Chicken Shish-Marinade Process

         Preparatipn:

First of all, begin by combining the marinade ingredients (Olive oil, yogurt, tomato paste, garlic, ground black pepper, red pepper flakes, ground cumin and dried thyme) in a large and deep bowl. Mix them very well and then put the chicken meat cubes (not eggplant cubes, we use it only cooking process) into mixing bowl. Mix it in well. Then, marinade the chicken meat cubes overnight in the fridge in a large and deep bowl with a lid. Then, take your chicken meat cubes and marinade mixture out of the refrigerator and let them get up to room temperature. Then, dip chopped chicken meat cubes and eggpkant cubes on the wood skewers (one by one: like chicken meat cube then eggplant cube). Then, Place the chicken shish kebabs on a baking sheet lined with foil. Preheat the barbecue or oven (grill) to medium high heat. Grill the chicken shish kababs for about 8-10 minutes or grill the kebabs until golden brown. Dont forget to turn the skewers occasionally, so that all sides of kababs are cooked equally. Then, put cooked skewers onto a serving dish. Serve hot. (It is optional: you may serve your cooked skewers over rice (Turkish pilaf) or cracked wheat pilaf (Turkish Bulgur pilaf).  Our Turkish-pickles-turşu or  Traditional-turkish-ayran  or  Turkish-shepherd-salad  goes well with the chicken shish kabab.
