Practical German Cake (Alman Pastası) Recipe!

We know and love many different kind of German foods because of many Turks (Turkish citizens) live there. Maybe, one of the famous German foods is German cake (in Turkish: Alman Pastası). In Turkey, many people have memories of saying "oh how we ate Alman pastası in our childhood", but we don't. In our childhood, there is no such thing as a "Alman pastası / German cake". Maybe it didn't reach the pastry shops of our hometown, or maybe it didn't hit our radiodetection (radar) somehow. We tasted the Alman pastası / German cake much later (it is about in 1995's). If we had tasted it in our childhood, we have no doubt that we would love it more. On the other hand; Yes its name is "German Cake" but we are still not sure that whether "Alman Pastası - German Cake" comes from Germany or not.

Bye the way, Turkey and Germany were further developed and intensified during the cold war. Subsequently in 1960's with the signing of the labor recruitment agreement between Turkey and Germany, a great number of Turks (Turkish citizens) immigrated to Germany. Approximately 3 million people of Turkish origin people living in Germany. So that, you can easily find many Turkish foods in Germany or you can easily find many German foods in Turkey too.

In this post, we are going to share our "Patisserie Style German Cake - Alman Parası" recipe with you. Especially, we were dying of it in 1995's. We bought it from patisseries alot. But now, we often make it in our kitchens. We are still not sure that whether "Alman Pastası - German Cake" comes from Germany or not. But, we are sure that; when you try it, you like it so much.      

What is Alman Pastası (German Cake)! 

In Turkish "Alman Pastası" means "German Cake" and it was once very popular in Turkey. You can still find it in patisseries but not alot. In Spain, there is a cheesecake called "Pastel Turco" or "Turkish Cake". But this recipe originally belongs to Gordon Ramsey. It is called Turkish cake because it is made with yoghurt. What is interesting is that it is made with Greek yogurt and we and all the Turks are not aware of such a cake LOL.

German cake (Alman Pastası) is also like that Turkish cake. Maybe all Germans are unaware of such a cake. We searched the Internet (Google) many times, talked to many people (our relatives, friends etc.) living in Germany, there is no such cake in Germany. They said that "only "Bienenstiche" looks a bit similar, but especially considering this portioned version of ours, it is actually irrelevant. Although the portioned version visually resembles a bit of Berliner (German Doughnut Berliner), but they are essentially two completely different recipes.

History of Alman Pastası (German Cake)!

According to historians; Alman Pastası (German Cake)'s story begins in the United States of America. The cake prepared by Samuel German, who worked as a chef in a company in America in the 1800s, was so popular that his company named the cake after him. On the other hand, some historians claim that; Alman pastası (German Cake) is a traditional German cake. It resembles a donut in terms of shape and construction. It is obtained by frying the fermented dough in oil or baking in oven, then dividing it into two, adding pudding (custard) or marmalade or jam and pouring caramelized sugar or chocolate sauce on it.

How to Make Patisserie Style German Cake - Alman Pastası!

Patisserie style German cake - Alman pastası is very unique and fingerlickingly delicious pastry and we especially consume it with our tea-breaks alot. Its preparation is very easy and its recipe is really very simple, not complicated. 

The bread is a leavened soft and sweet bread (you can fry the fermented dough in oil or bake in the oven). Then dividing it into two and we directly used our cream recipe or marmalade or jam as filling . And then we poured the caramelized sugar or chocolate sauce on them. They became a wonderful couple. If you want, you can use banana or you can also use ground pistachios. You can even make half with banana and half with pistachio.

Recipe for Patisserie Style German Cake - Alman Pastası!

Here it is our Patisserie Style German Cake (Alman Pastası)'s recipe;

Serve: 12 servings, Preparation Time: 10 minutes, Cooking Time: 25-30 minutes, Cuisine: Mediterranean/Anatolian Cuisine,

Ingredients: For cake dough; 5 cups of flour,

Ingreduents: For cake dough; 2 eggs,

Ingredients: For cake dough; nearly 150 gr butter,


Bienenstich recipe
Ingredients: For cake dough; 1 tablespoon of sunflower oil,


Mediterranean diet
Ingredients: For cake dough; 1/2 cup of instant yeast,

nutmeg powder for each serving plate,

Prepare your dough first; Take your eggs, milk,
instant yeast, and sugar in a bowl,


What are typical german cakes?
Whisk them well until it thickens and turn white,


Deutsche desserts
Then start kneading the dough by adding instant yeast, 
vanilin, butter, sunflower oil, salt and flour,

Slowly add the remining flour and keep kneading,

For get a good cake dough keep kneading,

Then cover it with a clean cloth and let it to rest,

Let your cake dough to rest for a while,

15-20 minutes time enough for the resting time,

Then take resting dough and knead it again well.
Then divide it into 12 equal pieces,


Apfelkuchen recipe
Then place baking paper into oven tray and roll each
ball in your hands and place it on the baking tray,

After the shaping process, press lightly on the dough with your
hands and let them rise for about 30 mins by covering it with a clean cloth,

Then bake in a preheated 180°C oven for about 25-30 mins.

Then let the baked cake cool down,

After the cakes cooling down, divide them in half,

Then turn on the stove and cook mixture until it thickens,

Then take your cream from the stove and
 transfer it into another bowl,

Then add vanilla into mixture and mix well,

Then add whipping cream into mixture and mix well,

Then add butter into mixture and mix well,

Then mix all of them with the blender,

Then let the cling film touch the pudding and
 leave it to cool by stretching it,

Meanwhile prepare your chocolate sauce for topping,

Put all chocolate pieces into sauce pot and
then add sunflower oil in it and stir them,

Cook mixture until the chocolate pieces melted,

Then take the cakes and cut them in half horizontally,

Divide all cakes in half horizontally,

Then take the cream with the pipping bag
and spread it on bottom of the cakes,

Spread the cream on all of the cakes,

Then dip the tops of the cakes in the chocolate sauce
and cover the bottom of the cakes,

Use this process for the rest of the cakes,

Lastly put all cakes on the serving tray
and garnish them with nutmeg powder,

Then let it rest for about 1-2 hours in the refrigerator,

Serve it as cool,


Ingredients:

For the dough;

  • 2 Eggs,
  • 150 gr Butter,
  • 1 Tablespoon of sunflower,
  • 1/2 Cup of instant yeast, (nearly 100 gr),
  • 1 Cup of warm milk (200 ml),
  • 1 Cup of granulated sugar,
  • 5 Cups of flour,
  • 1 Tablespoon of vanilla, (nearly 10gr),
  • 1 Teaspoon of salt, 

For the Cream (Pudding);

3 Cups of milk (nearly 600 ml),

1 Egg,

3 Tablespoons of all purpose flour,

2 Tablespoons of wheat starch,

4 Tablespoons of granulated sugar,

1 Tablespoon of butter, 

1 Tablespoon of vanilla, (nearly 10 gr),

1 Cup of whipped cream, (nearly 200 gr),

For the Topping;

  • Chocolate Sauce,
  • 1 Teaspoon of nutmeg powder for each serving plate,

(For the Chocolate Sauce);

  • 1/2 Cup Sunflower oil, (or if you want, you can use butter),
  • 75-100 gr Dark chocolate and Milk chocolate, (or if you want, you can use other kind of chocolates), 

Preparation:

  1. First of all, put your all ingredients on your work table. Then, prepare your German cake's dough first. Take eggs, warm milk, some of the instant yeast and sugar in a suitable mixing bowl and whisk them well (until it thickens and turns white). Then, start kneading the German cake's dough by adding some of the instant yeast, vanilin, butter, sunflower oil, salt and flour. Slowly add the remaining flour and keep kneading. Then cover it with a clean cloth and let it to rest for a while (15-20 minutes).  
  2. Then take your resting dough and knead it again well. Then, divide your dough into 12 equal pieces. Then place a baking paper into oven tray and roll each ball in your hands and place it on the baking tray. After the shaping process is finished, press lightly on the dough with your hands and let them rise for about 30 minutes by covering it with a clean cloth. 
  3. Then, bake in a preheated 180 degree oven for about 25-30 minutes. (The baking time of each oven may vary, so it is useful to cook it under control). Then, let the baked cake cool down and prepare your cream in the meantime. 
  4. For the Cream (Pudding); mix all the ingredients except butter, vanilla and whipped cream in a saucepan. We mean that; put milk, egg, granulated sugar, flour and starch in a suitable saucepan and mix well. Then, turn on the stove and cook mixture until it thickens. Then, take your cream from the stove, add butter, whipped cream and vanilla to it and mix it well with the blender. Then let the cling film touch the pudding and leave it to cool by stretching it.  
  5. For the Chocolate sauce; put your all pieces of chocolates into sauce pot and then add sunflower oil in it and stir them until melted (we used dark chocolate and milky chocolate at this stage, but you can choose according to your taste). Then take it off the stove and set it aside (if you want, you can melt your chocolates by using the process of bain-marie). 
  6. Then, take the baked cakes and cut each one of them in half horizontally. Then, take the cream (pudding) with the piping bag and spread it on bottom of the cakes. Then, dip the tops of the cakes in the cooled chocolate sauce and cover the bottom of the cakes. 
  7. Lastly put all of them on the serving tray and garnish them with nutmeg powder and let it rest for about 1-2 hours in the refrigerator. Then, serve it as cool.

  22. In the U.S., there is also a popular cake called "German Chocolate Cake," which was also invented by Samuel German - the same guy you refer to, I'm sure. He invented a novel type of baking chocolate, which is called "German's chocolate." Then he created the cake I'm referring to, which he called "German's Chocolate Cake." The cake has been reasonably popular for generations, but it has lost its close connection with German's chocolate. It can be made with many types of chocolate, or even cocoa. Over time, its name got shortened to "German Chocolate Cake," and eventually people started mistakenly thinking it was German in origin. I wonder if your "berliners" have a similar history.
