Furthermore, it is realy very well known by the most of Turkish people through out the Anatolia too. This unique and yummy Soup's name is "Chicken Soup with Batter (dough) (in Turkish, we called it Arabaşı Çorbası)". Chicken Soup with Batter (dough) (Arabaşı Çorbası) is a very unique Central - Anatolian spices (or peppery) soup made with a very special paste (batter). We are sure that; Anyone, once taste this soup, he/she becomes addictive to it.          As we mentioned above of the this post; this is very unique and traditional dish and it is from the Central Anatolia region (Turkey). It is a soup prepared on special occasions of the winter season. When the icy and snowy weathers come, this Soup's time starts. It is cooked usually in special days such as New year eve or special friendship mettings/parties. Christian People who live in Turkey and Middle East consume this unique soup very much. Especialy, This dish is very popular and very prefered for the New year eve by them. In Konya city's town (Ereğli town), Quail Soup with Batter/Dough (Arabaşı Çorbası) is very famous. They use quail instead of chicken into soup. There are so many restaurants and patisseries that you can find "Arabaşı Çorbası", when the midnight time comes".

         If we want to describe this delicious soup, we can say that; as shortly, the combination of cold batter (dough) and hot spicy soup. Bye the way, batter (dough) must be icy cold and chicken soup must be very very hot and spicy. Nowadays, people who cook dough of "Chicken Soup with Batter-Arabaşı Çorbası" leave it to cool in fridge or in a cool place. But, formerly, people preferred that to leave it cool on the snow/snowy ground. In the rural regions and villages of the Anatolia, the batter (dough) is served on a serving dish and the soup in a large bowl called "çorba tası". For preparing this soup, we mostly use chicken's meat. But, if you want, you can use meat of Turkey or Goose and Duck. Our traditional this delicious dish is the combination of cold batter (dough) and hot spicy soup and it has a really very very interesting "Eating Ritual". Firstly, a spoon full of cooked cold batter (bite size dough) is taken along with each spoon of soup. When we prepare our unique "Arabaşı Çorbası" soup, firstly, we prepare its batter (Dough) and cook it, then leave it to cool. After this process, we cook the soup. Here it is our recipe of "Chicken Soup with Batter/Dough (Arabası Çorbası)";

Arabaşı Çorbası Soup Cooking process

         Ingredients:

         For Soup;


        - 1,5 or 2,5 kg A small chicken, -boiled and torn into pieces- (or if you want, you can use only chicken breast and 3-4 drumsticks), (or if you want, you can use other meats),
        - 3 Tablespoons all purpose flour,
        - 2 Tablespoons tomato paste or pepper paste, (or both of them),
       - 1 Teaspoon Red pepper flakes, (if you want, you can increase the measurement of Red pepper flakes),
       - 1 Tablespoon black ground pepper,
       - 1 Teaspoon salt to taste,
       - Juice of half lemon,
       -50-60 ml olive oil,
       - 1 Tablespoon Butter, (nearly 5-10 gr),
       - 2 Liters water,

       For the Batter (Dough);

       - 2 liters water,
       - 2 Cups all purpose flour, (Nearly 300-350 gr),
       - 2 Teaspoons Salt, 

        Preparation of Soup:


        First of all, we should bring to boil of our chicken. So, put your chicken in the saucepan, then pour 2-2,5 liters of water on it, bring to boil and let it simmer for 30-35 minutes. Take your chicken out of the saucepan and let it cool aside. Please keep its water, because you will use it. When your chicken is cooled enough for you to handle it, discard the skins, pull small pieces apart from the breast and drumsticks (if you used whole chicken, still use only its breast and drumsticks). After these processes, place the olive oil and butter in another sauce pan and add the 3 tablespoons of flour and stir fry for approximately 3-4 minutes until it turns yellow/yelowish and then add the tomato paste (or pepper paste). Then, add your chicken meat, chicken stock, salt and the remaining water and stir until it comes to boil. Let it boil for 6-7 minutes and sprinkle in the red pepper flakes and ground black pepper, add the lemon juice and turn off the heat when it comes to boil once more.

Preparation Batter (Dough) of Soup


         Preparation of Batter (Dough):


         First of all, Place 2 cups of flour and 2 teaspoons of salt in a sauce pan. Then, bring the water boil. After these processes, add your hot water to the sauce pan, while rapidly stirring the flour paste. Cook this mixture for 15-20 minutes. Then, wash your oven tray but do not wipe. It should stay wet. Then, pour the cooked dough (flour - water mixture) all into tray. Leave it to cool in fridge or in a cool place (or if it is possible, leave it to cool on snow/snowy ground). When your batter cooled, cut into 2 cm. squares (bite size squares). 
Serve with the side dish of dough pastry.
