When winter comes, the first soup come to mind in Turkey is "Tarhana soup". Tarhana soup is a delicious, comforting winter soup and it is very popular throughout the Anatolia. For the most of Turks; "Tarhana Soup (Tarhana Çorbası)" is the number one soup among the soups of Anatolia. Because, Tarhana is a healthy taste that warms us up in winter months. But, when you go to any restaurant in Turkey, you can't find "Tarhana Soup (Tarhana Çorbası )". Because, Tarhana Soup is a soup that made and consumed at home. It is a winter family food. Generally, mothers or grandmothers make Tarhana and send to their children who live away from the home. Today, it is possible to find tarhana in the neighbourhood groceries as well as in the supermarkets and even you buy it from online groceries. Unfortunatelly the packaged Tarhana can hardly match Homemade ones.
Our Tarhana soup is very unique soup and is consumed with love and is a soup full of health, known for its nutritious texture. Tarhana soup is a very nutritious soup. In it, it has many vitamins, protein and nutrition. Types of Tarhana soup changes from region to region in Anatolia (Aegean Tarhana, Central Anatolia Tarhana, Flour Tarhana, Antalya Sour Tarhana, Kastamonu Moist Tarhana etc.), however, the richness in it stays the same.

What is The Benefits of Tarhana! (Why is Tarhana a Unique Food?)

No wonder why Hippocrates used to consider trahana a superfood which he prescribed for various health conditions! The benefits of this unique soup richened with summer sun are countless. The types of spices, especially red pepper, green pepper, yoghurt, onion and garlic make the Tarhana soup a healing soup for cold winter months.
- Tarhana soup does not contain any preservatives or additives,
- It strengthens the immune system and helps you to avoid infectious diseases,
- It affects quickly against cold and flu, helps to recover,
- Since it is a fulfilling soup, even you eat in small quantities of tarhana soup, it makes you full. So, it helps in weight control,
- Tarhana powder is not fried in oil. So that, No trans-fat,
- Tarhana soup helps to fasten the digestive system,

How to Make Tarhana Soup!
This unique soup's cooking process is so easy and very simple. Only, rehydrating Tarhana powder takes time. Cooking process is really very quick and simple.

Ingredients: 4-5 Tablespoons of tarhana powder |
|
Ingredients: 1 tablespoon butter and olive oil, |
|
Ingredients: 1 tablespoon tomato paste, |
|
Ingredients: 1 Liter depit water, |
|
Ingredients: 1 teaspoon of salt, red pepper fkakes and Ground black pepper, |
|
Ingredients: 1 tablespoon of dried mint, |
|
Firstly rehydrate the Tarhana powder with depit water Into the pot, |
|
Then add butter and olive oil into soup mixture and stir, |
|
Then add tomato paste into soup mixture and stir, |
|
Then add dried mint into soup mixture and keep stirring, |
|
Then add salt, red pepper flakes and ground black pepper to taste, |
|
For Mixing all ingredients well! You should keep stirring, |
|
Then add remaining water and continue to stir until the Water comes to boil, |
|
Cooking process takes nearly 20 minutes, stirring all the Time so that Tarhana doesn't settle and stick to bottom of pot |

Serve warm! |
Recipe for Tarhana soup!
Here it is our Homemade Tarhana Soup (Tarhana Çorbası)'s Recipe:
Serving: 4 Servings, Preperation Time: 2 hours, Cooking Time: 20 minutes, Cuisine: Anatolian & Mediterranean,
- - 4 or 5 Tablespoons Tarhana powder,
- - 1 Tablespoon Butter,
- - 1 Tablespoon olive oil,
- - 1 Tablespoon Tomato Paste (it is optional),
- - 1 Liter Water (Room temperature),
- - 1 or 1/2 Teaspoon Salt to taste,
- - 1 Teaspoon red hot pepper flakes and ground black pepper (it is optional but we always use them),
- - 1 Tablespoon dry mint flakes (it is optional but we always use them),
Preperation:
- First of all, put your all ingredients on your work surface. Then, first you should rehydrate your Tarhana powder by placing it in a medium pot (or bowl) and filling the pot tepid water (150 milliliter water). Stir occasionally and leave it to rehydrate for a couple of hours. If you dont want to the texture of your soup somewhat thick, you should add more water (water should be about 250 milliliters for every tablespoon of Tarhana powder),
- Then, add butter and olive oil into Tarhana mixture (or melt the butter over medium heat in a pot then add into mixture) and stir it. Then, add tomato paste and stir around (2 minutes) until the tomato paste has dissolved into the mixture, Meanwhile, add your red hot pepper flakes and dry mint flakes (or garnish them over the soup before the serve) into Tarhana soup mixture and stir all of them well.
- Then add remaining the water and continue to stir until the water comes to boil (cooking process takes nearly 20 minutes). Stirring all the time so that Tarhana doesn't settle and stick to bottom of the pot. When the water is boiling lower the heat and then taste and add salt to taste and continue to mix another 3 minutes.
- Serve warm.
