Spinach Cake with Custard (Ispanaklı Kek) Recipe
Last Sunday, we wellcomed spring season in our gardens and we had our lunchs in gardens. We were really very happy to say "Wellcome to Spring Season". Most of our relatives who live in Germany also celebrated Easter with their German friends. We made phone calls with them and gave our best wishes to them. Bye the way, Apricot trees are now in bloom in many regions of the Turkey. All our and our neighbours's apricot trees are now in bloom in gardens too.

When we back to our homes from the gardens, we realized that there was nothing to eat in the fridge. Dinner dish was ok, Because, we decided to cook one of our "wellcome to spring dishes" "Fava Beans with Olive Oil dish" to Sunday dinner. Bye the way, our "Wellcome to spring dishes" are "
Stuffed-zucchini-with-ground-meat-dish" and "
Fava-beans-with-olive-oil-dish". When the spring season comes, we generally, cook zucchini and fava beans base dishes in our kitchens.
Anyway! What about dessert after the dinner! Desserts are really important part of the Sunday dinners. Suddenly, an idea dropped and we decided to prepare an amazing spinach cake with custard recipe. This is one of the easiest, cheapest, and quickest dessert and it realy matches the special dinner. Even you can eat it as snacks in tea-breaks or tea parties.
In this post; We are going to share our "Spinach Cake with Custard (Ispanaklı Kek) Recipe" with you. This spinach cake a sweet cake that is wonderfully moist, but does not taste like spinach! Like a cake with root vegetables. We recommend that you try this recipe and we are sure that you like it.
How to Make Spinach Cake with Custard (Ispanaklı Kek) Recipe!
This spinach cake with custard will make you forget you are eating your vegetables. We are sure that Popeye would be proud of this cake. We and our children like this cake very much, because this is a very fun cake, it is vibrant green and it tastes pretty good.
When you cook this recipe, we recommend that vegetable oil or canola oil is better for this dessert because one time we used olive oil and we personally thought that it tasted too much like olive oil. Hence, use a less flavorful oil such as canola or vegetable oil is better for this recipe.
We highly recommend using fresh spinach instead of the frozen one to make a much smoother batter (but it is up to you. If you want, you can use frozen spinach). Actually, Spinach Cake with custard recipe is very easy and not complicated. You just have to put together all the ingredients in a large deep bowl, and mix until combined and bake into oven. Then place the custard layer between the pieces of cake and serve it.

Ingredients: 2-2,5 cups fresh spinach. Wash them well |

Rip the stems off the leaves. |
|
With boiling water let them soft then blend them |
|
For cake: ingredients; 3 eggs, 3/4 Cup sugar |
|
For cake: ingredients; baking powder, vanilla extract, vegetable oil |
|
Mix eggs, sugar and vanilla extract until creamy |
|
Mic them until they turn to white and frothy |
|
Then add milk and vegetable oil and whisk |
|
Then add spinach pure into mixture and whisk |
|
Mix them until they turn to vibrant green |
|
Then add flour and baking powder into mixture |
|
Mix flour and baking powder with the mixture well |
|
You can use cake-pan or cake mold for baking process. Place parchment paper into cake pan. |

Then pour spinach cake mixture into cake-pan |
|
Bake cake mixture at 180°C (350°F) into oven |
|
Bake it 45-50 minutes or until a toothpick inserted center of the cake and comes out clean |
|
Bake cake until a toothpick inserted the center of the cake and comes out clean |
|
Trim half a centimeter from the side. It is used the Cake's topping |
|
For custard: ingredients; wheat starch, vanilla extract
|
|
For custard: milk and whipped cream |
|
For custard: a handful of chocolate chips |
|
Add all ingredients except whipping cream and chocolate chips Then cook mixture until it thickens by stirring |
|
Then remove the pot from heat and let it warm. Meanwhile Add whipped cream and chocolate chips into mixture and stir 15 mins |

Cut the cake half, so you have 2 pieces of cake layers |
|
Then spread some custard mixture on top of the 1st layer. |
|
Then place the 2nd layer on top |
|
Then spread the custard mixture on top of the 2nd layer |
|
Spread the custard mixture all over the 2nd layer |
|
Now sprinkle the green cake crumbled over it |
|
Crumbled the trimmed cake ppieces and cover the cake's top |
|

You can consume this cakes as cold or room temperature |
Recipe for Spinach Cake with Custard (Ispanaklı Kek)
Spinach Cake (or Green Cake) can be eaten at room temperature. But, if you want, you can place it into refrigerator for a while and eat as cold.
Here it is our Spinach Cake with Custard (Ispanaklı Kek) Recipe;
Very good family favourite;
Serving: 4-6 servings, Preparation Time: 10-15 minutes, Cooking Times: 45-50 minutes, Cuisine: Turkish & Mediterranean Cuisines,
For the Cake:
- 1Cup Spinach Puree (Boiled Spinach drained and blended - we can get 1 Cup Spinach Puree from 1,5-2 Cups Fresh Spinach not frozen Spinach)
- 3 Eggs,
- 3/4 Cup Granulated Sugar,
- 1 Cup Milk,
- 3/4 Cup Vegetable Oil,
- 2 Packages or 2 Tablespoons Baking Powder, (nearly 25 gr),
- 1 Package or 2 Teaspoons Vanilla Extract, (nearly 5 gr),
- 3 Cups all purpose flour,
For the Custard;
- 1 Liter milk,
- 1 Cup of starch, (Wheat or Corn),
- 1/2 Cup of Granulated sugar,
- 1 Package or 2 Teaspoons Vanilla Extract, (nearly 5 gr),
- 1/2 Cup of Whipped cream, (Nearly 65-75 gr),
- A handful of chocolate chips,
Preparation:
- First of all, put your all ingredients on your kitchen container. Firstly, wash your spinach well and then rip the stems off the leaves and put all of them in a colander. With boiling water from a Kettle let them get soft and squeeze out the liquid. Then blend softened spinach into blender (we can get 1 Cup Spinach Puree from 1,5-2 Cups Fresh Spinach).
- For the cake: Mix eggs with granulated sugar and vanilla extract until creamy (until they turn to white and frothy). Then, add the milk and vegetable oil and whisk. Then, add the spinach puree and whisk. After these processes, add the flour and baking powder, then stir until you get a smooth batter. Then, place parchment paper into your cake-pan/30 cm cake-pan (or place parchment paper into your cake mold and lock it) and pour mixture into a cake-pan. Bake at 180°C (350°F) oven until a toothpick inserted in the center of cake and comes out clean (nearly 45-50 minutes). Then, remove from oven and let it cool completely before inverting on a platter.
- For the custard: Stir the milk, granulated sugar, starch and vanilla in a pot. Then, cook mixture until it thickens by stirring constantly. Then, remove the pot and let it get warm. Then add the whipped cream and a handful chocolate chips and mix for 15 minutes.
- Then, flatten the top of the cake by using an knife (This separated part will also be used to cover the top of the cake, also trim half a centimeter from the sides). Then, cut the cake in half, so you can get two half pieces, and spread some of the custard mixture on top of the first layer, then place the second layer on top. Then, spread the rest of the whipped cream mixture on top and on the side of the cake. Now, crumbled the trimmed cake pieces and cover the top of the cake with them.
- This spinach cake can be served cold or room temperature. if you want, you can place into refrigerator for a while (1 or 2 hours).

DeleteI did once make a biscuit for torte with spinach and yes, it really does not have spinach taste, just the lovely green colour. Since I'm the king of green colour I'd anything green!
ReplyDeleteI love to crumble the sides of the cake too, and then mix them with two or three mashed bananas and use that as a spread over the biscuit layer. You can also mix it with any kind of jam.
