Turkish Zucchini with Dill Weed and Garlic-Yogurt Sauce Dish
Summer season just coming! Weather is great here, and this summer will be better than the previous summer. Because, Coronavirus spread slowed throughout the country by the efficient vaccine program. We are happy and we are really safer than the last year (Thanks God!).
When spring season finally squishes away and summer season's heat arrives, we, Turks, celebrate by spending as much time outside as possible. We have practically Endless number of grilling recipes ideas. There are lots of steaks, meatballs, kebabs and other grilled meats. What about veggie lovers! Don't worry! There are plenty of vegetables and summer salads to enjoy, too. Especially, we cook many different zucchini base dishes (such as; Vegan Stuffed Zucchini, Stuffed Zucchini with Ground Meat Dish, Baked Zucchini Dish, Turkish Zucchini Fritters - MĆ¼cver - Dish etc.). Because, nonvegan Zucchini dish or vegan Zucchini dish is one of our favorite summer meals. After the freezing days of winter, When the sunny days come, summer season comes. We, Turks, firstly cook zucchini dish. Because, zucchini dish means that summer season is beginning and we will be having the freshest peppers, tomatoes, herbs, green beans etc. We can say that zucchini dish is a our wellcome summer dish.
In this post, we are going to share our "Zucchini with Dill Weed and Garlic-Yogurt Sauce Dish Recipe".

How to Make Zucchini with Dill Weed and Garlic-Yogurt Sauce Dish!
We cook this dish alot during the summer. Especially, when the summer comes, you can find green zucchini very easily at the markets, groceries and green groceries in Turkey. This recipe is really very easy and not complicated. Also, this light, healthy, very chewy and delicious dish is 100 % vegetarian. We generally, serve it with garlic-yogurt sauce or with plain yogurt or only with fresh dill weed on topping. But, it is up to you, if you want, you can consume it with garlic-yogurt/yogurt or without garlic-yogurt/yogurt.

Ingredients: 1 kg Green Zucchini |

Ingredients: onion, green pepper And garlic, |
|
Ingredients: tomato paste and pepper taste |
|
Ingredients: cracked wheat (bulgur) or long grain white rice |
|
Ingredients: olive oil, |
|
Ingredients: sunflower oil, |
|
Ingredients: butter, |
|
Ingredients: dill weed and Parsley |
|
Ingredients: salt and red pepper flakes, |
|
Ingredients: For garlic-yogurt sauce; plain yogurt, |
|
Ingredients: For garlic-yogurt sauce; grated garlic, |
|
Peel zucchini and cut them into small cubes, |
|
We used green zucchini for this recipe |
|
Peel all of them and cut them into small cubes |
|
Then wash them well |
|
Then chop onion, green pepper and garlic |
|
Then place a large sauce pan over medium high heat and add olive oil, sunflower oil and butter and stir |
|
Then add chopped onion and garlic, cook and stir mixture until translucent |
|
Then add chopped green pepper and chopped zucchini into mixture |
|
Then add tomato paste and pepper paste into mixture |
|
Stir mixture and then add chopped zucchini into mixture |
|
After adding chopped zucchini, cook mixture until Zucchini softened, |
|
After softened zucchini add cracked wheat or rice into mixture |
|
Then add cracked wheat or rice and stir mixture, |
|
Then add hot water into mixture and stir it, |
|
Meanwhile add salt, red pepper flakes, chopped dill and parsley into mixture and stir, simmer cracked wheat until it is cooked, |
|
For garlic-yogurt sauce: mix the yogurt, salt and grated garlic into bowl |
|
For garlic-yogurt sauce: mix the yogurt, salt and Grated garlic into bowl, |
|
For serving: place 1/2 fresh dill weed onto top of dish |
|
For serving: serve lukewarm dish with garlic-yogurt sauce or with plain yogurt. |
Recipe for Zucchini with Dill Weed and Garlic-Yogurt Sauce Dish
This Zucchini dish's recipe comes from to our moms. We have used this recipe and ingredients since we were children. You can find different recipe and ingredients from different regions but our recipe is really delicious and better.
Here it is our Zucchini with Dill Weed and Garlic-Yogurt Sauce Dish's recipe;
Very good family favourite;
Serve: 4-6 servings, Preparation Time: 10-15 minutes, Cooking Time: 30-35 minutes, Cuisine: Mediterranean & Anatolian Cuisines,
- 1 Kg Green Zucchini, (Nearly 5 medium size zucchini), peeling and chopped (chop them into small cubes),
- 1 Medium size onion,
- 3 or 4 Cloves garlic, chopped or grated,
- 1 Tablespoon Tomato paste,
- 1,5 Tablespoons Pepper paste,
- 1 Green pepper, chopped,
- 1/4 Cup of uncooked cracked wheat/bulgur or long grain white rice, (in this recipe, we used cracked wheat),
- 1/4 Cup of olive oil,
- 1 Tablespoon of sunflower oil,
- 1 Teaspoon of butter,
- 1/4 Bunch of Dill weed and Parsley, finely chopped, (reserve 1/2 teaspoon of fresh dill for serving),
- A pinc of salt and red pepper flakes,
- A cup of hot water,
For Garlic-Yogurt Sauce, (optional):
- 1 Cup of Plain Yogurt,
- 1 or 2 Cloves garlic, grated,
Preparation:
- First of all, put your all ingredients on your work surface. Then, place a large saucepan over medium-high heat. Then, add the olive oil, sunflower oil and butter in it and heat the oil in a skillet over medium heat; cook and stir the onion until translucent and then add grated garlic and stir the mixture (about 4-5 minutes).
- Then add tomato paste, pepper paste into mixture and stir 2-3 minutes. Then add the chopped zucchini, chopped green pepper and cracked wheat (or rice). Cook and stir until the zucchini is softened, it is about 5-6 minutes. Pour hot water into mixture, and then chopped dill and parsley into mixture and sprinkle with salt and red pepper flakes, and bring the mixture to a boil. Reduce the heat and simmer the mixture until the cracked wheat (or rice) is cooked, it is about 20 minutes. Then, turn off the heat and let the mixture cool to lukewarm.
- For Garlic-Yogurt Sauce, (it is optional): Make a sauce by mixing the yogurt, garlic, and salt in a bowl.
- Serve lukewarm zucchini with dill weed dish with garlic yogurt sauce or place 1/2 reserved fresh dill weed onto middle of the serving plate.

DeleteI know that people or moms LOL do it with potatoes and eggplant to get rid of the starch in it or sometimes the biterness, but I have never seen it done with zucchini so that is why I asked!
