Mediterranean and Anatolian (Turkish) Cuisines are well known for their olive oil dishes (in Turkish we call it: Zeytinyağlı Yemekler = dishes containing lots of olive oil). Also stuffed and wrapped vegetable in olive oil dishes called "Dolma" and "Sarma" are very famous throughout the Mediterranean region and the world. Green beans In olive oil dish, fava beans in olive oil dish, okra in olive oil dish, borlotti beans in olive oil dish (Barbunya pilaki), stuffed cabbage leaves rolls with rice filling dish, stuffed grape leaves dish are our very popular olive oil dishes and we mostly consume these dishes as side dishes with Turkish Kabaps/Grilled meats (Shish kabab, chicken kabab, Adana kabab etc).
In this post; we are going to share our favourite olive oil dish with you. It is "Turkish Style Green Beans In Olive Oil Dish". Actually, fresh green beans in olive oil (Zeytinyağlı taze fasulye) is one of the most famous Turkish olive oil dishes. Whenever we go to eat at a restaurant, we always order at least one olive oil dish (we generally prefer to green beans in olive oil dish) in our meze choices because they are so light and tasty.
We cook this delicious olive oil dish alot in summer times and autumn times. We are sure that when you try this unique olive oil dish in your kitchen, you like it and cook this dish alot during the summer or autumn.

How to Make Turkish Style Green Beans In Olive Oil Recipe – Zeytinyağlı Taze Fasulye
As we mentioned above of the post, olive oil dishes (dishes containing lots of olive oil) are very common in Anatolian (Turkish) cuisine where different, often seasonal, vegetables are cooked in olive oil and served at room temperature with freshly squeezed lemon.
Fresh green beans with tomatoes recipe is an easy one-pot dish that is an Aegean classic! Our favorite olive-oil dish. Takes less than 15-20 minutes to put together and will be ready within an 45 minutes or an hour. Accidentally vegan, gluten-free, and allergen-friendly.
Fresh green beans in olive oil dish is the epitome of the Mediterranean/Anatolia (Turkish) “olive-oil dishes”—so effortless and very quick to make, simple, oozing with flavor. Although it is most often made during the summer and autumn months, if frozen green beans and canned vine-ripened tomatoes are available where you live—do give it a try as soon as possible. Bye the way, we literally don’t know anyone who doesn’t enjoy this dish whether if it is their first time trying it or their family has been cooking green beans in olive oil dish forever.

When we make our own green beans in olive oil recipe, though, we tend not to use so much olive oil. Because this dish has chopped tomato and onions mixture in it, too, when we make it, we use a bit less oil and let the tomato and onions mixture add a bit more to the flavours.
This recipe is really very very easy and we are sure that you got perfect result, when you try it. But, if it all went horribly wrong, green beans are not the most expensive food in the world, so it didn’t matter too much. The recipe says to trim your green beans. If you are using frozen green beans, they will already be prepared.
Good Quality Fresh Green Beans are Important!
Good quality fresh green beans are very important for this dish. Turks are very picky about their green beans. In this recipe the beans should be picked very fresh from the plant about an hour before cooking. In Turkey, so many families have vegetable gardens that preparations such as this one are very popular. Also a local farmer's market will have the quality of bean necessary for a successful rendition of this recipe if you don't have your own garden.
For fresh green beans, most of the thinner ones don't have the tough fibrous "string" that runs down the sides. However, the more 'meaty' heirloom green beans will have this - many of the green beans on the local markets in Turkey are of this variety, for example: To prepare them, cut the ends off and simply pull the 'string' away from the seam and that is it.

Recipe for Turkish Style Green Beans In Olive Oil Recipe – Zeytinyağlı Taze Fasulye
Green beans in olive oil dish is a simple dish to make but the reward in the eating afterwards far outdoes your efforts. Yes its preparation and cooking processes take time but worth it! Because, this olive oil dish is so delicious. Especially, If your beans are old, you may have to cook them up to 1 1/2 hours, but try to avoid old beans.
We eat green beans in olive oil dish (zeytinyağlı taze fasulye) as a side dish (meze) – served alongside a selection of our other side dishes (meze) creations – or we use them as an accompaniment to grilled chicken, meat or fish. As you see, green beans in olive oil is not only tasty; it’s also versatile. This dish is generally served at room temperature and also if you want you can serve this dish with a zingy twist of fresh lemon.
Here it is our Turkish Style Green Beans In Olive Oil Recipe – Zeytinyağlı Taze Fasulye dish recipe;
Serve: 4 - 6 servings, Preparation Time: 20 minutes, Cooking Time: 45-50 minutes, Food Type: 100% Vegetarian, Calories: 30 Kcal, Cuisine: Mediterranean/Anatolian Cuisine,
Very good family favourite;
Ingredients: good quality green beans makes a perfect dish. |
Ingredients: Ripe and juicy tomatoes and onions, |
Ingredients: 2 or 3 Cloves Garlic |
Ingredients: extra virgin olive oil, |
Ingredients: 1 or 2 Cubes of sugar and a cup of water |
Ingredients: a pinch of salt, ground black pepper and Red pepper flakes, |
Wash your beans and then trimmed them and cut into 2 or 3 pieces, |
Then chop your onions finely, |
Then chop or grate your garlic, |
Then put chopped and garlic into plastic bowl, |
Then peel your tomaties's skin and chop them, One tomatoes will use as a whole (just cut it into two pieces) |
Then put chopped tomatoes into plastic bowl, |
Then add a cup of water, |
Then add extra virgin olive oil into mixture, |
Then add 1 or 2 Cubes sugar, |
Then add a pinch of salt, ground black pepper and Red pepper flakes to taste, |
Them mix all ingredients well and set aside, this will be Tomatoes sauce for the dish, |
Then take a large and deep pot. Put the 2 pieces of tomatoes In the middle of the pot and then place the green beans around of it, |
Then place your tomatoes, onions and olive oil mixture Over the green beans, |
Pour your all tomatoes, onions and olive oil mixture Over the green beans until it covers green beans, |
Then place your rest of the green beans over the tomatoes Mixture again, |
Now your dish is ready to cook. |
Then cover the pot and cook with low heat until All green beans are completely soft. |
Cooking process is nearly 45-50 minutes, |
Then turn the heat off and let rest for 10 minutes, Never transfer an olive oil dish from its pot until it gets cool |
Before serving drizzling the olive oil on top, |
- 1 kg Fresh green beans, washed, trimmed and cut into approximately 2 or 3 pieces, (cut the ends off and simply pull the 'string' away from the seam. If you use frozen green beans or canned green beans, you don't need to trimmed) (Turkish green beans are better for this dish, but Italian broad beans, or French beans are similar to those in Turkey),
- 1 Big onion, finely chopped,
- 2 or 3 Cloves of garlic, sliced or chopped or grated,
- 2 Big and large fresh tomatoes, one of them peeled and finely chopped or grated or blended, and cut the other one into halves, (if you want, you can use canned vine-ripened tomatoes),
- 1 or 2 Cubes of sugar,
- A pinch of salt, ground black pepper and red pepper flakes to taste,
- 1 Cup water,
- 3 Tablespoons extra virgin olive oil,
- 2 Tablespoons extra virgin olive oil, (For drizzling on top),
Preparation:
- First of all, put your all ingredients on your work surface. And, you should clean the all green beans. So, take your fresh green beans, wash and trim them (we mean that; trim the beans and snap the tails. Cut the beans into 2 or 3, depending on their length or cut into beans nearly 2,5-3 cm pieces / 1 to 1,5 inch pieces).
- Then put the chopped, tomatoes, onions, garlic, extra virgin olive oil, cubes of sugar, water, salt, ground black pepper and red pepper flakes into plastic bowl and mix all of them well. Now your tomato sauce is ready and put it aside.
- Then, take a deep and large pot and put the 2 pieces of your tomatoes in the middle of the pot. Then place your green beans around of the tomatoes into the pot. This will be the first level of the dish.
- Then, secondly pour your tomatoes, onions and olive oil mixture over the green beans. Tomatoes, onions and olive oil mixture should cover the green beans. This will be the second level of your dish.
- Lastly place your rest of the green beans around of the tomatoes (2 pieces of tomatoes that staying in the middle of the pot) into the pot. This will be the third level of your dish. Now your dish is ready to cook.
- Then cover the pot and cook with low heat until the beans are soft (beans are cooked for a long time, so that cook them until they are completely soft). This process approximately takes 45-50 minutes (If your beans are old, you may have to cook them up to 1 1/2 hours).
- Then turn the heat off and remove it from the heat and let rest for at least 10 minutes (Never transfer an olive oil dish from its pot until it gets to room temperature). This dish is often served cold in the summer, and warm in the winter months. Drizzle some olive oil over the beans before serving.
- This dish goes well with to grilled chicken, meat or fish. Also many vegetarian friends of us said that "this dish goes well with the plant-based yogurt and Turkish rice pilaf".

DeleteIt is currently the season of green beans so this is perfect timing for your recipe :) I love yellow string beans in soup or in salad with garlic. Sarma is our favourite dish here, the one with stuffed sauerkraut leaves, I usually make it with vegetarian filling.

Here we also usually eat green beans. It's common to prepare these boiled with potatoes and seasoned with raw virgin olive oil, although these are also garnished with fried garlic and its oil and a little paprika, sweet or spicy.
There's a white pod variety which in my home has always been prepared with fresh homemade fried tomato. I love it.
