       When we were children and when the Holly Ramadan month came (Meaning of Ramadan Month: Holly Ramadan Month is the month in which Muslims all around the world fast for 30 days from Dawn to dusk), we were looking forward to the Güllaç Dessert and eat it very much. Shortly, whenever we hear the word of Ramadan, we immediately think of Güllaç dessert. Because, it is a traditional Turkish dessert that dates back to the Ottoman Empire. According to historians; Güllaç Dessert was also a part of the circumcision ceremony menu for Sultan Süleyman the magnificient's sons'. If you ask that what is the best dessert in the world?          In this post; we are going to share our very special and delicious milk-based dessert to you. This unique dessert is generally prepared by the Turkish people in Ramadan times. Maybe, you know that; Turkish people are known to be quiet passionate about food. And, we love Güllaç dessert very much. We can say that as briefly; Güllaç is a traditional Ramadan dessert of Anatolian Cuisine (Turkish Cuisine) and it is prepared with Güllaç sheets (leaves).      How to Make Turkish Ramadan Güllaç Dessert?


         As we said that above of the post; Güllaç is a traditional Ramadan dessert of Anatolian Cuisine (Turkish Cuisine) and it is prepared with Güllaç sheets (leaves). Actually, Güllaç is a very simple dessert made with Güllaç sheets (leaves), milk, sugar, rose-water and walnuts. Also, you may garnish it with nuts or fruits (Strawberry, banana, and cherry etc.) Or both of them. We are sure that; when you try it.          In Turkey, we generally buy a package of Güllaç leaves/sheets from markets or groceries and prepare it at home for the households, or we buy this dessert from patisseries or bakery shops. On the other hand, preparing of Güllaç leaves at home is not impossible but it is really difficult. So far we have not tried it yet. We generally buy it from markets and prepare it at home or we directly buy this dessert from patisseries. Bye the way, it is almost impossible to find a package of Güllaç leaves outside of the Turkey. But, maybe it is found on the online Turkish groceries. This very unique and yummy milk based dessert is prepared with Güllaç leaves/sheets, which are basically starch wafers that are made of corn starch, flour and water. As we said above of the post; it is especially popular in the month of Ramadan, because it is a very light dessert (well, yes when we compared to other traditional Turkish syrup/sherbet based desserts) and it helps the digestive system during Ramadan evening meals (we call it: "iftar" = the evening meal that breaks the fast during Ramadan). Traditionally, Güllaç is stuffed with chopped walnuts (if you want, you can add chopped other nuts and fruits) and flavored with rose water. After a couple of hours walnuts transform the soft white color of the leaves into an unappetizing (beige colour), so we almost always prepare it with chopped hazelnuts (but in this recipe, we used walnuts). We generally use rose-water for the flavoring milk mixture. But, if you want, you can use cardamon instead of the traditional rose water.          Recipe of Turkish Ramadan Güllaç Dessert


   If you ask "How to make Güllaç Recipe?" It is very easy. Yes preparing our traditional Turkish Ramadan Güllaç Dessert is realy very easy. Ingredients are so simple. You just need to Güllaç leaves, milk, sugar and walnuts. We generally buy brands of  "Saffet Abdullah Güllaç", "Hilal Güllaç" "Köksal Güllaç". Güllaç ingredients: güllaç leaves, sugar, walnuts, fruits, milk, rose-water


Rose-water adds extra flavour to dessert

For milk mixture: Boil the milk with sugar, vanilla extract

Pour milk mixture then place 1. Leaf of güllac and again pour milk mixture on top

Continue the this process untill the 5th leaf of güllaç

After the 5th leaf of güllaç, spread a handful of walnut over the dessert

Also spread the fruits cubes over the 5th leaf of güllaç

Place the 6th leaf of güllaç onto the 5th leaf

Then pour the milk mixture over it. Continue to this proces to 10th leaf

Let your dessert for 30-45 minutes resting. Then garnish top

         Here it is our Turkish Ramadan Güllaç Dessert;

         Serve: 4 servings, Preparation Time: 10 - 20 minutes, Cooking Time: NO cooking time (just need to boiled milk), Cuisine: Mediterranean/Anatolian Cuisine, 

         Very good family favourite;

         Ingredients:

         - 10 Pieces Güllaç leaves/sheets,
         -2 or 2,5 litres whole milk, 
         - 500-550 gr Granulated sugar,
         - 1 Tablospoon or a package of vanilla extract (nearly 5 gr), 
         - 1 or 2 Teaspoons Rose-water, 
       - 1,5 Cups Walnut, finely chopped, (if you want, you can use finely chopped pistachios or hazelnut instead of  the walnut), 
         - 5 or 7 Strawberry, cut into cube size,
         - 2 or 3 Bananas, cut into cube size,
 
         Preparation:

  1. First of all, put your all ingredients (Güllaç leaves, granulated sugar, vanilla extract, rose-water, walnut, strawberry and banana) on your work surface.  
  2. Then, boil the milk with the granulated sugar and vanilla extract for a couple of minutes and then take off the heat. You should, wait until the milk mixture comes to lukewarm. When the milk mixture comes to lukewarm, add rose-water and mix.
  3. Now, take your oven tray (in a round tray). In a round tray the same size as a Güllaç leaf, pour in half a cup of the milk mixture. Then, place one leaf on in the oven tray and pour more milk on top, until the leaf is completely soaked by the milk mixture. Continue this process until you finish the 5th leaf.
  4. Then, spread a handful of walnut and spread the mixture of fruits (cubes of Strawberry and bananas) on top of the 5th leaf evenly. Place the 6th leaf on top and continue the same process above until you use all 10 leaves. Please, make sure all the Güllaç leaves are soaked with the milk mixture and that there are no dry spots. 
  5. Then, wait 30 or 45 minutes and use the remaining walnuts to decorate the top. You can also add Strawberry or cherries to decorate the top too. 
  6. After these processes, leave your Güllaç dessert the fridge until cold and serve it slices into service plate.

    1. We mostly buy Güllaç leaves from groceries (couple of brands are so good). Actually, Güllaç dough is prepared with corn starch and wheat flour, but i havent made its dough in my kitchen (it is really dufficult). When the Ramadan Month comes we all prepare it with store bought gullac dough in our kitchens.
