In this post, we are going to share our very nice, healthy, light and special holiday dessert to you. It is "Cyprus Dessert" but first, Merry Christmas to all friends! Happy New Year to all friends!

Merry Christmas

And let us to evaluation the 2020;
Couple of days later, this year will finish and we say that "hello and welcome to the 2021". But, 2020 has been a stressful year for everyone because of the Covid-19 outbreak. And yet so much has changed in our lives. We are not even wholly finish 2020 right now. In 2020, people, communities and religious groups have celebrated their special days or times (such as; Feast of Ramadan (Ed al Fitr), Feast of Sacrifice (Ed al Adha), Diwali celebration, Sukot celebration etc.) under Covid-19 outbreak effects. And, all celebrations were really more different than the previous years. Actually, this year holidays didn't perfect for many of to us. Couple of days later, we will celebrate New year and Christmas. And Ofcourse! New year holiday or Christmas holiday doesn't have to be perfect for us just like the last year holiday either.

Even though our New year holiday (or Christmas Holiday) plans may look different this year, we can find ways to celebrate. Bye the way, please dont worry about it and set aside all differences. And, try to choose a few to hold on to, and be open to creating new things. During the 2020 year and Covid-19 outbreak, we have stayed at homes for a long while and we have done many things in our homes. We have increased to use internet connections and have googled many things. We have tried to get the answers of some questions, such as "What is coronavirus? (coronavirus is a viral disease that infects human's lung and causes breathing trouble along with fever and cough)". Also we have tried to get an information that question of "What is plasma therapy? (doctors use the blood plasma of a healthy person to transfer their immunity against a particular disease to a critically ill patient)". Sometimes we have searched very interesting things, such as; "What is binod? (He became an internet sensation in August this year. We wondered and searched him, because of our friends who lived in India searched him very often). What about cooking things? Ofcourse we have searched alot of things, such as; (sourdough bread recipes, bananabread recipe, Korean dagla coffee recipe and Greek dessert ekmek kataifi recipe). Hopefully, we will prepare all of them in our kitchens at New year. Also, when the businesses we rely on were forced to shut the their doors, we looked up how to do things ourselves, from making our own hand cleaner (sanitizer) and face masks, to cutting hair.

As we said above of the post; 2020 has been a stressful year for everyone because of the Covid-19 outbreak. We should set aside all things and differences and be open to creating new things for the Christmas holiday. For example: forgiveness is a great start to any relationship! Please set aside all grievances and be understanding if others (even your family members) get upset or distressed you when something goes wrong.

Before you do your food shopping and gift shopping decide how much money you can afford to spend for them. And please stick to your budget. Don't buy tons of things or foods.

And, try these suggestions;
Do your best to keep your healthy habits. Don't let the christmas holiday become a free-for-all. Healthy snack is important (For example: Roasted chestnuts are perfect, they are healthy and easy, its recipe link below). So, have a healthy snack before the holiday meals.

Eat healthy meals during the christmas holiday (Our Oven Baked Lamb Chops and Turkish Kayseri Lubrication dish are very good holiday meals, their recipes links are below). In holiday days, get plenty of sleep. And, dont forget to your regular physical activity in holiday days. Try to deep Breathing exercises (for example: mediation or yoga). Please don't use tobacco, alcohol and drug. Try to self-talk! Talk to yourself as you are best friend. Keep these talks positive! Find an activity you enjoy. Take a break any yourself. Spending just 15 or 20 minutes alone. Find something that reduces stress by clearing your mind.

As you see; with a little planning and some positive thinking, you can find peace and joy during the holiday. Bye the way, don't forget to prepare our very nice, healthy, light and special holiday dessert "Cyprus Dessert".

Ingredients:

For the Cake;

  • 3 Eggs,
  • 1/2 Glass of Granulated sugar,
  • 1/2 Glass of vegetable oil,
  • 1 Glass of breadcrumbs,
  • 1 Glass of ground walnuts, chopped or mashed or blended,
  • 1 Package of Baking powder, (10 gr),
  • 1 Glass of Nutmeg powder,

For the Custard;

  • 1 Liter milk,
  • 1 Glass of starch, (Wheat or Corn),
  • 1/2 Glass of Granulated sugar,
  • 1 Package of vanilla, (Nearly 5 gr),
  • 1 Glass of Whipped cream, (Nearly 65-75 gr),

For the Syrup (Sherbet);

2,5 Glasses of Water, (Nearly 400 ml),
1,5 Glasses of Granulated sugar,
1 Package of vanilla, (Nearly 5 gr),

Preparation:

  1. First of all put your all ingredients on your work surface. Then, we should prepare the syrup of dessert first. So, For the Syrup (Sherbet): Combine the granulated sugar and water in a heavy saucepan over the medium heat and bring it to boil. When it boils (when it bubbles), reduce the heat and simmer it for 15-17 minutes. And then turn the heat off and add vanilla and set your syrup aside cool.
  2. Then, you should prepare dessert's cake. For the Cake: Mix the eggs and granulated sugar in a deep bowl by mixer machine. Then, add the vegetable oil, breadcrumbs, ground walnut, Nutmeg powder and baking powder and mix them well. Then, pour the mixture into the grased rectangle glass baking tray and spread.
  3. Then, bake the mixture into the preheated oven to 160°C (320 °F) for 30 minutes. Then, remove the cake from the oven and pour cool syrup (sherbet) onto the hot cake. Set your cake aside to cool.
  4. For the custard; Stir the milk, granulated sugar, starch and vanilla in a pot. Then, cook mixture until it thickens by stirring constantly. Then, remove the pot and let it get warm. Then add the whipped cream and mix for 15 minutes. After these processes, pour the custard on to the cool cake that absorbed the syrup (sherbet) and spread it.
  5. Finely, sprinkle Nutmeg powder on the top of dessert and put it onto the fridge for 2 or 3 hours. If you want, you can put pieces of fruits (Strawberry, orange etc) or juice of jam on the top of dessert. (In this recipe we put sour cherry jam on the top of dessert).
  6. After it gets cool at that point cut your dessert and serve.
ENJOY!
