Turkish Style Tripe Soup (İşkembe Çorbası) Recipe
Tripe Soup (İşkembe Çorbası) is a common dish in Anatolian (Turkish) Cuisine. In Turkish, we call it "İşkembe Çorbası / its pronunciation: Shkembe Chorba". In Turkey, tripe soup is generally made of cow's stomach and eaten usually with a vinegar garlic sauce added on the table or with lemon juice.
We have many tripe soup (İşkembe Çorbacısı) restaurants in Turkey. Forexample; in Ankara city, Cankaya distric's tripe soup (İşkembe Çorbacısı) restaurants are very famous. Also, In Bursa and Istanbul cities, there are some restaurants which serve only soup as their menu. Their special menus are Tripe Soup (İşkembe Çorbası) and sheep head meat soup (kelle paça çorbası) and special lentil soup (Mercimek Çorbası) and they are remarkably good!
Generally Turkish people think that When they drink this soup, they feel beter (their heads and stomachs getting beter). Especially, we cook tripe soup (İşkembe Çorbası) alot in winter times. Plus, in Turkey, creamy Turkish tripe soup (İşkembe Çorbası) is well known as hangovers dish. Turkish Tripe Soup (İşkembe Çorbası) is also commonly eaten during the religious feast of sacrifice (Kurban Bayramı).
Beside in Turkey, this Tripe Soup is a common in Balkan area, Greece, Bulgaria and Eastern Europe. It is also known throughout the Mediterranean regions and Middle East regions. For example; tripe soup very popular in Bulgaria. They consume it at breakfasts alot. It is also consumed in Romania and In Romanized, this soup called as "Škembe Čorba".

In this post, we are going to share our Turkish Style Tripe Soup (İşkembe Çorbası). The taste of this soup is simply fresh and comfort meal during the winter or cold times. In fact, we didn't share this recipe in this post. Because, we just wellcomed to spring last week and we shared the pictures of our first day of April blossoms from our gardens. Surprisingly weather turned to winter again here and it was very heavy snowing during the days of 10, 11, 12 of April. We were really surprising and decided to share our very special and delicious soup recipe with you.

How to Make Turkish Style Tripe Soup (İşkembe Çorbası)
This soup is stomach soup or trip soup. It is made of cow's tripe or sheep's tripe cooked in seasoned sauce (we call it: Terbiyeli Sos) and served with garlic-vinegar sauce. Seasoned sauce (Terbiyeli sos) made from mixture of egg yolk, lemon juice, garlic, and all purpose flour.
This recipe is really easy and not complicated. When you try it one time, we are sure that you can cook this soup alot.

Ingredients: 1 kg beef tripe |
|
Wash your tripe well. |
|
Ingredients: 4-5 cups of water for boiling process |
|
Cook the tripe with salt and water into pressure cooker For about 40-45 minutes |
|
In pressure cooker, it cooks faster |
|
If it happens, remove the foams |
|
Remove the foams, |
|
Then chop your cooked tripe into small cubes |
|
Reserve the boiling water |
|
For Vinegar-garlic sauce: 7-8 Cloves mashed garlic and 1/4 cup of vinegar |
|
Mix garlic and vinegar well and set aside |
|
2 tablespoons or half lemon's juice |
|
For Seasoned Sauce (Terbiyeli sos): butter, flour and extra virgin olive oil |
|
Melt your butter, olive oil and flour and stir |
|
Then add 2-3 cups of broth slowly into mixture and stir constantly |
|
You should stir mixture constantly |
|
Then add egg yolk and alittle flour into bowl |
|
Mix egg yolk and flour well |
|
Then add thick yogurt into mixture and mix them well |
|
Mix egg yolk, flour and yogurt well |
|
Meanwhile add bite size tripe and cook 15-20 mins |
|
Then add lemon juice into soup mixture |
|
Then add vinegar-garlic sauce into soup mixture |
|
Lastly pour egg yolk mixture into soup mixture |
|
Cook soup mixture for more 3-4 mins. If it is too thick Add abit boiled water |
|
For serve: melt the butter with red pepper flakes and Stir for a while |
|
Then our the soup into bowl and drizzling the Butter-red pepper flakes sauce over the soup |

Serve it warm |
Recipe for Turkish Style Tripe Soup (İşkembe Çorbası)
This soup is perfect for a weeknight supper. It is served with garlic-vinegar sauce. Turks also like to add a spoonful of red pepper flakes olive oil sauce or red pepper flakes butter on topping. You should try this amazing soup in your kitchen. Here it is our Turkish Style Tripe Soup (İşkembe Çorbası) recipe;
Very good family favourite;
Serve: 6 servings, Preparation Time: 30-40 minutes, Cooking Time: 60 minutes, Cuisine: Mediterranean & Anatolian Cuisines,
- 1 kg of Beef Tripe, very clean washed,
- 4-5 Cups of water,
- 1 Teaspoon Salt,
Garlic-vinegar (mixture) sauce;
- 7-8 Cloves garlic, smashed,
- 1/4 Cup of vinegar,
For Seasoned Sauce (Terbiyeli Sos):
- 2 Eggs yolks,
- 3 Tablespoons all purpose flour,
- 2 Tablespoons fresh lemon juice,
- 2 Tablespoons thick yogurt,
For serve:
- 1 Teaspoon Red pepper flakes,
- 1 Tablespoon butter, (or extra virgin olive oil, or both of them),
Preparation:
- First of all, put your all ingredients on your kitchen container. You should wash your tripe well. Then, cook the tripe with water and salt for about 1 1/2 to 2 hours, or until tender. If you like, you may use a pressure cooker so that it cooks faster (we used pressure cooker and it took 40-45 minutes). Then, remove the foam from the surface and take the cooked tripe out of the water (but reserve the water) and cut it into bite-size chunks (small cubes) and set aside.
- For Seasoned Sauce: melt your butter, olive oil and add the al purpose flour, stir, and slowly add about 2 or 3 cups of broth, stirring constantly (you should stir mixture constantly, not stop). Mix all to smooth no lump or blend until smooth; then add bite size chunks tripe into mixture. And cook 15-20 minutes over medium-low heat. Then, slowly pour the egg yolk and alittle flour, garlic-vinegar (mixture) sauce, lemon juice and thick yogurt into the pot while stirring very slowly. Cook mixture of soup for 3-4 more minutes over medium heat. If it is too thick, add a little bit boiled water. Now your soup is ready to serve.
- For Serve: melt the butter (or extra virgin olive oil) in a small pan or pot until melted and bubbling (or hot, in the case of the oil). Then add red pepper flakes and stir for a while (2-3 minutes). Then, take off the heat.
- Then, pour the soup into bowls and then drizzling the butter and red flakes sauce over the soup.
- Serve the soup warm.

DeleteIt is called shkembe here too, I'd personally rather die that try it LOL and not just because I'm a vegetarian. Common people love it here, I always find it horrid, just the very thought of it.... ewwww....

DeleteThe majority of folks here (myself included) have never tried tripe, and it’s not particularly appealing, along with tongue, liver, kidneys, etc. However, I do think it’s important to respect an animal that gave its life for food, plus, it’s not wasteful!
