Turkish Lemon Cake (Limonlu Kek) Recipe!
Do you use lemon or lemon juice in desserts, dishes and salads?
We are very enthusiastic about using lemon in desserts. Also we love to use lemon in salads and in soups too. We always liked sour flavours. But we enjoy the combination of sour and sweet. That's why we add lemon to our desserts, especially in winter, when we can find the most delicious lemons. Actually we use lemon in everywhere. In this summer, we consumed the cold lemonade alot. Seafoods are always served with lemon or lemon juice in restaurants. Many of us favourite ice-cream is lemon icecream. Bye the way, lemon icecream is one of the best selling icecreams here.
Our very close friend Melahat brought a wonderful lemon cake the other day and we were very happy. We are huge fan of lemon, probably consume at least a lemon a day. Lemon cake is also one of the cakes we make most often in cold winter days, along with the chocolate chip pound cake. The tartness of the lemon juice and the wonderful smell of the lemon peel make the cake one step ahead of the standard cakes. Especially the smell that spreads to the house from kitchen while it is cooking is a separate source of happiness.

How to Make Turkish Lemon Cake (Limonlu Kek)!
In this post , we are going to share our very delicious lemon cake with you. We especially make this yummy lemon cake alot in winter days. We are sure that when you try this delicious recipe, you like it. Its preparation is really super easy and its recipe is not complicated.
For the lemon cake, we use the juice of one lemon and the grated yellow rind of two lemons. Since the size of the lemons will change, the amount of water that will come out of 1 lemon will naturally change. It doesn't matter, actually. It can only affect the intensity of the lemon flavour. If you don't want to risk it, you can measure and use lemon juice. Nearly 25 ml of lemon juice will be enough for one lemon.
Some of our friends use dried lemon peel instead of the fresh lemon and lemon juice but i havent tried their method yet. According to them; If you don't have a lemon on hand, but you still want to make a lemon cake, you can use the dried lemon peel that you prepared beforehand. Since there will be no lemon juice, it will not be sour, but the lemon peels will still give a very pleasant smell. If you want to make a slightly more fun lemon-scented cake instead of plain cake, keep it in mind.
Recipe for Turkish Lemon Cake (Limonlu Kek)!
Its ingredients are very simple; you just need the lemons, eggs, milk, a little yogurt, a little butter and sun flower oil, flour, sugar, baking powder and vanilla. That's it.
Here it is our delicious Turkish Lemon Cake (Limonlu Kek)'s recipe;
Serve: 8-10 servings, Preparation Time: 20 minutes, Cooking Time: 40 minutes, Cuisine: Mediterranean / Anatolian Cuisines,
Very good family favourite;
Ingredients: 3 lemons, one for the Juice, rest of them for the peels, |
Ingredients : 4 Normal size eggs, |
Ingredients : 1 cup of granulated sugar, |
Ingredients : 1 Cup of whole milk, |
Ingredients : 1 tablespoon of yogurt, |
Ingredients : 1/2 cup of sunflower oil, |
Ingredients : 1 tablespoon of butter, (for greasing the cake mold), |
Ingredients : 2 cups of all porpuse flour, ( nearly 400 gr), |
Ingredients : 1 teaspoon of vanilla and baking powder, (nearly 10 gr) |
Ingredients : 1 tablespoon of caster sugar for garnishing, |
Utensils: a cake mold or baking pan, |
During the mixture process, use your electric mixer on 0 level or low level, |
Firstly add granulated sugar into a bowl, |
Then add eggs, milk, yogurt and sunflower oil and mix all ingredients until white, frothy and creamy, |
You should mix the ingredients slowly. Sothat you get a perfect lemon cake, |
Mix all ingredients until frothy and creamy, |
Then add all porpuse flour slowly into the mixture, |
And then add baking powder and vanilla slowly while whisking until you get a smooth batter, |
Lastly grate your lemons' skin into the bowl, |
And get lemon juice from the one lemon, |
Then add lemon juice and grated lemon peels and keep whisking mixture as slowly too, |
Mix all ingredients slowly and well. And now your cake batter is ready, |
Meanwhile grease your cake mold / baking pan with a little butter. This step is really important for the cake to turn out looking pretty, |
Then pour your cake mixture into a greased cake mold / baking pan, |
Then bake your cake at 180°C until golden brown on top or until a skewer inserted into the centre comes out clean, |
Cooking process takes nearly 40 minutes, |
Then remove it from the oven and let it sit in the pan for 30 minutes too cool down. Then flip it over onto a cooling rack or serving plate, |
Then sprinkle a little caster sugar over the cake for garnish, |
Serve lemon cake with a cup of coffee or a cup of tea, |
- 3 Normal size fresh lemon, (one for the Juice, rest of them for the peels),
- 4 Normal size eggs,
- 1 Cup of granulated sugar, (nearly 200 gr),
- 1 Cup of whole milk,
- 1 Tablespoon of yogurt,
- 1/2 Cup of vegetable oil,
- 1 Tablespoon of butter, (for greasing the baking pan/cake mold),
- 2 Cups of all porpuse flour, (nearly 400 gr),
- 1 Teaspoon of baking powder, (nearly 10 gr),
- 1 Teaspoon of vanilla, (nearly 10 gr),
- For Garnishing:
- 1 Tablespoon of caster sugar,
Utensils;
- A baking pan or cake mold,
Preparation:
- First of all, put your all ingredients on the work table. Then, use an electric mixer to beat the eggs, sugar, milk, yogurt and sunflower oil until white, frothy and creamy.
- Then, add the flour, baking powder and vanilla slowly while whisking until you get a smooth batter. Mix all ingredients slowly ( mixer machine's indicator should be on 0 or low level) to get a smooth batter.
- Lastly, grate your 2 lemons' skin into a plastic bowl and use a lemon for lemon juice. Then add your lemon juice and grated lemon peels and keep whisking mixture as slowly too.
- Then, by the help of brush or with your hand to grease baking pan or cake mold with a little butter (or sunflower oil) and then pour your cake mixture into a greased cake mold. This step (greasing pan) is really important for the cake to turn out looking pretty, so grease your baking pan really well.
- Meanwhile preheat your oven to 180°C and bake your cake at 180°C until golden brown on top or until a skewer inserted into the centre comes out clean. This process takes nearly 40 minutes. Then remove it from the oven and let it sit in the pan for 30 minutes to cool down. Then flip it over onto a cooling rack or serving plate.
- Then sprinkle a little caster sugar over the cake for garnish. And serve it with a cup of coffee or a cup of tea.

DeleteI love lemons in desserts also, especially since lemons are my favorite fruit, the sour taste is a favorite taste for me. I think the only things I don't like is mixing sugar with lemons though tbh, it sounds werid but when I make lemonade I add salt. I will have to figure out if I can make this vegan, or how I can replace the eggs, and if I can not add the sugar. Thanks for sharing!
