 How to Make Mediterranean Orzo Chicken Salad?  


         Today, we are going to share our very colorful salad to you. It is Mediterranean Orzo Chicken Salad. It is very colorful, cool, light and healthy salad. This cool and light salad is the perfect dish for a special summer lunch (luncheon) or brunch.          Recipe is very simple and not diffucult. Shortly, this orzo and chicken salad is packed with an assortment of chopped fresh vegetables/herbs and tossed with a tangy lemon dressing. whole wheat orzo, a rice shaped pasta, works perfectly with chicken and crunchy vegetables/herbs. We are sure that when you try it one time. You often prepare this salad during the hot summer days. Even you make it in winter too. It is very refreshing for a picnic or just dinner at home. Very light, Colorful and Healthy Salad

        Recipe Turkish Style Chicken Orzo Salad (Arpa Şehriyeli Tavuk Salatası)


         Especially, in summer times, and on hot days, we pull out this recipe for a cool supper. This salad requires minimal cooking and it is really satisfying. This salad tastes so fresh and light. According to scientists; it offers healthy aging, healthy immunity, heart healthy, low calorie, low Sodium to person.          Serve: 4 - 6 servings, Preparation Time: 10-15 minutes, Cooking Time: 30-40 minutes (for cooked chicken and oven baked capia peppers), Cuisine: Mediterranean/Anatolian Cuisine, 

         Very good family favourite;

         Ingredients: 

    - 4 Water Glass (nearly 400 gr) Whole wheat Orzo, cooked and drained, 
      - 2 Skinlless and boneless chicken breasts, halved,
      - 3 Tablespoons extra virgin olive oil, 
      - Tinned Sweetcorn,
      - 1/2 Teaspoon salt to taste,
   - 1/2 Teaspoon Ground black pepper to taste, (if you want, you can add different spicies into salad),
      - 1/2 Teaspoon Red pepper flakes to taste,
   - 1 or 2 Cucumbers, chopped, (it is optional, in this recipe we didn't use it), 
     - 1 Normal size tomatoes, chopped, (it is optional, in this recipe we didn't use it), 
      - 1 Normal size onion, chopped, 
   - 2 Capia peppers, oven baked, peeled, seeds removed and chopped,
       - 2 or 3 Tablespoons Lemon juice, 
       - 2 or 3 Tablespoons Pomegranate Syrup,
       - 1 Clove garlic, grated, 
       - 1/4 Bunch of Parsley, chopped,
       - 1/4 Bunch of fresh mint, chopped, 
       - 1/4 Bunch of dill, choped, 
       - 1/4 Bunch of green onion, chopped, 

       Preparation: 

  1. First of all, put your all ingredients on your work surface. Then, put 2 or 3 glasses of water in a pot until it covers your chicken breasts. Then, let it boiling. Cook your chicken breasts on medium heat until they are cooked. Then, take your cooked chicken breasts out of the pot and set aside, let them cooling. After that; cut your chicken meat into small pieces. Bye the way, don't use water of chicken (chicken broth) to another meal, because we use it for this salad later. 
  2. Meanwhile, put your water of chicken breasts (chicken broth) in a saucepan. And bring a quarter of water of chicken to a boil in a medium saucepan over high heat. Then, add your whole wheat orzo and cook for 8-10 minutes (or Cook your whole wheat orzo according to package directions ). Drain well and transfer to a large bowl.
  3. Then, Cook your Capia peppers in Preheated oven at 200°C (nearly 392°F) for 20 minutes. And, put aside your Capia peppers and let them cooling for a while. Then, peel and cut them into small pieces. 
  4. Then add chopped Capia peppers, garlic, onion, lemon juice, tinned sweet corn, salt, ground black pepper, red pepper flakes and extra virgin olive oil on to whole wheat orzo in a large bowl. Stir to combine. 
  5. Then, place your small pieces of chicken top of the orzo mixture and combine them. Lastly, sprinkle the chopped dill, fresh mint and parsley on top and sprinkle the pomegranate syrup on top and stir. 
  6. Your colorful yummy salad is ready. Divide it onto 4 plates and serve.
