Turkish Burma Baklava (Sarı Burma Tatlısı)
Baklava is very common and very famous dessert in Turkey. In Turkey, many famous baklava cooks advice that "start your day with a piece of baklava for happiness and good moods". According to them; "If you eat one diamond piece of baklava (not much) in early morning of the day, it makes you happy, strong and it protects you from bad moods and stress".
According to experts, eating something sweet that is going to balance out all of that emotion. So, especially when you go to school, office, important business interview or important activities etc. You should eat a piece of baklava before go to there. It makes your day happy and successful and you feel yourself on balance.
According to historians; Baklava was born in Anatolian Cuisine and Baklavas' origin are Turkish. On the other hand, some of historians mention that its history has reached to Byzantine Empire Era. But, when we come to todays, you can find many different kind of baklava desserts in many different regions. Forexample in Greece, you can find Greek style baklava, or in Armania, you can find Armenian style baklava (burma baklava) too. Actually, many cultures claim that Baklava for their own. There is no problem, because Baklava is Baklava. It is delicious, flaky, chewy, nutty and yummy desert. If you ask that "what is the tastiest dessert in the world?" Answe is baklava dessert!
When we examine this issue as closely, we can say that; non Turkish baklava often features honey as the main sweetening ingredient, but Turkish baklava is sweetened with "sugar syrup" We call it in Turkish "şerbet". Generally, Greek baklava, Lebanon baklava or others use honey , walnuts, and cinnamon, while Turkish baklava uses a sugar syrup, pistachios, and lemon juice without the addition of spices or other flavors. So Turkish baklava dessert and other Turkish desserts are best! Nowadays, "Burma Baklava" is very popular in Here, our home town and many regions of Turkey.

What is Burma Baklava Dessert?
In this post, we are going to share our very tasty dessert to you. It is on of our best dessert recipes. Its name is "Burma Baklava dessert" or "Yellow Burma Baklava dessert". It comes from the Armenian Cuisine. Actually, Burma Baklava dessert is a traditional Armenian and Turkish dessert that is very similar to our unique Turkish Baklava Dessert.
How to Make Homemade Burma Baklava Dessert?
First of all, our burma baklava dessert is a very special comfort food. When you try it, we are sure that you memory the recipe and you cook it many times during the year. Some of our friends who live in abroads worry about the preparing of this recipe and they say that; "Baklava might seem like one of those pastries that you could never make at home". This idea is wholy wrong ! Don't worry about it. It is not complicated, it is really easy! If you use the store bought phyllo dough, process is very easy and fast. But, if you want to hand made baklava dough, it takes time, bun not too much. Actually, we recommend that hand made Baklava dough, because it brings you a better taste. Also, if you prepare your own dough at home, like us. You need a Turkish thin rolling pin (in Turkish we call it: Oklava), or knitting needle 10 mm for rolling out the dough.
You may use storebought phyllo or Handmade baklava dough |
Ingredients of handmade dough: flouŕ, baking powder,homemade yoghurt and pin roller/oķlava |
Ingredients of handmade dough: eggs, salt and Lemon juice |
For syrup/sherbet: water, sugar and lemon juice |
For filling: Chopped walnuts or pistachios |
Unsalted and melted butter |
For topping: a pinch of nutmeg powder |
To prepare handmade dough: put all materials In a large bowl and mix them well |
Knead the dough until it turns smooth and let it Rest for a while 30-35 minutes |
Give a small ball shape. 12-14 small balls |
You need a Turkish thin rolling pin or knitting Needle 10mm |
Flatten the balls with your hands and then roll in a oval shape and thinned with the help of roller pin |
Melt the butter in a saucepan |
Sprinkle the baklava fillings and then pour the melted butter all over the pastries |
Pour melted butter all over the pastries |
Read procedure of piece of burma baklava and place it in an oven tray |
Finish all the pastry and place them your oven tray Then pour the melted butter all over the pastries |
Melted butter makes your dessert perfect but if You want you can use olive oil instead of it |
Place your dessert tray on the middle or top rack and bake until they turn a light golden colour |
Then pour your lukewarm syrup evenly all over the pastries |
For topping: sprinkle a pinch of nutmeg powder onto dessert |
Recipe of Homemade Burma Baklava Dessert
Here it is our Homemade Burma Baklava ingredients and this dessert's recipe;
Serving size: 8-10 servings, Preparation time: 20-30 minutes, Cooking time: 25-30 minutes, Ready in: 45-55 minutes.
Very good family favourite;
Ingredients:
- 450 - 500 gr Phyllo Pastry (20 - 25 sheets),
- 3 Tablespoons butter (unsalted and melted),
For your own burma baklava dough; (if you prepare your own dough, like us. Follow the recipe);
- You need a Turkish thin rolling pin (in Turkish: Oklava), or knitting needle 10 mm,
- 8 - 9 Cups flour,
- 3 Eggs,
- 1 Teaspoon Yoghurt,
- 1 Cup of water,
- 1 Pocket of baking powder, (10 gr),
- 1 Tablespoon Lemon juice,
- A pinch of salt,
For inside filling;
- 1,5 Cups (350 - 400 gr) Wallnuts, chopped very small pieces or blend them (it is optional; if you want, you can use ground pistachios),
For the Syrup (Sherbet);
- 1,5 Cups water,
- 1,5 Cups Granulated sugar,
- 1 or 2 Tablespoons lemon juice,
For topping:
- A pinch of Nutmeg powder for per serving plate,
Preparation:
- First of all put your all ingredients on the work surface, then preheat the oven to 175°C (350°F), after that make your syrup first, so it cools in time for when you need it. To prepare the syrup of dessert, place the water and sugar in a medium size pot. First bring to a boil and continue boiling for 5 minutes. Then simmer for 15 minutes and add the lemon juice, let it cook for another 5 minutes and turn the heat off. Then place the syrup in another bowl so that it cools down quickly.
- Then prepare your own dessert dough or use sheets of Phyllo Pastry. To prepare the dough; in a large mixing bowl put the all materials (Flour, lukewarm water, yoghurt, eggs, baking powder and lemon juice) and mix all of them very well. Then, knead the dough until it turns to smooth and elastic, then, cover with a clean damp towel and let dessert dough rest for a while (it is about 30-35 minutes) and then give a small ball shape. 12 or 14 small ball shape pieces are prepared from this dough. After these processes, now we need to flatten and thinned dough shape, first, flatten the balls with your hands and then roll in a oval shape and thinned with the help of roller pin.
- Then melt the butter in a saucepan and remove the foam that forms at the top. Then take one sheet of phyllo pastry or your hand made burma baklava dough, lay it down on the kitchen counter with the short side infront of you. Then sprinkle some walnuts (or pistachios) over the phyllo or your hand made dough and spread them gently with your hand. Then, place your rolling pin (oklava) onto the phyllo pastry at the edge closest to you and start to roll it onto the rolling pin. When you reach half of the sheet cut in two pieces with your sharp knife, then gently push the pastry from both ends toward the center to lightly wrinkle up. Then slowly pull out your rolling pin. Place it in an oven tray. Then do the same procedure for the second half of the sheet. Then, cut into 3 finger lengths. Finish all the pastry and place them your oven tray. Then, using a tablespoon, pour the melted butter all over the pastries.
- Then place your dessert tray on the middle or top rack and bake until they turn a light golden colour. Then, let them stand for about couple of minutes. And then with the tablespoon, pour the lukewarm syrup evenly all over the pastries. Then sprinkle a pinch of nutmeg powder over the dessert. And Keep them at room temperature for at least 2 hours before serving.

ReplyDeleteDear friend thank you so much for your comment! We always have tried this dessert with eggs. Eggs makes our dough strong so we get a very very thin baklava dough. But i dont think eggs free versiyon is a bad idea.
