         Turkish Style Pickled White Cabbage (Lahana Turşusu) Recipe


       Turkish People love pickle (Turşu) very much. We can say that pickle is very famous and very popular among to people, and Turkish Pickle (Turşu) is an integral staple of our Anatolian (Turkish) Cuisine. We call it "Turşu". Turşu is the name given to sour pickled vegetables or fruits, such as cucumber, snake cucumber, green pepper, cabbage, cauliflower, unripmellon, green tomato, carrot, banana, orange, apple and more. This way of conserving vegetables and fruits is an old tradition that is still made by the many Turkish families at homes. According to the Turkish People, a meal without Turkish Pickles (Turşu) is not complete. Especially, we consume it in winter days very much. But, in fact, we consume pickles throughout the 365 days.          Nowadays, Turkish Pickle (Turşu) or Juice of Turkish Pickle (Turşu Suyu), yogurt and yogurt base foods (such as Turkish Salty Yogurt Drink/Ayran, Yogurt and cucumbers dip/cacık, purslane sakad with yogurt/Yoğurtlu semizotu salatası) are consumed very much in the Turkey. Because, they are immune system Booster. Yes, immune system support is an important issue and these foods support a healthy immune system. Actually, many experts advise that foods in your diet that naturally contain probiotic microbes, such as pickles and yogurt, are one way to support a healthy immune system.          How to Make Turkish Style Pickled White Cabbage (Lahana Turşusu)?


       When you ask that "What is the best time for Turkish Pickle (Turşu)?" Our answer is cool or cold times. Yes, winter is the really good and ideal time for homemade Turkish Pickle (Turşu) as the temperature is perfect for the process of giving vegetables or fruits their long-life and sour taste. It doesn't, however mean that it is only available in that times. Turkish pickles (Turşu) is sold in supermarkets, groceries and bazaars all-year-round. Also, it is served in restaurants all-year-round too. Large cities like istanbul, Ankara, Izmir, Bursa, Antalya etc. even have special Turkish Pickle (Turşu) shops, selling dozens of varieties of Turkish Pickle (Turşu).

       Generally, November is our month for the fermenting cabbage pickle and other pickles. But, this year, like most of our neighbours and friends, our pickles have finished very fast. Hence, we decided to prepare new cabbage pickle.  

         There are a lot of ways of making Turkish Pickle (Turşu) and every family has its own secret ingredients. Below is a step-by-step our way of making pickle (Turşu), taken from our moms!

         Important Things About the Making Turkish Pickle 


        - "Rock Salt, Vinegar and Garlic" are very important ingredients of Turkish Pickles. Also, lemon juice is important and very effective ingredient for the making Pickles, we use all of them.
        - Make sure the vegetables (and fruits) are small sized, and they need to be firm and healty at the time of use,
         - Vinegar is very important ingredient, so that you should use good quality vinegar, 
      - Dont forget to use chickpeas! Becayse they are very important for the fermentation process.
        - Water of Pickles or juice of pickles should be prepared in the steel or aluminum pots or teflon pot.

         So, here it is our Turkish Style Pickled White Cabbage (Lahana Turşusu) Recipe;

         Recipe of Turkish Style Pickled White Cabbage (Lahana Turşusu)


         Very good family favourite;

         Ingredients:

      - 1 or 2 large, glass jar of about 4 or 5 litres, (if you want you can use plastic, it is acceptable, but do not use metal)
        - 1000 gr White cabbage, roughly chopped,
        - 1 Medium size carrot, sliced, it is optional (we didn't use it in this recipe)
       - A handful dried chickpeas, enough to cover the bottom of the jar, Chickpeas assist the fermentation process and absorb impurities that would otherwise make the juice cloudy.

         For the Pickling Liquid:
        - 2 or 2 5 litres water, 
        - 1 Cup Vinegar -Vinegar of grape-, (nearly 1liter of vinegar per jar),
        - 1 or 2 Tablespoons Rock salt,  
        - 1 Teaspoon Red flakes pepper, 
        - 10-12 Garlic cloves, coarsely mashed with salt,
        - Half lemon sliced, (it is optional, but we often use it),

Cook chopped cabbage for about 3-4 minutes

Lahana turşusu 

         Preparation:

      First of all, clean your jar well, preferably with boiled water. Then, put your all ingredients of pickle on your work surface. Then, cook your roughly chopped cabbage for about couple of minutes (3-4 minutes), drain. Then, take your jar of pickle and cover the bottom of the jar with a layer of chickpeas (Because, chickpeas assist the fermentation process and absorb impurities that would otherwise make the juice cloudy).Then, layer the cabbage into the large clean glass jar (or jars). If you use carrot, put a few slices of carrot between the layers (we didn't use carrot in this recipe). Then, bring the boil water, vinegar of grape, rock salt, red flakes pepper and garlic for about couple of minutes (4-5 minutes) into the large pot. Turn the heat off. Then, put this water aside to become tepit. Now, cover the cabbages with this water. You can pour out the remaining water. Tightly cover the jar. Keep it cool and humid place for about 10 to 15 days. It is done, you may serve.

        Turkish Pickle (Turşu) goes well with "meat dishes" and "Buttered rice (pilaf), chickpeas dish".
