Turkish Semolina Hira Dessert - Soft Cookies in Syrup Recipe
In this post we are going to share "Semolina Hira Dessert Recipe". It comes from Tokat city but it is very popular throughout the country. Actually, every region of Anatolia (Turkey) has its own unique cuisine (kitchen) that has been enriched over time by past civilization and people from different ethnic back grounds. Tokat city is one of these regions of Anatolia. It is city of Turkey in the middle of Black-Sea region of Anatolia. According to the historians; many different civilizations and cultures (and culinary cultures) have efected on this region since BC 4000. Its cuisine is amazing and has many different meals, desserts and side dishes; such as "Tokat Kebab, Tokat trator (Tokat Çemeni), Tokat grape molasses (Tokat Pekmezi), Tokat Hira Dessert etc".
Nowadays, "Tokat Hira Dessert - Soft Cookies in Syrup" is very popular throughout the central Anatolia regions. Like many our relatives, neighbours and friends, we cooked this delicious dessert last weekend. It was amazing and its taste was different. And, we decided to share its recipe with you.

How to Make Semolina Hira Dessert - Soft Cookies in Syrup!
We loved hira dessert and our family holds loved this very unique dessert too. And we are sure that you and your family will love this dessert, when you try it. It is very chewy, soft and delicious dessert. This recipe is really super easy and ingredients are very simple.
Semolina Hira Dessert - Soft Cookies in Syrup is sweet, and soft and tender cookies are made from basickly; flour, semolina, egg and yogurt (if you want, you can add ground walnuts and orange zest) that are baked until golden brown and left to heavy and sticky sweet syrup (Sherbet). The more syrup your semolina cookies/hira dessert soak up, the better (it is up to you! If you want, you can less syrup it soak up). Also topped with almonds or pistachios or nutmeg powder.

Ingreduents: For Syrup; water and granulated sugar |
Ingredients: For topping; nutmeg powder (we only used nutmeg powder) |
For dough: Mix sunflower oil, egg, yogurt and semolina in a bowl |

For dough: Mix them well and add flour slowly while knead it |

For dough: then add orange zest (optional) |

For dough: knead mixture well. Your dough should be soft and can be abit sticky like cookie dough |
Then take a Walnut size dough and make a circle ball shape, then cover each hira dessert with semolina |
Then grase your oven tray with sunflower oil. |
Then place semolina hira balls into graced oven tray Then lightly press on their tops |
Bake at 180°C (350°F) preheat oven until they are golden brown - 25 / 30 minutes |

Then remove hira desserts from the oven and prepare its syrup |
For syrup: add granulated syrup and water into pot and boil them until mixture turns to thicken |
Then with a tablespoon pour warm syrup from the side of the hot cookies |
For topping : Lastly sprinkle the nutmeg powder on topping |
For topping: we used nutmeg powder. But If you want You can use groind pistachio, hazelnuts or ground almonds |
A cup of Homemade lemonade or Turkish hot tEA goes well with semolina hira dessert. |
Recipe for Semolina Hira Dessert - Soft Cookies in Syrup
Especially, this dessert is prefered for the special family dinners or tea parties and friend meetings in Turkey.
Here it is Semolina Hira Dessert - Soft Cookies in Syrup's recipe;
Very good family favourite;
Serve: 6-8 servings, Preparation Time: 20 minutes, Cooking Time: 30 minutes, Cuisine: Mediterranean & Anatolian Cuisines,
Ingredients:
For Dough of Dessert:
- 1 Egg,
- 1/2 Cup of Yogurt,
- 1/2 Cup of sunflower oil,
- 1 Cup of semolina,
- 1 Cup of all porpuse flour,
- 1,5 or 2 Teaspoons of baking powder,
- 1 Teaspoon of vanilla extract,
- 1 Tablespoon orange zest, (it is optional),
- 1/4 Cup of ground of walnuts, (it is optional),
For topping:
- 1/2 Cup of semolina,
- For Syrup (Sherbet):
- 2 Cup of Granulated sugar,
- 3 Cup of water,
For topping;
- Blanched Almond or Pistachios or Nutmeg powder (also you may use ground Pistachios or Ground almond), in this recipe, we used nutmeg powder.
Preparation:
- First of all, put your all ingredients on your work surface. Then, prepare the syrup (sherbet) of desert first; boil the 3 cups of sugar with 4 cups of water until mixture turns to thickens. It takes 3-5 minutes. Then, put aside and let it cool down.
- Then, mix sunflower oil, egg, yogurt and semolina in a bowl. Then, add flour slowly and knead at the same time. Then, add baking powder, vanilla, ground walnuts and orange zest. Knead your dough well. Your dough should be soft and it can be abit sticky like cookie dough.
- Then, grase your palms for getting a good shape of dough and then take walnut size pieces of dough and make circle ball shape using your palms. Then, in a bowl put semolina and cover each hira dessert with semolina and place on a grased oven tray. Then. Lightly press on their tops. ( if you want - put on almond or hazelnuts on the center of each of hira dessert - bye the way, we prefered to sprinkle just nutmeg powder when it is served).
- Then, bake at 180°C (350°F) preheat oven until they are golden brown, approximately 25-30 minutes. Then, with a table spoon, pour warm syrup (must not be warmer than the lukewarm) from the side of the hot (freshly) baked semolina cookies (hira dessert). Please do not pour it on top of the cookies; because, semolina cookies would get mushy. Repeat this process a few times and let them soak with the syrup for about 10 - 15 minutes.
- Then, with a spatula remove them from the syrup and place on a service plate.

DeleteReminds me a bit of Balkan sweets called tulumba. I do ever so love me syrupy cakes! I've recently seen banana, vanilla and chocolate flavoured semolina in one of our shops and I will have to try them out as we haven't had flavoured semolina before!
