  What is Turkish Tabbouleh Salad (Kısır)?

 Actually our Turkish style tabbouleh (Kısır) Salad is consumed very much through out the Mediterranean region. According to culinary experts; Kısır is the Turkish or a different version of a Mediterranean/Arabic salad/dish called Tabbouleh. Although there are many differences between these two dishes or salads, the main difference is that the Turkish Tabbouleh has tomato and pepper paste.      Like many other Turkish meals, the recipe for Turkish Tabbouleh (Kısır) varies from region to region in Anatolia (Turkey). Forexample; in Adana city, they use more water than anywhere else, when they prepare this salad. And, in Hatay city, they don't use water at all, when they prepare this salad; they knead bulgur with tomato and pepper paste until it gets soft. Turkish Tabbouleh salad (Kısır) combines cracked wheat (bulgur), fresh vegetables and herbs, a lemony dressing, all packed with alittle heat from the spicy pepper paste and tomato paste. Also you can add many spices for this dish. Bye the way, fresh parsley is the most essential component for the any type of Tabbouleh. So, you should use parsley for this salad.          Recipe of Turkish Tabbouleh Salad (Kısır)


         As we mentioned above of the post; the recipe for Turkish Tabbouleh (Kısır) varies from region to region in Anatolia (Turkey). Sometimes, its recipe varies from friend to friend too. For example: some of our friends add finely sliced or minced garlic to their Turkish Tabbouleh (Kısır) and they also use pomegranate syrup for sourness. It is optional, but if you want, you can use both of them. So far we have not used finely sliced or minced garlic to Turkish Tabbouleh (Kısır). But we always use pomegranate syrup for sourness. Turkish Tabbouleh (Kısır) should be a little bit sour. Bye the way, some of our friends don't add tomatoes to Turkish Tabbouleh (Kısır), because they think that tomatoes make it mushy. But, we don't agree with them and we always add tomatoes to our Turkish Tabbouleh (Kısır).          Here it is our Turkish Tabbouleh Salad (Kısır) recipe / tabbouleh tarifi;

         Serve: 4 servings, Preparation Time: 15 - 20 minutes, Cooking Time: NO cooking time (just need to sauted onions), Cuisine: Mediterranean/Anatolian Cuisine, 

         Very good family favourite;

         Ingredients:

       - 2 Cups of cracked wheat/bulgur, (Nearly 300-400gr), (soaked in water for about 25-30 minutes),
        - 1 Cup of hot water, 
        - 1 Tablespoon tomato paste,
        - 1 Tablespoon pepper paste, (if you can not find pepper paste, you can add 2 Tablespoons tomato paste),
         - 1/2 Glass of olive oil,
   - 1 Tablespoon pomegranate syrup / molasses, 
        - 1/2 Bunch green onions, finely chopped,
        - 1 Normal size onion, cut into half rounds, 
        - 1 Bunch of parsley, finely chopped,
        - 1 or 2 Cucumbers, finely chopped,
        - 2 Sweet green peppers, finely chopped, 
        - Juice of 1 or 2 lemon (you have to taste and add less or more lemon juice. If you want more lemon juice, you can add more),
        - 1 or 2 Teaspoon Red pepper flakes, (optional), 
        - 1 or 2 Teaspoon Ground black pepper, (optional), 
       - 1 Teaspoon Cumin, (optional),
       - 2 Teaspoons Sumac, (optional), 
       - 1 or 1,5 Teaspoons Dried mint flakes or 1 Tablespoon fresh mint, finely chopped, 
     - 1 Normal size Tomatoes, cut into very small size cubes (tiny cubes),

         Preparation: 

  1. First of all, put your all ingredients on your work surface. And, take your cracked wheat (Bulgur) and place it in a pot and cover with hot water. Leave it in the hot water for about 25-30 minutes. 
  2. Secondly, take your onion and cut into onion half first, then cut into very thin half moon shapes. Then, put 1 or 2 Tablespoons olive oil in an another pot and sauté the onions with tomato and pepper paste and dried mint flakes, ground black peppers, red flakes peppers, sumac and cumin in olive oil at medium heat until they are translucent. 
  3. Then, put mixture of sauted onion in a big bowl. Then, add cracked wheat (bulgur) and 1 teaspoon salt into this mixture and mix well.
  4.  Then, add rest of the olive oil, lemon juice and pomegranate syrup into salad mixture. Mix all of them very well. If you want, you can add garlic at this stage. 
  5. At this point taste to see if your salad needs more lemon juice. Turkish Tabbouleh (Kısır) should be a little bit sour. If you want, you can add extra lemon juice. Then, add tomatoes cubes, green onions, cucumber, and parsley and mix them well.
  6. Serve it at room temparature. Turkish Tabbouleh (Kısır) goes well with meat dishes. Forexample; next Sunday dinner, We are thinking of to make this delicious salad to go with grilled lamb chop. It will be a great combo.
