We love our country's nature in Autumn and Winter seasons. Especially, autumn is very colourful and beaituful and it is our favourite time of year. Also, our autumn and winter dishes are very delicious and special. Sometimes, we love them more than the summer dishes. When the autumn comes, pumpkins cover every corner of the country. You can see it in markets, groceries and bazaars very much. Because, in autumn and winter seasons, we love to cook and eat pumpkin dessert very often.  

We think that all foods are gift from God for all people around the world. But, Pumpkin is a really yummy and special gift from God for all dessert lovers. It is naturally sweet and creamy. We, as Turkish people love its naturally sweet and creamy taste very much. In autumn and winter times, you can find delicious pumpkin desserts in restaurants and patiserrie shops very easily.

We cooked our very commen "pumpkin dessert" and "pumpkin dessert with Tahini (Sesame Sauce)" last autumn and we shared their recipes in blogsite at the first posts. We call them in Turkish "Kabak talısı". There are many varieties of  pumpkin dessert recipes (Kabak Tatlısı) throughout the Turkey. Last week-end, we tried a new version of pumpkin dessert recipe and wanted to share it with you. Because, it is really amazing, different and fingerlickingly delicious. Its name is "Pumpkin Dessert with Pudding and Biscuit".

How to Make Pumpkin Dessert with Pudding and Biscuit?


It is very easy recipe and you should try this in your kitchen. We are sure that, when you try it one time, You make it many times during the autumn and winter times. It has several layers of goodness – bottom is a biscuit and butter combination layer, second layer is a pudding layer, then a creamy pumpkin layer, and an indulgent topping filled with ground walnuts, and a tahini sauce (Sesame Sauce) drizzle. 

It is really great for the holidays – During the fall months, winter months and holidays, it makes sense to make this dessert. It’s going to be one of your favorites. You are bound to be smacking your lips when you take that first bite of this dessert.

Recipe of Pumpkin Dessert with Pudding and Biscuit


Our unique dessert has four delicious layers. Bottom layer is a biscuit and butter combination layer, second layer is a pudding layer, third layer is made with pumpkin puree (pumpkin pudding), The top has ground walnuts, and a tahini sauce (Sesame Sauce) drizzle. Recipe is very easy and simple. 

Here it is Pumpkin Dessert with Pudding and Biscuit's recipe; 

Pumpkin dessert recipes
Ingredients: 750-1000 gr Peeled Pumpkin, and cut it 
into large cubes

Place them into sauce-pan and sprinkle the sugar
Let it sit over night

Very good family favourite;

Serving: 7-8 Servings, Preparation Time: 10-12 minutes, Cooking Time: 30-35 minutes, Cuisine: Mediterranean & Anatolian Cuisines,

Ingredients: 
  • 750 gr or 1 kg Peeled Pumpkin cut into large cubes, (cut into thick, chunk slices), 
  • 2 Cups granulated sugar, (Nearly 150-200 ml),
  • 2 Packages of oatmeal biscuit, (Nearly 25-30 pieces of biscuits, or if you want, you can use a package of ground biscuit), 
  • 2 or 3 Tablespoons butter,
For Pudding (Custard);
  • 1 Liter Milk,
  • 1 Tablespoon butter,
  • 7 Tablespoons Wheat starch, (or Corn starch),
  • 4 Teaspoons Vanilla, (nearly 10 gr; in this recipe, we used 2 Packages of vanilla. Each one is 5gr),
  • 7 Tablespoons Granulated sugar, 
For topping;
  • 1 Cup Ground walnuts,
  • 1/4 or 1/2 Cup of Tahini sauce (Sesame Sauce),
  • A pinch of Nutmeg powder for every serving plate, (it is optional),
Preparation:
  1. First of all take all ingredients on your work-table. Then, peel your pumpkin, cut it into large cubes (big chunks), and then place them in a wide saucepan and sprinkle the sugar (or layered with the sugar). Then, if you have time, let it sit over night, (but if you don't have time; don't worry! Put your pumpkin cubes the saucepan over low heat right away, because the heat helps your pumpkin release all of its juices). We need pumpkin's own juice because of we get a creamy and tasty dessert.
  2. Then, place your pumpkin cubes in to the pot and cook on medium heat until the  pumpkin absorbs its juice and is soft. This process takes approximately 30 minutes. Then, pour your softened pumpkin cubes into blender machine's pot and blend them until they turn to puree. Then remove pumpkin puree in another bowl and let it cool in room temperature for a couple of minutes. Then place your pumpkin puree in refrigerator for a while (15-20 minutes). Because, we use cold pumpkin puree as a layer of dessert.
  3. Then, clean your blender machine and place your oatmeal biscuits into blender machine's pot and blend them until you get ground biscuit and place it into a bowl. Then, put your butter into saucepan and melt it on the stove. Then pour it over the ground biscuit bowl and stir. Ground biscuit and melted butter should mix eachother very well. Then, put your cake mold on your work surface and place parchment paper into your cake mold and lock it. Then, place your  biscuits-butter mixture in it. By your hands, spread and smash it into cake mold. This biscuit mixture is being a your dessert's bottom layer. Bottom layer is to be tightened. Then, place your biscuit mixture in refrigerator for a while (15-20 minutes). 
  4. For the pudding (custard); Stir the milk, granulated sugar, starch and vanilla in a pot. Then, cook mixture until it thickens by stirring constantly. Then, remove the pot and let it get warm. 
  5. Then, remove your cooling pumpkins puree and biscuit mixture from the refrigerator. After these processes, pour the pudding (custard) on to the bottom layer. Spread it all over the biscuit layer. Then, by the help of your spoon, place your pumpkin puree on second layer and spread it all over the custard. 
  6. For topping (fourth layer): Lastly drizzle your tahini sauce (Sesame sauce) over the pumpkin puree (or it is up to you, if you want, you can cover pumpkin puree (third layer) with the tahini sauce). Then, place all ground walnuts on your dessert and spread it all over the dessert. Lastly, place your dessert into refrigerator for a while (1 or 2 hours). Then, remove your dessert from refrigerator and unlock the cake mold. Then, cut your dessert square or triangle shape for the serving plates. 
  7. Serve it in serving plate (if you want, you can sprinkle a pinch of Nutmeg powder over it).
