Turkish Tomato Soup Recipe (Domates Çorbası)
We, Turks, traditionally love soups very much and we cook them alot during the year. Actually, we cook and consume soups everyday. In Turkish, we call soup "çorba" its pronunciation: "Chorba". Soup or ‘çorba’ is an integral part of the Turkish meal plan. It is always served as a starter to most lunches and dinners – or as a light diet meal on its own – Turks have certainly mastered the art of cooking this local favorite. This is lucky for us, because, we love to both cook and eat soup "çorba".
In this post we are going to share our very delicious soup "Homemade Creamy Tomato Soup Recipe" with you. We especially have loved this simple but fresh flavours of Turkish tomato soup since we were kids. We consume this light-bodied soup a lot during the year.
Like other soups, tomato soup is healthy, makes you feel full and moreover, is easy to make. But there is another reason that can tempt you to add this healthy dish to your diet: it helps weight loss! According to experts, eating a bowl of this low-calorie soup before your meal helps to cut down calories and helps weight loss. Also a bowl of warm tomato soup can make you feel full so you aren't tempted to overeat and this soup contains important vitamins and antioxidants that can hesten the healing process.

How to Make Homemade Creamy Tomato Soup!
In this post, we are going to share our "Garden fresh tomato soup recipe" with you. This recipe is really very simple and easy. We cook this soup alot during the year but August or September's soups are really different. Especially, these months' tomatoes make this soup tastiest. Also, many friends of us think that this soup is the perfect rainy-weather meal. Bye the way, there are many different recipes of tomato soup in Anatolia (Turkey). But main ingredients are tomatoes, all purpose flour, olive oil, butter, garlic, ground black pepper and red pepper flakes. We love to top this soup off with shredded pale yellow cheese / mozzarella cheese (we call it Kaşar peyniri) or shredded some poached chicken. We generally sprinkle the red pepper flakes on top of the soup and small pieces of crunchy bread goes well with this soup. It could also be served as a cold, or room temperature in summer times.
To make the tastiest creamy tomato soup you will ever experience wait until the tomatoes are at their most ripe and juicy time, around September month (or maybe you can find them at end of the August ). Our Çanakkale city's or Ayaş town's tomatoes are perfect for this soup.

Recipe for Homemade Creamy Tomato Soup!
Our moms soup recipes are very unique and we love all of them. This soup's recipe comes from our moms recipe book and it is our favorite soup of all time. We hope that you enjoyed this unique Turkish tomato soup recipe. Here it is our "Homemade Creamy Tomato Soup Recipe";
Very good family favourite;
Serving: 4 servings, Preparation Time: 20 minutes, Cooking Time: 30 or 35 minutes, Cuisine: Anatoluan & Mediterranean Cuisines,

Ingredients: 4-5 Large delicious and juicy tomatoes |
|
Ingredients: all purpose flour |
|
Ingredients: a cup of milk |
|
Ingredients: butter and extra virgin olive oil |
|
Ingredients: garlic, sugar and water (or chicken/meat stock) |
|
Ingredients: a pinch of salt, ground black pepper and Red pepper flakes |
|
Ingredients: For Topping: A pinch of red pepper flakes and Grated feta cheese |
|
Firstly wash your tomatoes well, then peel their skins |
|
Then grate your all tomatoes |
|
Delicious and juicy tomatoes is perfect for this soup |
|
Then grate your garlic into bowl |
|
Then in a pot, add butter and extra virgin olive oil and let melt |
|
This process takes 2-3 minutes or until butter smells come |
|
Then add the flour into pot and stir slowly until the color changes |
|
After the color changes, It begins smell good! |
|
Then pour the tomato purée into flour mixture |
|
Stir the mixture of tomato and flour, a few minutes later Butter and tomato's beautiful smell comes |
|
Meanwhile add garlic, sugar and milk into mixture and stir |
|
Then add a pinch of salt, ground black pepper and red pepper flakes to taste |
|
Then add water (or chicken/meat stock) into soup mixture and cook. After the cooking process blend your tomato soup |
|
For topping: sprinkle the grated feta cheese (or mozzarella cheese) top of the soup |
|
For topping: sprinkle a pinch of red pepper flakes top of the soup |
- 4 or 5 Large tomatoes, grated, (we used our Çanakkale city's tomatoes),
- 2 or 3 Tablespoons unbleached all purpose flour,
- 1 Cup of milk,
- 2 Tablespoons butter,
- 2 Tablespoons extra virgin olive oil,
- 1 or 2 Cloves of garlic, grated,
- 1 or 2 Cubes sugar,
- A Pinch of salt, ground black pepper and red pepper flakes to taste,
- 2 or 3 cups of water (or chicken or meat stock),
For Topping:
- 1 Tablespoon shredded pale yellow cheese / mozzarella cheese or shredded some poached chicken for each serving plate,
- A pinch of red pepper flakes for each serving plate,
Preparation:
- First of all, put your all ingredients on the work-table. Secondly, wash your tomatoes well and peel their skins then cut the tomatoes in half and then grate all of them. Meanwhile, smash or grate your garlic into small plastic bowl.
- Then in a pot, add the butter and extra virgin olive oil and let melt. Then add the flour into pot and stir slowly until the color changes into a caramel and it begins to smell good.
- Then put the grated tomatoes, milk, sugar cube and garlic into flour mixture and stir. Then season with salt, ground pepper and red pepper flakes and stir mixture. Cook mixture about 15 minutes or until the tomatoes are cooked and you can smell the butter and tomato (you will smell it. It is really so lovely).
- Then add water (or chicken or meat stock) to the pot with the tomatoes mixture and bring to the boil. Simmer uncovered for 10-15 minutes.
- Then transfer to the pot with the tomatoes mixture into blender. And blend all ingredients until the desired consistency of Turkish tomato soup is achieved. (add more boiling water if you find it too thick).
- For topping: sprinkle shredded pale yellow cheese / mozzarella cheese (or shredded some poached chicken) and a pinch of red pepper fkakes on top of the each serving plate.
- Serve with small pieces of crunchy bread.
