         Last week, especially central Anatolia that where we live in, and lots of other places in Turkey, were very cold. We got very icy winds and cold days/nights. But, there was no rain and snow yet. On the other hand, we are sure that rainy and snowy weather comes very soon. Because, winter times beginning. When the cold and snowy of winter days come, Turkish people want and prefer to our winter warming comfort foods. Fortunately, Anatolian (Turkish) Cuisine isn't all just summer (vegetable base foods) dishes and summer meze dishes. Because, our Cuisine has lost of winter dishes. Plus, sometimes, our winter dishes are prefered more than the summer dishes. We call them "Tencere yemekleri", "Güveç yemekleri". They are stews and casseroles that are great for icy and colder winter days when you need something warm and wholesome inside you. Especially, legumes base meals, meat base meals,  rice (pilaf) and cracked wheat (bulgur pilaf) meals are very popular meals of winter. You like our  Turkish-navy-bean-salad-piyaz-recipe   

         As already mentioned before on the blog. Mediterranean Cuisine is one of the oldiest cuisine in the world. And, Anatolian Cuisine is one of the oldiest cuisine in the world too. Plus, Anatolian Cuisine is one of the most appetizing and rich cuisines of the world. Legumes are very common in Anatolian Cuisine. One of them is chickpeas or garbanzo beans. Chickpeas or Garbanzo beans (in Turkish: Nohut, pronunciation: noh-HOOT) are very popular among the Turkish people. In this post, we are sharing our very yummy, delicious and comfort dish. Its name is "Chickpeas (Garbanzo Beans) with Beef Stew Dish". Yes, this dish is very comfort food. When you eat this dish as lunch or dinner, it really makes you less eat for a long time.

Very Comfort Food Etli Nohut

         This dish (Chickpeas (Garbanzo Beans) with Beef Stew) is one of the cornerstones of Turkish Home cooking. It is similar to the indian "Chan Masala" dish, the main difference being the meat cubes cooked with the chickpeas (Garbanzo Beans) in the Turkish version. This meal does not have any of the spices put in the indian version either. 

         How to Make "Turkish Chickpeas (Garbanzo Beans) with Beef Stew Dish"?


       Today, we are going to share our Chickpeas with Beef Stew (Etli Nohut) Recipe. Because, Turkish chickpeas with beef stew (Etli Nohut) is one of the easiest and delicious meals of the Anatolian Cuisine. Garbanzo beans or Chickpeas with meat is a very traditional and common dish in Turkey, especially when it is served with pilaf and pickles. Turkish people love this dish very much. 

         Bye the way, some of our relatives, friends or neighbours cook this meal. They use can of Garbanzo beans (chickpeas). But, we don't like and use can of Garbanzo beans (chickpeas). We prefer using organic dry Garbanzo beans; they absolutely taste better than Cannes ones. Also, Turkey origin chickpeas (Garbanzo beans) are realy very unique. We cook them for 10-15 minutes in a pressure cooker. You can also soak them in water overnight and then boil for an hour or two before you start cooking.  This Chickpeas with Beef Stew and our Red-lentil-soup  or  First-istant-soup-tarhana and our  Turkish-shepherd-salad are such a beautiful lunch option.

         Recipe of Turkish Chickpeas (Garbanzo Beans) with Beef Stew Dish

         Here it is our recipe of Turkish Chickpeas (Garbanzo Beans) with Beef Stew Dish; 
Ingredients:

       Serving: 4 Servings, Preparing Time: 20 minutes, Cooking Time: 40-50 minutes, Cuisine: Mediterranean & Anatolian Cuisine, 

         Ingredients:

        - 2 Cups chickpeas (Garbanzo beans), soaked in water overnight,
        - 500-600 gr Beef/Lamb or Mutton meat, (chopped roughly, or cut into 1,5 cm (1/2 inch) cubes or cut into bigger than the 1,5 cm (1/2 inch) cubes. - in this recipe, we prefer big pieces of meat)   
        - 2 Normal size onions, diced,
        - 2 Cloves Garlic, diced, (it is optional)
        - 2 Tablespoons Olive oil, (It is optional, if you want, you can use vegetable oil, Corn oil or butter),
         - 1 Tablespoon Tomato paste or Pepper paste, (or 1/2 Tablespoon tomato paste and 1/2 Tablespoon pepper paste) (or if you want, you can use fresh tomato and 2 grated Fresh tomatoes are enough)
          - Half or 1 Teaspoon Red pepper flakes to taste,
          -  Half or 1 Teaspoon Ground Black pepper to taste, 
          - Half or 1 Teaspoon to taste,
          - 2-3 Cups hot water,

Cooking Garbanzo beans with Meat Stew Dish


          Preparation:


          First of all, wash your chickpeas (Garbanzo beans) and place them in a pot and cover with water. Then, leave them in a water overnight or for at least 12-15 hours. The next day, take your chickpeas in pot, and if needed, add extra water to cover them, and set the heat to low and bring the pot to a boil. Shortly, cook your chickpeas with the same water till chickpeas get soft low heat. When they are soft, add half or 1 teaspoon salt to taste. And set aside. After this process, put your oil in an another pot and sauté the onions and garlic in olive oil at medium heat until they are translucent. Then, add your meat (Beef/Lamb or Mutton meat), raise the heat to high and continue sautéing for a few more minutes or cook until the meat changes its color (Brownish color). Then, add the tomato paste (or pepper paste, or both). After two minutes of stirring. Now it is time for the combining your chickpeas (Garbanzo beans) to mixture of the meat, onions, garlic and tomato paste with oil. Transfer the cooked chickpeas into the pot and add salt, red pepper flakes and ground black pepper (if you want you can use other spices) to taste and hot water (enough to cover). Simmer for minutes over low heat. It is about cook 25-30 minutes in low heat. If you are using a pressure cooker, cook for 10-15 minutes.
       Definitely serve with classic Turkish "White Rice- Pilaf - pirinç pilaf" or over pilaf (cracked wheat-bulgur pilaf) and mixed-pickles Turkish-pickles-recipe . Also, our cacık Yoghurt-and-cucumbers-dip-recipe  is good to go with this meal. You like our healty  Homemade-yogurt-recipe
