe, orzo soup is a really perfect option. We cook this soup alot during the year. Also its preparation is not complicated. You just gather the ingredients and cook it. We never use onion for this soup, but if you want, you can use it. Also, vegan consumers use only orzo, tomato paste, spicies and olive oil or sun flower oil for this soup. In this recipe, we used butter and sunflower oil. We always use lean ground beef in this soup recipe. In order for your soup not to be oily and heavy, it is useful to choose lean ground beef.

Very good family favourite;
Serve: 5-6 servings, Preparation Time: 10 minutes, Cooking Time: 20 minutes, Cuisine: Mediterranean & Anatolian Cuisines,
Ingredients: 1/2 Cup of orzo, |
Ingredients: 100-150 gr lean ground beef, |
Ingredients: 1/2 tablespoon of tomato paste and pepper paste, |
Ingredients: 1 tablespoon of butter and sunflower oil, |
Ingredients: 5-6 cups of hot water, |
Ingredients: 1/2 teaspoon of salt, ground black pepper and red flakes pepper to taste, |
Firstly heat the butter and sunflower oil in a pan and then add the ground beef and stir, |
Stir and fry the mixture until all the water is evorated, |
Then add tomato paste and pepper paste into mixture and stir, |
Stir and fry mixture until it smells good, |
Then add 5 or 6 cups of hot water and stir, |
Then add orzo pasta in it and stir well, |
Then add 1/2 teaspoon of red flakes pepper in it and mix well, |
Then add 1/2 teaspoon of ground black pepper in it and mix well, |
Then add 1/2 teaspoon of salt in it and mix well, |
Then remove it from heat (after 20 minutes cooking) and serve, |
Serve warm with croutons. When we eat this soup, we add 1/4 teaspoon of lemon juice, |
- 1/2 or nearly 1 cup of orzo,
- 100-150 gr lean ground beef,
- 1/2 Tablespoon of tomato paste, (if you want, you can add a chopped tomatoes in it),
- 1/2 Tablespoon of pepper paste,
- 1 Tablespoon of butter,
- 1 Tablespoon of sunflower oil,
- 5-6 cups of hot water,
- 1/2 Teaspoon of salt to taste,
- 1/2 Teaspoon of ground black pepper to taste,
- 1/2 Teaspoon red flakes pepper to taste,
Preparation:
- First of all, put your all ingredients on your kitchen container. Then, heat the butter and sunflower oil in a large pan and then add the ground beef and stir fry until all the water is evaporated.
- Then add tomato paste and pepper paste into ground beef mixture and stir fry until it smells good. Then add 5 or 6 cups of hot water and orzo and stir well. Stirring frequently, cook until the orzo is soft, with the lid ajar. If necessary, add 1 more cup of water (take into account that the orzo will swell and increase as they wait).
- Then add salt, ground black pepper and red flakes pepper and mix them well and then remove it from heat (after 20 minutes cooking).
- Serve warm with croutons (Croutons go well with this soup). Also, we always add 1/4 teaspoon of lemon juice, while eating this soup.

We also say chorba for soup here :) We don't have orzo in our shops, but we have little ball shaped pasta called 'tarana' which we prepare in tomato sauce.
