This meal is very yummy and unique which is cooked always/only with olive oil and served cold. It is optional, but we generally, consume it with the squeeze of fresh lemon juice and the chopped parsley to garnish it.          Here it is our "Turkish barbunya pilaki - Borlotti Beans in Olive Oil Stew" recipe;

      Serve: 6 servings, Preparation Time: 20-25 minutes, Cooking Time: 40-45 minutes, Cuisine: Mediterranean/Anatolian Cuisine, Food Type: 100% Vegetarian,  

         Very good family favourite;

         Ingredients:

      - 2 Cups of dried Borlotti Beans/Cranberry Beans/Kidney Beans/Barbunya Beans, (700-800 gr),
      - 1 or 1,5 Tablespoons Pepper paste or tomato paste, (or both), 
      - 2 Normal size fresh tomatoes, diced, 
      - 2 Normal size onions, diced,  
      - 3 Cloves of garlic, sliced,  
      - 1 Normal size potatoes, peeked and cut into cube shapes, 
      - 2 Carrots, cut in half rounds or rounds, 
      - 1/2 Cup or 3 tablespoons olive oil, 
      - 1 Teaspoon sugar, 
      - 2 Cups hot water, 
      - 1/2 Bunch parsley leaves, coarsely chopped,
      - A pinch of sakt to taste, and a pinch of ground black pepper to taste,

Cranberry beans in olive oil stew 

      Preparation:

      First of all, put your all ingredients on your work surface (work table). Some of our friends asked that "do i need to soak Borlotti Beans?" Answer is Yes! You should, soak your dried Borlotti beans/Cranberry Beans/Kidney Beans/Barbunya beans in water over night and before cooking boil until soft, this process takes approximately for an hour. Bye the way, if you have a pressure cooker you don't need to soak them overnight; pressure-cook dried Barlotti beans/barbunya beans for 35 minutes. Drain and rinse. Then, heat the olive oil in a big pot. A few minutes later, add onions, garlic, and tomato paste or pepper paste. Stir for 4-5 minutes. Then, add the carrots and cubes of potatoes cook until carrots and potatoes get kind of soft. Then, add your diced tomatoes and cook until they turn to darker red (basiclly until all these ingredients are cooked). Now time is Barlotti beans/Barbunya beans time, add your Barlotti beans/Barbunya beans and stir for 5 minutes. Then, add salt, sugar, ground black pepper to taste and water. Turn down the heat. Cover and cook for 30-35 minutes on low heat until beans are cooked. Please, check now and then to make sure it doesn't run out of water. If it happens, boil some water before adding more. Once Turkish Barbunya Pilaki - Borlotti Beans in Olive Oil Stew is cooked, let it cool down to room temperature in its pot with the lid on. Then, garnish with Parsley and lemon slices (it is optional, for example: we squeeze lemon juice on Turkish Barbunya Pilaki - Borlotti Beans in Olive Oil Stew before we eat). You can try it warm, but Turkish Barbunya Pilaki like all Turkish olive oil dishes is served and best when it is cold. 

       Serve with grilled meat, with rice on the side or with crusty bread. It will keep in the fridge for a week.
