Turkish Mosaic Cake (Mozaik Pastası) Recipe

We were really surprised, when Aunt Ayse asked "Turkish mosaic cake" from us. Aunt Ayse (in Turkish, we called her: Ayşe Teyze) is our very special neighbour who is 80 years old and lives lonely in our neighbourhood. We love her very much. She normally doesn’t eat many sweets, so this idea was definitely a surprise for us. When we asked about "why mosaic cake?", she told us that his older sister used to make the cake for her when she was a kid. These fond memories lasted into adulthood, and she wanted us to try to recreate this childhood treasure. 

We had never heard of mosaic cake before, but Selma knows it very well. Because her mom and she make this amazing dessert alot. According to Selma; Turkish mosaic cake is a slightly sweet, chocolatey cake made from petit beurre biscuits or wafer cookies and cocoa powder. Turkish Mosaic cake is a very practical and delicious dessert to make. A wonderful flavor to accompany you during your afternoon coffee pleasure or Turkish tea-break (five o'clock tea).

Actually, who can resist this dessert made by blending the flavor of cocoa and biscuit with melted butter? Yes, last Saturday afternoon, our Aunt Ayse and we had a pretty small party and tasted delicious Turkish mosaic cake in Selma's house. And we decided to share this unique dessert's recipe with you. 

History of Mosaic Cake!

According to dessert experts (dessert/pastry chefs); This mosaic cake's recipe is not originally Turkish, but like its other European counterpart, "Créme Caramel", the mosaic cake has worked its way into Anatolian (Turkish) cuisine in the last century. Today, it has become a favorite dessert to end the meal with. Nearly every Turkish mom makes this easy and simple dessert for her kids, and even the most highly acclaimed pastry houses in every corner of Turkey (such as; in Istanbul city, Ankara city, Izmir city, Antalya city etc). offer a version of it in their shops. This unique dessert is considered an old standby recipe when you are in a rush, and you can also use it with other ingredients to put together some very fancy desserts.

How to Make Turkish Mosaic Cake (Mozaik Pastası)!

Making mosaic cake is quite easy. There are  many different types of mosaic cake recipes. Mostly classic recipe is made. Besides the classic recipe, the most popular mosaic cake recipes are: Pudding Mosaic Cake Recipe and Egg Free Mosaic Cake Recipe. In this post, we are going to share "Egg Free Mosaic Cake Recipe" with you. Only 5 ingredients are needed for this mosaic cake, which is very popular with its recipe made with: Biscuit, butter, milk, sugar and cocoa.  

This yummy dessert has everything going for it. It is simple to make and has easy to find, inexpensive ingredients. Mosaic cake is also a do-ahead dish that will keep for several days in your refrigerator and doesn't require oven-baking. If you want something rich, chocolatey, buttery, and tender, this cake is really for you.

No matter how you slice and garnish it, it looks perfect on the serving plate. The white biscuits form a mosaic-like pattern inside the chocolate, lending it its name. Plus, it is great for the kids parties, entertaining guests, and as part of the simple family meal.

12 Tips for Turkish Mosaic Cake Recipe Successs

  1. Use the ingredients in the proportions specified in the recipe. Measurement is very important in making Turkish mosaic cake. 
  2. When melting the butter, be careful not to burn it. 
  3. When you put the butter in the bowl, remove the foams on the oil with a spoon. 
  4. Make sure that the butter and milk, sugar, cocoa powder are mixed well. 
  5. If the butter cake mixture is too liquid, add more biscuits. 
  6. If the butter cake mixture is too stiff, add milk and melted butter. 
  7. Make sure that the biscuits you use are fresh. (We use our famous "Ülker petit beurre biscuits". But, Marie Biscuits or any of your favourite biscuits, sweet crackers or digestive biscuits are perfect for this recipe). 
  8. Do not crumble the biscuits too much. If the biscuits turn into powder, it will not go well with cocoa or pudding. 
  9. Leave it to rest in the freezer for 2-4 hours before serving (or freeze the cake for at least an hour to solidify it is shape). 
  10. Make sure to adjust the amount of chocolate sauce you will pour on the cake. If too much chocolate sauce is added, your cake can be sticky. If you add less, the biscuits will not get wet enough and your cake may be dry. 
  11. If you are using chocolate in the mosaic cake recipe, be careful to melt the chocolate in a bain-marie. 
  12. Instead of hazelnuts, you can add walnuts, dried fruit and pistachios to this recipe.

How to Shape Turkish Mosaic Cake!

The classic shape of the Turkish mosaic cake is triangular. You can use ready-made mosaic cake molds to get this shape. If you wish, you can create a triangle shape with your hand by wrapping the mixture in cling film or baking paper or plastic sheet. Another method is to make a cylindrical mosaic cake. For this, pour the mixture on the cling film. Roll it up tightly in a cylinder and freeze. Also, pour the mosaic cake mix into the baton cake mold and freeze.

How Long Should Turkish Mosaic Cake Be Kept In The Freezer?

The freezing time is the most important step for the mosaic cake to have a good consistency. Mosaic cake should be kept in the freezer. The ideal freezing time is 2-4 hours. But if it still hasn't got enough consistency after 4 hours, you should keep it for a while.

If you wish, you can prepare your mosaic cake the night before. In this way, you can achieve the desired consistency. If you have kept your cake in the freezer for a long time, make sure to keep it at room temperature for a while before serving.

What Goes Well With Turkish Mosaic Cake?

You can serve the mosaic cake with chocolate chips, dried fruit or hazelnuts and walnuts. If you wish, you can add these ingredients during the making of the cake. Also, you can slice the mosaic cake and serve it with chocolate sauce or vanilla ice cream. You can prepare fondue with chocolate sauce and strawberries by cutting the cake into smaller slices. Bye the way, Turkish tea and Turkish coffee go well with delicious cake.

Ingredients: 2 packets of petit beurre biscuits,

Ingredients: nearly 150-200 gr butter,

Ingredients: 1/2 cup of milk,

Let stand for 5-10 minutes at room temperature before serving and
 sprinkle a pinch of nutmeg powder over the cake


Ingredients for Egg Free Mosaic Cake:
  • 2 packets of petit beurre biscuits, (nearly 500 gr),
  • 1/2 Cup of milk, (nearly 75 ml),
  • 1 Cup of butter, (nearly 200 gr),
  • 1/2 Cup of walnuts, chopped roughly,
  • 1/2 Cup of hazelnuts, chopped roughly,
  • 4 Tablespoons of granulated sugar,
  • 4 Tablespoons of cocoa powder,
  • A pinch of Nutmeg powder for per serving plate,
  • Clean cling film or plastic sheet or plastic bag, cut open to make a rectangle,

Preparation:

  1. First of all, put your all ingredients on the work surface. Then, use your hands to crumble the your petit beurre biscuits into small squares and set aside. 
  2. Then in a saucepan, melt the butter. Then pour butter into a large mixing bowl and then add cocoa powder and granulated sugar into the melted butter and mix them very well (until the sugar dissolves). Then add the milk into the warm butter and cocoa mixture and stir the mixture well. 
  3. Then combine the broken biscuits, walnuts, hazelnuts and the cocoa mixture in the bowl. To implement this process, turn it gently with a spoon. And maintain this process until all the broken biscuits, walnuts, hazelnuts come in contact with the cocoa mixture. 
  4. When the mixture has a thick consistency. Leave it to cool at room temperature. 
  5. Then pour the biscuit mixture on the cling film. Then spread it longitudinally over the cling film and wrap roll or pyramid shape. Then keep it in the freezer section of the refrigerator. 
  6. Refrigerate the mosaic cake for several hours or overnight before serving. When the cake is set, unwrap the cling film from one end and begin slicing it. Then close the cling film again and keep your cake in the refrigerator for several days. 
  7. Serve by slicing. Let stand for 5-10 minutes at room temperature before serving and sprinkle a pinch of nutmeg powder over the cake.

  11. Petit beurre biscuit cakes are a staple in my country as well! And there are so many different ways to stack them in cakes. We have ones with apple and cinnamom flavour, so I like to use those for a cake with an apple cream filling (you boil two grated apples in 400ml of water with 8 spoons of sugar, and then add instant vanilla pudding into it, cook it, cool it and mix it with 200ml of whipped sweet cream). We have yours here as well, those that are filled with chocolate inside, but I prefer Tutku.
