How to make Turkish Style Celery Root with Walnuts in Garlic-Yogurt Salad
In this recipe the ingredients are so little (minimal) but its taste and flavor are legendary. This salad really goes great with the grilled meats and seafoods and it is perfect option for the dinners, because it is fingerlickingly delicious and hearty. Even you can eat it as a light and hearty lunch dish.
Its recipe is really very easy and not complicated. You just mix the ingredients into large bowl or salad plate and drizzle the extra virgin olive oil on top. That is it. Also, there is no cooking process for this recipe.
Maybe, you ask that How to select celery and store it? We generally use its root part for cooking dish or preparing its salad, but its leaves are important too. When you go to market or bazaar for buying celery; choose it that looks crisp and snap easily when pulled apart. It should be relatively tight and compact and not have stalks that splay out. Its leaves should be pale to bright green incolor and free from yellow or brown patche. You can save it as raw in the vegetables part of refrigerator for a week.
When you prepare this salad; the hardest part of coping with celery is peeling it! It looks such a hard work because of its root is very tough to crack but don't worry about it, actually with a sharp knife, it is a task soon done. Also, you have to be quick once it is peeled as it discolors. So, if you have your yogurt mixture ready in a bowl, all mixed and ready to go so you can quickly combine it with the grated celery, rest assured, this won’t happen.
Also, for this recipe; Instead of using regular yogurt, try strained yogurt (in Turkish, we call it: Süzme Yoğurt). This has a much thicker consistency so doesn’t lose so much liquid if this side dish (in Turkish, we call it: Meze) isn’t to be eaten immediately. Adding some grated (or crushed) garlic is a good idea for the extra flavour. And adding the grated sour apple, chopped dill and the roughly chopped walnuts make your salad amazing.

Mix Strained yogurt, homemade yogurt and grated garlic |
Then add mayannoise and mix them |
Grate your celery and add it to yogurt mixture right away |

Grate your sour apples |
Then add grated apples into cekery - yogurt mixture |
Then add extra virgin olive oil into mixture |

Here it is our "Turkish Style Celery Root with Walnuts in Garlic-Yogurt Salad" recipe;
Very good family favourite;
Serve: 8 Servings, Preparation Time: 7-10 minutes, Cooking Time: No Cooking time, Cuisine: Mediterranean & Anatolian Cuisines,
- 2 Celery roots, 1 big, 1 small, peeled and grated,
- 1 or 2 Sour apples, peeled and grated,
- 2 Cups Strained yogurt (nearly 400 gr),
- 2 Heaped tablespoons regular yogurt, (homemade yogurt),
- 1 Tablespoon mayonnaise,
- 2 Tablespoons extra virgin olive oil for salad mixture,
- 1 Tablespoon extra virgin olive oil for drizzling top of the salad,
- 4-6 cloves garlic, grated or crushed,
- A pinch of salt to taste,
- A handful walnuts, roughly chopped (if you want, you can blend them), reserving some whole ones for garnish,
- 1/4 Bunch of Dill sprigs, chopped, (optional),
Preparation:
- First of all, put your all ingredients on the work table. Then, place your strained yogurt in a bowl and stir vigorously so that it loses its stiffness and becomes smoother. Then add your regular yogurt, extra virgin olive oil and mayonnaise, stirring well, and then add the grated garlic and salt. Mix all well and set yogurt mixture aside.
- Then, take your peeling celery roots and grate them. Don't wait! take your grated celery roots and add to the yogurt mixture right a way. Then grate your sour apples and add into mixture. Then add your chopped dill and roughly chopped walnuts in it. Stir until it is well combined.
- Then, arrange your salad on a low serving dish, decorate with a few whole walnuts and drizzling the extra virgin olive oil over it. You can serve it.
- If your salad is not using immediately, cover with clingfilm and place in the fridge (you can save your salad for 3 days in refrigerator). When ready to serve, remove from the fridge. Garnish with the walnuts and extra virgin olive oil and serve it.
